Available in PDF, EPUB and Kindle. Book excerpt: The finite - infinite interplay is central in human thinking, from ancient philosophers and mathematicians (Zeno, Pythagoras), to modern mathe matics (Cantor, Hilbert) and computer science (Turing, Godel). Recent developments in mathematics and computer science suggest a) radically new answers to classical questions (e. g. , does infinity exist?, where does infinity come from?, how to reconcile the finiteness of the human brain with the infinity of ideas it produces?), b) new questions of debate (e. g. , what is the role played by randomness?, are computers capable of handling the infinity through unconventional media of computation?, how can one approximate efficiently the finite by the infinite and, conversely, the infinite by finite?). Distinguished authors from around the world, many of them architects of the mathematics and computer science for the new century, contribute to the volume. Papers are as varied as Professor Marcus' activity, to whom this volume is dedicated. They range from real analysis to DNA com puting, from linguistics to logic, from combinatorics on words to symbolic dynamics, from automata theory to geography, and so on, plus an incursion into the old history of conceptions about infinity and a list of philosophical "open problems". They are mainly mathematical and theoretical computer science texts, but not all of them are purely mathematical.

Book excerpt: This “extraordinary” novel of one man’s border crossing reveals “a human history of sorrow and suffering, all of it beginning with the thirst to be free” (NPR). Héctor is trapped. The water truck, sealed to hide its human cargo, has broken down. The coyotes have taken all the passengers’ money for a mechanic and have not returned. Héctor finds a name in his friend César’s phone: AnniMac. A name with an American number. He must reach her, both for rescue and to pass along the message César has come so far to deliver. But are his messages going through? Over four days, as water and food run low, Héctor tells how he came to this desperate place. His story takes us from Oaxaca—its rich culture, its rapid change—to the dangers of the border, exposing the tangled ties between Mexico and El Norte. And it reminds us of the power of storytelling and the power of hope, as Héctor fights to ensure his message makes it out of the truck and into the world. Both an outstanding suspense novel and an arresting window into the relationship between two great cultures, The Jaguar’s Children shows how deeply interconnected all of us are. “This is what novels can do—illuminate shadowed lives, enable us to contemplate our own depths of kindness, challenge our beliefs about fate. Vaillant’s use of fact to inspire fiction brings to mind a long list of powerful novels from the past decade or so: What is the What by Dave Eggers; The Map of Love by Ahdaf Soueif; The Storyteller by Jodi Picoult.” —Amanda Eyre Ward, The New York Times Book Review “[A] heartbreaker . . . Wrenching . . . with a voice fresh and plangent enough to disarm resistance.” —The Boston Globe “Fearless.” —The Globe and Mail

Available in PDF, EPUB and Kindle. Book excerpt: This book provides a comprehensive and accessible source of information on all types of sweeteners and functional ingredients, enabling manufacturers to produce low sugar versions of all types of foods that not only taste and perform as well as sugar-based products, but also offer consumer benefits such as calorie reduction, dental health benefits, digestive health benefits and improvements in long term disease risk through strategies such as dietary glycaemic control. Now in a revised and updated new edition which contains seven new chapters, part I of this volume addresses relevant digestive and dental health issues as well as nutritional considerations. Part II covers non-nutritive, high-potency sweeteners and, in addition to established sweeteners, includes information to meet the growing interest in naturally occurring sweeteners. Part III deals with the bulk sweeteners which have now been used in foods for over 20 years and are well established both in food products and in the minds of consumers. In addition to the "traditional" polyol bulk sweeteners, newer products such as isomaltulose are discussed. These are seen to offer many of the advantages of polyols (for example regarding dental heath and low glycaemic response) without the laxative side effects if consumed in large quantity. Part IV provides information on the sweeteners which do not fit into the above groups but which nevertheless may offer interesting sweetening opportunities to the product developer. Finally, Part V examines bulking agents and multifunctional ingredients which can be beneficially used in combination with all types of sweeteners and sugars.

Available in PDF, EPUB and Kindle. Book excerpt: This study comprises a critical edition, using all the five extant MSS, of the most popular of the Middle English gynaecological texts deriving from the Latin Trotula-text. The Knowing of Women's Kind in Childing is a short fifteenth-century prose treatise which claims to be translated from Latin texts (or Latin and French, according to some manuscripts) that derive ultimately from the Greek. It has a unique importance as it was written by a woman, for a female audience, and on the subject of women. The text considers women's physical constitution, what makes them different from men (primarily the possession of a womb) and, in particular, the three types of problem that the womb causes. That it was written for a female audience is made explicit in the Prologue where the writer explains that he has translated this text out of French and Latin into English because literate women are more likely to read English than any other language and can then pass on the information it contains to illiterate women. More controversial must be the claim that this text was written by a woman. The text is a translation, no doubt by a man, but one of his ultimate sources was a text attributed to 'Trotula', in the Middle Ages believed to be the name of a midwife or gynaecologist from Salerno, who wrote extensively on women's ailments, childbirth and beauty care. Recent work shows that such a woman, probably named Trota, did exist and that she did write a gynaecological treatise, the Trotula or 'little Trota', which became closely associated with two other texts not by her. All three however became very popular and were widely disseminated under her name. Large sections of The Knowing of Woman's Kind come, via an Old French translation, from a version of the Liber de Sinthomatibus Mulierum (the Cum auctor), the first element in this Trotula ensemble.

Available in PDF, EPUB and Kindle. Book excerpt: The chemistry and physico-chemical properties of milk proteins are perhaps the largest and most rapidly evolving major areas in dairy chemistry. Advanced Dairy Chemistry-1B: Proteins: Applied Aspects covers the applied, technologically-focused chemical aspects of dairy proteins, the most commercially valuable constituents of milk. This fourth edition contains most chapters in the third edition on applied aspects of dairy proteins. The original chapter on production and utilization of functional milk proteins has been split into two new chapters focusing on casein- and whey-based ingredients separately by new authors. The chapters on denaturation, aggregation and gelation of whey proteins (Chapter 6), heat stability of milk (Chapter 7) and protein stability in sterilised milk (Chapter 10) have been revised and expanded considerably by new authors and new chapters have been included on rehydration properties of dairy protein powders (Chapter 4) and sensory properties of dairy protein ingredients (Chapter 8). This authoritative work describes current knowledge on the applied and technologically-focused chemistry and physico-chemical aspects of milk proteins and will be very valuable to dairy scientists, chemists, technologists and others working in dairy research or in the dairy industry.

Book excerpt: Originally published in 1984, State Apparatus contributes to the debate on the theory of the state through posing questions regarding the state’s form, function, and apparatus. The book begins by setting out the theoretical and methodological problems and reviewing the various Conservative, Liberal and Marxist theories in light of these. It discusses state activity, using specific case studies to clearly illustrate key points, such as the development of welfare systems in North America and Western Europe. It also explores the use of language under the state, the role of the legal apparatus within a capitalist system, and the "local state". The book concludes with a discussion of democracy and the crisis of legitimacy, and the issue of justice and the state. State Apparatus is a detailed and comprehensive text, ideal for those with an interest in the history, theory, form, and function of the state.
