Smith examines changing attitudes, behaviors, and beliefs about the production and consumption of food in Russia from the late eighteenth century through the mid-nineteenth century. She focuses on the way that competing ideas based either in "traditional" Russian practice or in new practices from the "rational" West became the basis for Russians' understanding of themselves and their society. The Russians who participated in the process of self-definition were variously private authors and reformers or public servants of the Russian imperial state. Some had great success in creating a sense of themselves as ultimate authorities on a given topic. For example, a series of cookbook authors developed a system of writing Russian cookbooks in ways that borrowed from, but were still quite different from, foreign sources. Others found the process of mediating these ideas more difficult; agricultural reformers, in particular, sometimes found traditional practices, now deemed irrational, hard to eliminate. Recipes for Russia looks at the process of nation-building within the framework of the modern world—that is, it looks at the way individuals sought to define their nationality not only against outside influences but also by incorporating those outside influences into some coherent, yet national, whole. While Smith looks at food as part of Russian culture, she also connects it with the social, legal, and economic background that formed the culture, while examining the pre-reform period in significant detail. As a result, Recipes for Russia illuminates the great changes of this period, both in the food habits of Russians and in their views of themselves and of their nation.

In How St. Petersburg Learned to Study Itself, Emily Johnson traces the Russian fascination with local guides to the idea of kraevedenie. Kraevedenie (local studies) is a disciplinary tradition that in Russia dates back to the early twentieth century. Practitioners of kraevedenie investigate local areas, study the ways human society and the environment affect each other, and decipher the semiotics of space. They deconstruct urban myths, analyze the conventions governing the depiction of specific regions and towns in works of art and literature, and dissect both outsider and insider perceptions of local population groups. Practitioners of kraevedenie helped develop and popularize the Russian guidebook as a literary form. Johnson traces the history of kraevedenie, showing how St. Petersburg–based scholars and institutions have played a central role in the evolution of the discipline. Distinguished from obvious Western equivalents such as cultural geography and the German Heimatkunde by both its dramatic history and unique social significance, kraevedenie has, for close to a hundred years, served as a key forum for expressing concepts of regional and national identity within Russian culture. It contributes significantly to current issues surrounding the role of the piano and the entrepreneur-artisans in the urban centers of imperial Russia and represents an expansion of what is currently known about the piano builders who established workshops in Russia beginning in the late 1830s and 1840s, well before the heyday of the virtuoso in that country. Rare documents, including letters, memoirs, gazettes, exhibition catalogs, music journals, and administrative reports, form the nucleus of this book and provide fascinating insights about state and private patronage and the class/economic issues related to the affordability and prestige of the piano in Russia. Issues surrounding the transformation of the music industry in Russia, the role of women as patrons and performers, the exportation of instruments to the Russian Far East, and the complex system of tariffs and trade protection that benefited domestic piano manufacturers provide this book’s thematic links. Conclusions indicate that while favorable tariff laws and state-imposed economic policies benefited the family-owned firms in the nineteenth century, they remained in effect in the decades after the nationalization of the piano industry in 1917.
