This volume 1 is part of a two-volume set devoted to the species, the second of which focuses on farming. The present volume is divided into three parts: Biology and ecology, Biology and physiology of reproduction, and Ecophysiology, i.e. adaptation to the environment. The first part addresses a broad range of topics, such as: the ecology, including a new approach to species-specificity, a new insight on the mineralization of vertebral elements, two approaches to sex determination, transposable elements in the gonads, early ontogeny, olfaction and gustation, nutrition and swimming. The second part includes neurochemical and anatomical descriptions of the central nervous system and an updated version of the oogenesis, the characteristics of both sperm and spermatozoa, and a synthesis on gonadal steroids (synthesis, plasmatic levels and biological activities). In turn, the third part reveals how the physiology of the species changes depending on environmental factors such as oxygen, ammonia, and nitrite. Some fundamental consequences of ammonia are developed (sublethal and lethal levels, effects on gill epithelium and haematology, acid-base balance, on AA and adenyl nucleotides levels in plasma, brain and muscle tissue). In addition, the book includes two methodological chapters dealing with fish dorsal aortic cannulation and respiration physiology.

Production-related data are the focus of the third part and include: characteristics (countries, structures of production, evolution in production, economic features) of the gross production of the species (meat and caviar) worldwide, a method for assessing the quality of caviars, off-flavors management, and an example of production of fingerlings for restocking. Part four addresses selected long-term management issues: genetic variability of brood stocks, genome manipulation and sex control, and the advantages of hybrids. The next three chapters constitute the fifth part, which is devoted to health status (immunology and welfare). Captive environments can impact farmed animals at different levels, especially fishes, considering their highly complex sensory world. Understanding the ethology of a species is therefore essential to address fish welfare, and the interpretation of behavioral responses in specific rearing contexts (aquaculture or experimental contexts) demands knowledge of their underlying physiological, developmental, functional, and evolutionary mechanisms. In natural environments, the stress response has evolved to help animals survive challenging conditions. However, animals are adapted to deal with natural stressors, while anthropogenic stimuli may represent stressors that fishes are unable to cope with. Under such circumstances, stress responses may be maladaptive and cause severe damage to the animal. As welfare in captivity is affected in multiple dimensions, multiple possible indicators can be used to assess the welfare state of individuals. In the past, research on welfare has been largely focusing on health indicators and predominantly based on physiological stress. Ethological indicators, however, also integrate the mental perspective of the individual and have been gradually assuming an important role in welfare research: behavioral responses to stressors are an early response to adverse conditions, easily observable, and demonstrative of emotional states. Many behavioral indicators can be used as non-invasive measurements of welfare in practical contexts such as aquaculture and experimentation. Presently, research in fish welfare is growing in importance and interest because of the growing economic importance of fish farming, the comparative biology opportunities that experimental fishes provide, and the increasing public sensitivity to welfare issues.

This species, one of the most widespread sturgeon species all over Western Europe ranging from the Black Sea to the Baltic, is now on the verge of extinction. Similarly, the changes in the restoration programs (in situ and ex situ) initiated in France and Germany are presented. As the species occurred in sympatry with Acipenser oxyrinchus in Germany and Poland and very recently in France as well, a brief outlook on restoration-management programs of A. oxyrinchus are also provided for both North America and Northern European countries, namely Germany and Poland. As conservation-restoration actions go beyond scientific issues, non-governmental stakeholders and marine professional fishermen’s organizations have also been asked to contribute, and the key role of a French-German cooperation plan is underlined.
