Available in PDF, EPUB and Kindle. Book excerpt: When Lisa Fain, a seventh-generation Texan, moved to New York City, she missed the big sky, the bluebonnets in spring, Friday night football, and her family's farm. But most of all, she missed the foods she'd grown up with. After a fruitless search for tastes of Texas in New York City, Fain took matters into her own hands. She headed into the kitchen to cook for her friends the Tex-Mex, the chili, and the country comfort dishes that reminded her of home. From cheese enchiladas drowning in chili gravy to chicken-fried steak served with cream gravy on the side, from warm bowls of chile con queso to big pots of fiery chili made without beans, Fain re-created the wonderful tastes of Texas she'd always enjoyed at potlucks, church suppers, and backyard barbecues back home. In 2006, Fain started the blog Homesick Texan to share Texan food with fellow expatriates, and the site immediately connected with readers worldwide, Texan and non-Texan alike. Now, in her long-awaited first cookbook, Fain brings the comfort of Texan home cooking to you. Like Texas itself, the recipes in this book are varied and diverse, all filled with Fain's signature twists. There's Salpicón, a cool shredded beef salad found along the sunny border in El Paso; Soft Cheese Tacos, a creamy plate unique to Dallas; and Houston-Style Green Salsa, an avocado and tomatillo salsa that is smooth, refreshing, and bright. There are also nibbles, such as Chipotle Pimento Cheese and Tomatillo Jalapeno Jam; sweet endings, such as Coconut Tres Leches Cake and Mexican Chocolate Chewies; and fresh takes on Texan classics, such as Coffee-Chipotle Oven Brisket, Ancho Cream Corn, and Guajillo-Chile Fish Tacos. With more than 125 recipes, The Homesick Texan offers a true taste of the Lone Star State. So pull up a chair-everyone's welcome at the Texas table!

Available in PDF, EPUB and Kindle. Book excerpt: I have been making chili for over 45 years now with little or no measuring.I guess you could call it a dump Chili thus the name Chuck Wagon. In the 6 recipes here, I'll be using both leftover and fresh meat that I cut into large chunks. All of our recipes have step by step pictures to show you just how "Easy" they are to make these chilis on your grill. I was torn between doing original Chili which I will give you some history on or just a plain good Chili that is more common today. The first recorded recipes for chili date back to the 1800's with the Chili Queens of San Antonio. Chili con Carne translates into peppers and meat. Chili then was made by the poorest of the poor who had little or nothing in which to make their Chili. They used the toughest meats and whatever peppers and seasonings they could find. Chili in the 1800's contained no tomatoes for that time in history they were considered poisonous. My chili is close to that long-ago recipe. But not quite as I use a lot of peppers and I added little tomato and lots of garlic. Chili Con Carne is often known simply as chili. The name chili con carne is a slight corruption of the Spanish language chili con carne, which means chili (peppers) with meat. The essential ingredients are meat and chili pepper. That's it.... There is no right or wrong way to make chili. Keep in mind that it's history is that it was made by the poorest or the poor using what ever they had. You'll hear folks yelling about "You can't add beans to Real Chili" or "Real Chili has beans".There is "No Chili Police".The beauty of chili is that you can make it how ever you like it!Chili is like salsa, everybody's grandmother has her own recipe that they think is the best they've had...It's just chili, you can't hurt it....

Book excerpt: Who says cooking is for homebodies? Veteran Texas food writer Robb Walsh served as a judge at a chuck wagon cook-off, worked as a deckhand on a shrimp boat, and went mayhaw-picking in the Big Thicket. As he drove the length and breadth of the state, Walsh sought out the best in barbecue, burgers, kolaches, and tacos; scoured museums, libraries, and public archives; and unearthed vintage photos, culinary stories, and nearly-forgotten dishes. Then he headed home to Houston to test the recipes he’d collected back in his own kitchen. The result is Texas Eats: The New Lone Star Heritage Cookbook, a colorful and deeply personal blend of history, anecdotes, and recipes from all over the Lone Star State. In Texas Eats, Walsh covers the standards, from chicken-fried steak to cheese enchiladas to barbecued brisket. He also makes stops in East Texas, for some good old-fashioned soul food; the Hill Country, for German- and Czech-influenced favorites; the Panhandle, for traditional cowboy cooking; and the Gulf Coast, for timeless seafood dishes and lost classics like pickled shrimp. Texas Eats even covers recent trends, like Viet-Texan fusion and Pakistani fajitas. And yes, there are recipes for those beloved-but-obscure gems: King Ranch casserole, parisa, and barbecued crabs. With more than 200 recipes and stunning food photography, Texas Eats brings the richness of Texas food history vibrantly to life and serves up a hearty helping of real Texas flavor.

Book excerpt: Black & White Paperback Edition Series: Mexican Cookbooks Paperback: 62 pages Publisher: CreateSpace Chili is one of the most delightful and favorite recipes in the USA. It has not just savory taste but also the long history. A lot of states struggled to make the recipe of the chili as a national recipe. It is possible that the first chili was cooked by American Cowboys in 1850. The first chili was made from the dried meat, fat, salt, and pepper that were formed in the briquettes. After this, the prepared briquettes put in the boiling water. The cooking of this mass gives thick and aromatic chowder, that then was called "chili." The basic recipe of the chili consists of meat and hot pepper. All other ingredients depend on the country and region of cooking. Nevertheless, the beans became a traditional component for almost all recipe of chili. Traditional chili is cooked with the beef meat - ground or chopped; otherwise, nowadays there are a lot of classic recipes that consist of the pork, chicken, or turkey meat. Such ingredients as onion, garlic, sweet pepper, or tomatoes have an ability to enhance the taste of the final dish and make it more saturated. Every chef has its own secret how to make the dish not only tasty but also very fragrant. There are a lot of chili festivals all over the USA that can help to choose the best team for the "Final Festival" - the chili competition in Terlingua, Texas. Exactly this event helps to determinate the recipe of the most incredible and best dish for the year.
