Book excerpt: Excerpt from The Sugars and Their Simple Derivatives The following pages are based on a course of lectures first given at Birkbeck College, London, in 1903, and subsequently at the University of Edinburgh. In addition to students of pure ch'emistry, others interested in medicine, brewing and distilling, sugar manufacture, etc., attended these lectures. On this account more attention has been devoted to such subjects as metabolism, fermentation and the manufacture of sugars than would have been the case otherwise. It is hoped that the book may serve as a companion to works on physiological chemistry and to technological works on brewing, distilling, sugar manufacture and sugar analysis. Book excerpt: Handbook of Nutrition, Diet, and the Eye, Second Edition, thoroughly addresses common features and etiological factors on how dietary and nutritional factors affect the eye. The ocular system is perhaps one of the least studied organs in diet and nutrition, yet the consequences of vision loss are devastating. There are a range of ocular defects that have either their origin in nutritional deficiencies/excess or have been shown to respond favorably to nutritional components. Featuring a new section on animal model studies where both the ocular problem and dietary remedies can be varied, there are also new chapters on dietary supplements. Serves as a foundational collection for neuroscience, neurology and nutrition researchers, illustrating the importance of nutrition and diet in eye health and function Provides a common language for readers to discuss how nutritional factors and related diseases and syndromes affect the eye Features new chapters on infectious diseases of the eye where nutrition is a factor Discusses animal model studies, dietary supplements, natural dietary extracts from around the world, and age-related changes in ocular health

Book excerpt: Sugarcane enjoys a prominent position among agro-industrial crops and is commercially grown in 115 tropical and subtropical countries around the world. However, fluctuations in sugar prices have forced the sugarcane industry worldwide to broaden its revenue base by moving from single-commodity manufacturing to a range of value-added products. Utilizing the by-products in an innovative manner to create value-added products is the new course of action for sugar-producing countries. For many years sugarcane was regarded as a single-product crop, i.e., only useful for producing sugar. Its actual potential is now increasingly being recognised by the industry and there is a growing trend toward the manufacturing of allied products from sugarcane. Therefore, the focus is now on the establishment of sugar-agro-industry complexes, processing not just sugar but a range of other products. This book provides a comprehensive overview of sugarcane not only as a source of sweetening agents but also for many other uses, including as a source of bio-energy. It also explores the trend of sugar consumption and suggests practices to curb the consumption of sugar products in order to tackle obesity and reduce public health costs. The book underscores the need to diversify sugarcane and highlights means of doing so, while also addressing various innovations and technologies being developed in connection with sugar, sugar derivatives, and sugar industry by-products for sustainable utilization in the sugar-agro industry. Accordingly, it offers a valuable resource for professionals and R&D units in the sugar industry, and for students of agronomy and related fields.

Book excerpt: As a reflection of the quantum leap that has been made in the study of glycostructures, the first edition of this book has been completely revised and updated. The editors give up-to-date information on glycostructures, their chemistry and chemical biology in the form of a completely comprehensive survey. Glycostructures play highly diverse and crucial roles in a myriad of organisms and important systems in biology, physiology, medicine, bioengineering and technology. Only in recent years have the tools been developed to partly understand the highly complex functions and the chemistry behind them. While many facts remain undiscovered, this MRW has been contributed to by a large number of the world’s leading researchers in the field.

Book excerpt: Carbon analogs of carbohydrates, dubbed C-glycosides, have remained an important and interesting class of mimetics, be it in natural product synthesis, for pharmacological applications, as conformational probes, or for biological studies. C-Furanosides: Synthesis and Stereochemistry provides a much-needed overview of synthetic and stereochemical principles for C-furanosides: analogs of a 5-membered ring carbohydrate glycoside (furanoside), in which the anomeric oxygen has been replaced with a carbon. While our understanding of conformational behavior and of stereoselective synthesis in 6-membered ring compounds is quite good, our ability to predict the conformation of 5-membered ring compounds, or to predict the stereochemical outcome of a given reaction, remains anecdotal. Through a comprehensive review of literature approaches to the different C-furanoside stereoisomers, as well as an interpretation of the outcome in terms of a reasonable number of stereochemical models, C-Furanosides: Synthesis and Stereochemistry enables the reader to determine the best approach to a particular C-glycoside compound, and also hopes to provide a certain level of rationalization and predictability for the synthesis of new systems. Provides a comprehensive review of the growing literature in C-furanosides Enables readers to choose the most convenient approach to access a defined target in natural products synthesis or pharmacology and make reasonable predictions for the stereochemical outcome in unpublished cases Explores the various rational models for stereochemical analysis of furanoside reactivity, with a clear distinction made between physical chemical mechanisms and stereochemical models
