Book excerpt: Love under trying circumstances One night out of the blue, Ratchet Clark's ill-natured mother tells her that Ratchet will be leaving their Pensacola apartment momentarily to take the train up north. There she will spend the summer with her aged relatives Penpen and Tilly, inseparable twins who couldn't look more different from each other. Staying at their secluded house, Ratchet is treated to a passel of strange family history and local lore, along with heaps of generosity and care that she has never experienced before. Also, Penpen has recently espoused a new philosophy – whatever shows up on your doorstep you have to let in. Through thick wilderness, down forgotten, bear-ridden roads, come a variety of characters, drawn to Penpen and Tilly's open door. It is with vast reservations that the cautious Tilly allows these unwelcome guests in. But it turns out that unwelcome guests may bring the greatest gifts. By turns dark and humorous, Polly Horvath offers adolescent readers enough quirky characters and outrageous situations to leave them reeling! The Canning Season is the winner of the 2003 National Book Award for Young People's Literature.

Available in PDF, EPUB and Kindle. Book excerpt: Canning Gold is a meticulously researched examination of how sweet corn canning helped shape the economy, landscape and people of rural Maine, New Hampshire and Vermont during the "corn shop century," 1860-1960's. Paul Frederic powerfully demonstrates the strong community bond essential for the industry's initial success. Interviews with farmers, factory owners and cannery workers who raised and packed the corn, combined with the written record, and Frederic's insight derived from growing up in the shadow of a corn shop, enrich the work and trace various threads linking local patterns to regional, national and global forces.

Book excerpt: Canning is the most important factor in the fishery industry today, but information concerning the principles of canning fishery products has not been assembled, nor has a description of modern canning methods been previously available. This report is a reference handbook on problems in the commercial canning of fishery products. In addition to discussing the scientific principles on which canning is based, it outlines the various engineering problems faced by the canner, and gives a detailed description of the methods used today in the commercial canning of 48 varieties of fish and shellfish packed commercially in hermetically sealed containers. Information on spoilage and methods used in the examination of fishery products is of use to the laboratory worker. The discussion on fishery products as food is of benefit to producers, brokers, dealers, food technologists, home economists, consumers, and all others interested in foods and their use.

Balancing the demands of modern motherhood is a tough job. Between kids, work obligations, social commitments, and household duties, trying to fit in a little me time (let alone a date night) can seem practically impossible. For many moms, doing well at work makes them feel like they’re failing at home, and when they focus on their family, they feel like they’re falling behind at work. It’s a vicious cycle that all too often lead to burnout—but there really is another way. The Possibility Mom provides practical solutions for keeping the balance of a modern mother’s life with less stress, less guilt, and more satisfaction. Here, you’ll learn smart ways to trim your to-do list, clarify your priorities, get more done in less time, and live the life you love―one that you design.

Available in PDF, EPUB and Kindle. Book excerpt: Extract: Because many people had questions and problems about canning fruits and vegetables, a nationwide survey was conducted to obtain a clear picture of the home canning situation. Data were collected on fruit and vegetable canning procedures and equipment used by households, their sources of instruction, and food spoilage observed. This information was based on practices followed in 1975, when one out of three households canned fruits, vegetables, or both. These products were canned in only 20 percent of the households in large metropolitan areas compared with 50 percent in rural areas. Tomatoes were the most popular item and were canned by three out of four households. Approximately one-fourth of the households reported some spoilage in their home-canned fruits and vegetables. Three out of four canners believed that it was due to lids that failed to seal properly. Although the survey did not determine the actual cause, information given by home canners indicated that some spoilage undoubtedly resulted from improper procedures. (author/wbf).
