Or that all of the world’s tea originates from only three varieties of a single plant? While a cup of tea may be a simple pleasure for most of us, there are a dizzying number of tastes from which to choose. And every tea, whether a delicately sweet green tea from Japan or a bracing, brisk Darjeeling black, tells a story in the cup about the land that nurtured it and the tea-making skills that transformed it. In this authoritative guide, veteran tea professionals Mary Lou and Robert J. Heiss provide decades of expertise on understanding tea and its origins, the many ways to buy tea, and how to explore and enjoy the six classes of tea (green, yellow, white, oolong, black, and Pu-erh). Additional advice on steeping the perfect cup and storing tea at home, alongside a gallery of more than thirty-fi ve individual teas with tasting notes and descriptions make The Tea Enthusiast’s Handbook a singular source of both practical information and rich detail about this fascinating beverage.

Excerpt: ...of his leaf on a small wicker tray for inspection, when the buyer, without a moment's hesitation, fixes the price and writes it on a slip of paper, which is handed to the seller, who is equally prompt in accepting or rejecting the price offered, and there is no chaffering, time being too precious. If the price is accepted, the leaf at once is carried into the hong, weighed, and the money paid on the nail. There is always keen competition among the buying hongs, and the growers are thus secured a full market price." After the buying for the day is over, the qualities are sorted out, the leaves are slightly fired, and then packed away as tightly as hay in a stack, in dark stalls, in the interior of the hong, where the tea is left till fermentation commences. It is then put into the hands of the pickers, women and girls, each of whom receive one katty (equal to iflb.) at a time, from which they pick out the brown leaves and stalks. The leaf is then winnowed to throw the dust off. The fresh leaves which are left are gathered together and fired, which is the most important process of all, as the appearance, character, and flavour all depends on the skill and care of the firing. When the charcoal fire is ready, a deep basket is placed above it with a grating in the middle, over which the leaves are thinly spread, and the leaves are in this way rapidly dried; then they undergo a final rolling. When the whole of the leaf of one quality has been treated in this way, they are spread out again in thin trays in heated chambers for a few minutes to drive off any remaining moisture, and turned over until perfectly dry and uniformly dark. Nothing now remains but to pack them in the familiar lead-lined boxes and put them on the market as rapidly as...

Book excerpt: Excerpt from Tea-Blending as a Fine Art Time, or has a more important bearing upon the success of his business than Tea, as it stands in many respects far ahead of all the other commodities in com manding and maintaining patronage, as well as in attract ing and retaining trade for numerous other articles, and at the same time yielding a larger margin Of profit to the dealer. Gain being the fundamental object of all business transactions, and as tea to the grocer plays such an essential part in determining this profit, we may be excused if, in considering the article from a purely practical standpoint, we urge the relation which it has to the success of the dealer, and who, as a general rule, experiences much more difficulty in the judicious selec tion of his Tea than in any other staple he trades in. The cause of this difficulty is obvious to dealers in Tea in general, being entirely due to the numerous varieties and almost innumerable grades, avors and characters of the commodity with which he is confronted and to be selected from in order to satisfy the diversity of tastes and various preferences to be catered to in order to please each individual taste and preference. It therefore re quires no ordinary skill or brief experience to make the proper selection or combination to suit the consumer under these trying circumstances.
