The quality of feed is in turn important for animal health, the environment and for the safety of food from animal origin. Fungi belonging to the Fusarium genus are widespread in crops causing plant diseases and producing toxic metabolites. Fusarium species can colonize plants during their growth on the field and cause serious damage in terms of yield and quality of harvested grains. One of the most important fungal diseases of wheat and other cereals in the world is Fusariumhead blight caused by the fungal pathogens Fusarium graminearum and Fusarium culmorumand others. In addition, these fungi produce mycotoxins, contaminating food and feed. The most important Fusarium mycotoxins include trichothecenes, zearalenone and fumonisins, primarily because of their prevalence, but also because of the toxic effect to humans and animals. However, these fungi produce also other mycotoxins such as moniliformin, beauvericin, enniantin or fusarins. Food and feed can be contaminated with mycotoxins at various stages in the production chain resulting in serious problems with health, safety and economic losses. It is estimated that 25% of the crop in the world each year are contaminated with these metabolites, the problem affects both industrialized countries and developing countries. The aim of this Research Topic of Frontiers in Microbiology is to publish state of the art research about occurrence and genomics of Fusarium species and their mycotoxins in the whole food and feed chain starting from the crops as well as implications for health and economic aspects. This research topic highlights the current knowledge on the plant diseases caused by Fusarium fungi as well as all aspects of Fusarium mycotoxin contamination of crops, food and feed, taking into account decontamination methods.

Successful evasion of host’s surveillance system and subsequent activities of metabolites of the pathogen (enzymes and toxins) encoded by pathogen genes counteracting the effects of various defense-related antimicrobial compounds present already or produced by the host plants, after initiation of infection have been critically studied by applying various molecular techniques. In addition to studying various phases of disease development in individual plants, molecular methods have been demonstrated to be effective, in gathering data on various aspects of epidemiology under natural conditions where the interaction of pathogen with populations of plants is influenced significantly by the environmental conditions existing in different ecosystems. This volume focuses on the possibility of applying the knowledge on pathogenesis and molecular epidemiology to determine the vulnerable stages in the life cycles of the pathogens that can be disrupted to achieve more effective disease control.

This is well illustrated by the fact that projects aiming at sequencing the genomes of nine species are in progress. In this book, some aspects of the biology of this genus are covered, including the biotechnological importance of Aspergilli, their role in mycotoxin contamination of food products including grapes and coffee products, and implications of biodiversity of Aspergillus populations for agriculture. Among the clinical aspects, the role of Aspergilli in eye infections, the mechanisms of antifungal drug resistance and their molecular identification in the clinical setting are covered. DON is part of a family of mycotoxins called trichothecenes that are small sesquiterpenoids with an epoxide group at positions 12-13 allowing their binding to ribosomes causing the so-called ribosome stress response, characterized by the activation of various protein kinases that lead to alterations in gene expression and cellular toxicity in animals, humans and plants. Here, we compiled very recent findings regarding DON and its derivatives: i) their prevalence in human food; ii) the estimation of the exposure of humans to them using biological markers; iii) their roles during plant-fungi interaction; iv) the alteration caused by them in animals and humans, particularly at low doses that are close to those observed in farm animals and human consumers; v) possible strategies to decrease their presence in food and feeds. Overall, this book will give the reader a clear and global view on this important mycotoxin produced by Fusarium species which is responsible for huge economic loss and health issues.
