Proteins and non protein nitrogenous compounds play an important role in the nutritional value and sensory quality of seafoods. Consumption of fish and marine oils is also actively encouraged for the prevention and treatment of cardio vascular diseases and rheumatoid arthritis. Highly unsaturated long-chain omega-3 fatty acids are regarded as the active components of marine oils and seafood lipids. The basic chemical and biochemical properties of seafood proteins and lipids, in addition to flavour-active components, their microbiological safety and freshness quality, are important factors to be considered. A presentation of the state-of-the-art research results on seafoods with respect to their chemistry, processing technology and quality in one volume was made possible by cooperative efforts ofan international group of experts. Following a brief overview, the book is divided into three sections. In Part 1 (chapters 2 to 8) the chemistry of seafood components such as proteins, lipids, flavorants (together with their properties and nutritional significance) is discussed. Part 2 (chapters 9 to 13) describes the quality of seafoods with respect to their freshness, preservation, micro biological safety and sensory attributes. The final section of the book (chapters 14 to 16) summarizes further processing of raw material, underutilized species and processing discards for production of value added products.

Available in PDF, EPUB and Kindle. Book excerpt: Referred to in the Bible, pictured on the wall-friezes of ancient Egyptian tombs, and a subject of fascination for generations of scientists, the tilapias (Cichlidae: Tilapiini) have featured in the diet and culture of humankind for thousands of years. The present century has seen their spread from Africa throughout the tropics and sub-tropics, largely for food and fisheries purposes. This book attempts to pull together our knowledge of this important group - their biology and fisheries and aquaculture - in a single volume, something that has not been done comprehensively for nearly two decades. A succession of chapters by acknowledged authorities covers evolution, phylogenetic relationships and biogeography, reproductive biology, mating systems and parental care, diet, feeding and digestive physiology, environmental physiology and energetics, the role of tilapias in ecosystems, population dynamics and management, genetics, seed production, nutrition, farming, economics and marketing. The book is aimed at biologists, fisheries scientists, aquaculturists, and all interested in aquatic ecology.

Available in PDF, EPUB and Kindle. Book excerpt: There are many conferences, workshops and meetings annually around the world, each emphasizing a specialty area for scientific exploration and research. Yet in very few instances, if at all, do the multidisciplinary aspects of science get presented so one may see the diversity of dependencies these seemingly disparate disciplines actually have. The Explorers Club and the U. S. National Park Service collaborated to make a first attempt at what will continue to be an "ocean pulse'" effort; conferences combining the aquaculture sciences; the search for underwater antiquities and the marinelbio-technologies utilized to explore these areas. The purpose has been to bring together not just academicians to talk about their finding in the field or the laboratory, but to provide a forum for the practical applications of "technology" to expanding our worlds fisheries as well as to continue to explore our world's oceans; the earth's truly last frontier. After everything is said and done, we still know precious little about our ocean environments. Their influences on our lives are monumental and yet we continue to be very parochial and conservative in our dedication to exploring their depths and resources. We feel confident that this initial effort by our respective groups to awaken a realization in the public and private sectors of the need for a cross-disciplinary approach to scientific research in the marine environment, is a necessity as we approach the 21 st century. Available in PDF, EPUB and Kindle. Book excerpt: This book is a completely new edition of Fresh Seafood-The Commer cial Buyer's Guide, which was first published in 1984. There have been many changes in both product and the seafood business in the intervening years. About 70 percent of the material in this book is new, a tribute to the rapid pace of change throughout the industry. The subject of this book is fresh seafood. "Fresh" is defined as product handled under refrigeration (mechanical or ice) from har vester to consumer. This excludes frozen product, canned product and other shelf-stable packaging. Frozen seafoods are covered in the companion volume, The New Frozen Seafood Handbook. Many prod ucts are, of course, handled in both refrigerated and frozen forms. There may be substantial differences, not just in how they are han dled, but in how they are processed, graded and packed. Frozen sea foods are often treated and traded as commodities, with standard descriptions. Marketing and distributing fresh fish and shellfish, which has to be eaten within days of harvest, is necessarily more personal and direct. The contest between refrigerated and frozen seafoods has continued for many years and shows no signs of resolving. Despite massive im provements in the quality of much frozen product, consumers and their retail and restaurant suppliers still tend to believe that "fresh" is bet ter, perhaps simply because the word "fresh" is naturally appealing.
