Cette thèse vise à la compréhension des phénomènes d'instabilité dans des écoulements à bulles. La configuration choisie consiste en l'injection localisée de bulles de gaz dans un fluide initialement au repos. L'approche présentée regroupe une étude numérique et une démarche expérimentale.L'utilisation d'un code de simulation basé sur une approche Euléro-Lagrangienne à couplage inverse permet de respecter le caractère dispersé de l'écoulement et prendre en compte les effets collectifs induits dans le fluide porteur par la présence d'inclusions. Le mouvement de la phase continue est donné par la simulation des équations de Navier-Stokes forcées par un terme-source modélisant l'échange de quantité de mouvement entre les deux phases . Parallèlement, l'application du principe fondamental de la dynamique à chaque bulle permet le suivi individuel de leur trajectoire. L'étude numérique du panache à bulles a permis de caractériser les différents régimes de son développement (phase démarrage, écoulement laminaire) et a mis en évidence le processus de transition progressive à la turbulence suivant un mode sinueux. Les résultats montrent que le paramètre contrôlant cette instabilité est le nombre de Grashof.
