Book excerpt: A study of the employment of women in the hotel and catering industry indicated that the industry employs nearly 17 percent of the entire paid female work force in the United Kingdom. Women constitute 75 percent of the industry's work force, and 47 percent of its managers are women. Women's position in the industry is characterized by their disproportionate concentration in part-time and operative level jobs. Even though many of the women studied have had experience at higher levels in other industries, they have not always been able to transfer their skills successfully. College-trained women and men also exhibit different progress in their first years of employment in the industry. The reason for this appears to be a complex blend of traditional sex stereotyping, beliefs about customers' preferences, job seekers' ideas, and managers' beliefs about women's motivations and which sex is appropriate for which job. In the subsidiary sectors of the industry (where the main business is not providing accommodation or food but where these activities take place on the premises--e.g., school meals), women appear relatively more successful. This may reflect their predominance, but it may also reflect the higher incidence of employment policies actively seeking equal opportunities for women. The final chapter describes the Manpower Services Commission's (MSC) Graduate Development Scheme, which was designed to encourage the training and development of women managers in the commercial sectors of the hotel and catering industry. Appendixes include a bibliography of sources, statistical tables, information on women in the United Kingdom's work force, descriptions of the methodologies of the studies reviewed for this report, and brief descriptions of projects being carried out as part of the MSC/Training Board Graduate Development Scheme. Book excerpt: A study examined the employment patterns of women working in the United Kingdom's hotel and catering industry and the opportunities for vocational education that would lead to careers in management. Sixty-four women from different sectors of the industry were interviewed (including women in senior and middle management and some still looking to be promoted into management positions). A smaller but comparable sample of 13 men were also interviewed to examine their attitudes as selectors, colleagues, and competitors of the women interviewed. The women turned out to be less likely than men to plan their career. Unlike the men, the women were content to allow the steps in their career progression to unfold, taking advantage of opportunities as they materialized rather than actively seeking to create the opportunities they needed. The traditions of the hotel and catering industry were also against them, especially the tradition of working up to management from a craft position. Current trends toward replacing these traditional routes to management by allowing people with higher diplomas and degrees in catering to enter the management sector still leave women to contend with the obstacles of an industry that has a legacy of male domination. Differences in the types of training typically received by women also tended to direct them toward senior staff rather than management positions. It was more typical, for example, to see women promoted to senior personnel positions rather than to positions as food or beverage managers. (The 10-page survey instrument is included.) Book excerpt: Back when SOS or Adam and Eve on a raft were things to order if you were hungry but a little short on time and money, nearly one-fourth of all waitresses belonged to unions. By the time their movement peaked in the 1940s and 1950s, the women had developed a distinctive form of working-class feminism, simultaneously pushing for equal rights and pay and affirming their need for special protections. Dorothy Sue Cobble shows how sexual and racial segregation persisted in wait work, but she rejects the idea that this was caused by employers' actions or the exclusionary policies of male trade unionists. Dishing It Out contends that the success of waitress unionism was due to several factors: waitresses, for the most part, had nontraditional family backgrounds, and most were primary wage-earners. Their close-knit occupational community and sex-separate union encouraged female assertiveness and a decidedly unromantic view of men and marriage. Cobble skillfully combines oral interviews and extensive archival records to show how waitresses adopted the basic tenets of male-dominated craft unions but rejected other aspects of male union culture. The result is a book that will expand our understanding of feminism and unionism by including the gender conscious perspectives of working women.
