The quality of feed is in turn important for animal health, the environment and for the safety of food from animal origin. Fungi belonging to the Fusarium genus are widespread in crops causing plant diseases and producing toxic metabolites. Fusarium species can colonize plants during their growth on the field and cause serious damage in terms of yield and quality of harvested grains. One of the most important fungal diseases of wheat and other cereals in the world is Fusariumhead blight caused by the fungal pathogens Fusarium graminearum and Fusarium culmorumand others. In addition, these fungi produce mycotoxins, contaminating food and feed. The most important Fusarium mycotoxins include trichothecenes, zearalenone and fumonisins, primarily because of their prevalence, but also because of the toxic effect to humans and animals. However, these fungi produce also other mycotoxins such as moniliformin, beauvericin, enniantin or fusarins. Food and feed can be contaminated with mycotoxins at various stages in the production chain resulting in serious problems with health, safety and economic losses. It is estimated that 25% of the crop in the world each year are contaminated with these metabolites, the problem affects both industrialized countries and developing countries. The aim of this Research Topic of Frontiers in Microbiology is to publish state of the art research about occurrence and genomics of Fusarium species and their mycotoxins in the whole food and feed chain starting from the crops as well as implications for health and economic aspects. This research topic highlights the current knowledge on the plant diseases caused by Fusarium fungi as well as all aspects of Fusarium mycotoxin contamination of crops, food and feed, taking into account decontamination methods.

Therefore, their eradication and management have economic importance as they can cause enormous economic and agricultural production losses. Despite the fact that the genus Fusarium Link (1809) has been known for over 200 years, new scientific information is being revealed by rapid advancements and breakthrough findings of interdisciplinary studies. This book presents an introductory overview of an update to the scientific knowledge about Fusarium. It discusses various aspects of Fusarium, such as its genetic diversity, root rot incidence and severity, genetic resistance, molecular markers, mycotoxins, diseases caused by Fusarium, and their management and the biological control of these phytopathogens. Book excerpt: Studies on the phenomenon of plant pathogenesis (disease development) have been useful to have a deep insight into the interactions between host plant and the pathogen. Depending on the levels of susceptibility (compatibility) or resistance (incompatibility) of the host plant and virulence of the pathogen, disease development may progress, either leading to symptom expression or result in the suppression of pathogen proliferation. Molecular techniques have been applied to elucidate the nature of interactions between the gene products of the plant and pathogen at cellular and molecular levels. Successful evasion of host’s surveillance system and subsequent activities of metabolites of the pathogen (enzymes and toxins) encoded by pathogen genes counteracting the effects of various defense-related antimicrobial compounds present already or produced by the host plants, after initiation of infection have been critically studied by applying various molecular techniques. In addition to studying various phases of disease development in individual plants, molecular methods have been demonstrated to be effective, in gathering data on various aspects of epidemiology under natural conditions where the interaction of pathogen with populations of plants is influenced significantly by the environmental conditions existing in different ecosystems. This volume focuses on the possibility of applying the knowledge on pathogenesis and molecular epidemiology to determine the vulnerable stages in the life cycles of the pathogens that can be disrupted to achieve more effective disease control.

Aspergillus species are used in the fermentation industry for the production of various enzymes, organic acids and pharmaceutically important compounds, and in Oriental food fermentations. At the same time, Aspergilli can cause opportunistic infections, and produce a range of secondary metabolites also known as mycotoxins which are harmful to humans and animals. Due to its importance in biotechnology, medicine and foods, Aspergilli are in the forefront of studies dealing with various aspects of fungi. This is well illustrated by the fact that projects aiming at sequencing the genomes of nine species are in progress. In this book, some aspects of the biology of this genus are covered, including the biotechnological importance of Aspergilli, their role in mycotoxin contamination of food products including grapes and coffee products, and implications of biodiversity of Aspergillus populations for agriculture. Among the clinical aspects, the role of Aspergilli in eye infections, the mechanisms of antifungal drug resistance and their molecular identification in the clinical setting are covered. Several chapters deal with the genomic aspects of Aspergilli, including the genomics of pigment biosynthesis, extracellular enzyme production, aflatoxin biosynthesis and the identification of genes taking part in sexual processes. Additional chapters cover the variability and inheritance of mycoviruses in Aspergilli and multilocus approaches are given to clarify the evolutionary history of the genus. The aim of this publication is to gather together specialist updated reviews based on papers originally presented during a Workshop of EU Cost Action 835 entitled 'Agriculturally Important Taxigenie Fungi', held in Rome, 7-8 October 1999 at the Plant Pathology Research Institute. We hope the diversity of the contents will stimulate discussion, encourage the sharing of information and result in cross-fertilization of ideas needed for the solution of the present problems. Although the primary role of these toxins is thought to be related to the colonisation of the environment by the fungi--mycotoxins are able to kill other micro-organisms (antimicrobial effect) and/or plant cells (mycotoxin-producing fungi being necrophagic)--the exposure of animals and humans to mycotoxins through the consumption of mycotoxin-contaminated food and feeds leads to diseases and death. Among the different mycotoxins described (more than 350 mycotoxins have been identified), deoxynivalenol (DON or vomitoxin) produced by Fusarium species has attracted the most attention due to its prevalence and toxicity. DON is part of a family of mycotoxins called trichothecenes that are small sesquiterpenoids with an epoxide group at positions 12-13 allowing their binding to ribosomes causing the so-called ribosome stress response, characterized by the activation of various protein kinases that lead to alterations in gene expression and cellular toxicity in animals, humans and plants. Here, we compiled very recent findings regarding DON and its derivatives: i) their prevalence in human food; ii) the estimation of the exposure of humans to them using biological markers; iii) their roles during plant-fungi interaction; iv) the alteration caused by them in animals and humans, particularly at low doses that are close to those observed in farm animals and human consumers; v) possible strategies to decrease their presence in food and feeds. Overall, this book will give the reader a clear and global view on this important mycotoxin produced by Fusarium species which is responsible for huge economic loss and health issues.
