Book excerpt: Food and biological systems are generally multicomponent mixtures (including water, organic solvents, dissolved solids, dissolved gases, ionic species, macromolecules). The prediction of the equilibrium properties of such environments requires the use of a fully predictive thermodynamic model. This model must be able to ensure the consistency between experimental data and to ensure the robustness of the simultaneous representation of physical equilibria (liquid-vapour, solubility, etc.) and chemical equilibria (dissociation, redox, complexation, etc.). The chemical potential is an essential property for modelling such equilibria. Its determination depends on two variables: the Gibbs free energy of formation in a chosen reference state, and the prediction of the activity coefficient which also depends on the chosen reference state. The COSMO-RS model is an excellent model for predicting activity coefficients that is widely used in chemical engineering where the studied molecules are generally neutral. This PhD study enabled to extend the performance of the COSMO-RS model toward the treatment of food and biological systems where there are systematically electrolytes in solution (in addition to neutral molecules). A new tool based on the recent advances of quantum mechanics has been developed in order to predict gas phase formation properties. By combining concepts of thermodynamics, quantum physics, electrostatics and statistical physics, it has been demonstrated that it is possible to use the COSMO-RS model to ensure the transition between the gas phase and the condensed phase. In this context, this work demonstrates that it is possible to treat simultaneously physical and chemical equilibria and thus to predict physico-chemical properties (aW, pH, Eh) in food and biological systems using the COSMO-RS model.

Ce modèle a été intégré dans un module de simulation de PROSIM. This book provides that understanding. It argues that remedies are judicial rulings, and that remedial law is the law governing their availability and content. Focusing on rulings that resolve private law disputes (for example, damages, injunctions, and restitutionary orders), this book explains why remedial law is distinctive, how it relates to substantive law, and what its foundational principles are. The book advances four main arguments. First, the question of what courts should do when individuals seek their assistance (the focus of remedial law) is different from the question of how individuals should treat one another in their day-to-day lives (the focus of substantive law). Second, remedies provide distinctive reasons to perform the actions they command; in particular, they provide reasons different from those provided by either rules or sanctions. Third, remedial law has a complex relationship to substantive law. Some remedies are responses to rights-threats, others to wrongs, and yet others to injustices. Further, remedies respond to these events in different ways: while many remedies (merely) replicate substantive duties, others modify substantive duties and some create entirely new duties. Finally, remedial law is underpinned by general principles-principles that cut across the traditional distinctions between so-called " and " remedies. One of the results of the theory is a real transcendental analogue of the Bezout theorem: for a large class of systems of *k transcendental equations in *k real variables, the number of roots is finite and can be explicitly estimated from above via the "complexity" of the system. A more general result is the construction of a category of real transcendental manifolds that resemble algebraic varieties in their properties. These results give new information on level sets of elementary functions and even on algebraic equations. The topology of geometric objects given via algebraic equations (real-algebraic curves, surfaces, singularities, etc.) quickly becomes more complicated as the degree of the equations increases. It turns out that the complexity of the topology depends not on the degree of the equations but only on the number of monomials appearing in them. This book provides a number of theorems estimating the complexity of the topology of geometric objects via the cumbersomeness of the defining equations. In addition, the author presents a version of the theory of fewnomials based on the model of a dynamical system in the plane. Pfaff equations and Pfaff manifolds are also studied.
