Book excerpt: Excerpt from School Lunch Recipes Using Potatoes When buying potatoes for school lunches it is usually most economical to get them in large quantity from local dealers at wholesale prices. Most pota toes are graded according to standards set up by the U. S° Department of Agriculture-the grades usually found on the market are U. S. No. 1, U. S. Commercial, and U. S. No. 2. Some potatoes are not graded. Top-quality pota toes are firm and clean, free from cuts and decay, sprouts, and green color. Although the lower grades do not meet all these requirements, they cost less and if carefully selected may be satisfactory for a particular need. In cooking quality, potatoes differ according to variety and the conditions under which they are grown and stored. Before buying in wholesale lots, it may be advisable to try a small quantity of those available to find the grade or variety best suited to your needs. Potatoes that cook to a mealy consist ency and break apart easily are preferable for mashing and baking; those that hold their shape and have a more waxy consistency are more suitable for salads and hot dishes. It is usually more economical to choose a grade and variety suitable for all general purposes than to select a different variety for each specific purpose. Book excerpt: NEW YORK TIMES BEST SELLER • From the best-selling author of The Smitten Kitchen Cookbook—this everyday cookbook is “filled with fun and easy ... recipes that will have you actually looking forward to hitting the kitchen at the end of a long work day” (Bustle). A happy discovery in the kitchen has the ability to completely change the course of your day. Whether we’re cooking for ourselves, for a date night in, for a Sunday supper with friends, or for family on a busy weeknight, we all want recipes that are unfussy to make with triumphant results. Deb Perelman, award-winning blogger, thinks that cooking should be an escape from drudgery. Smitten Kitchen Every Day: Triumphant and Unfussy New Favorites presents more than one hundred impossible-to-resist recipes—almost all of them brand-new, plus a few favorites from her website—that will make you want to stop what you’re doing right now and cook. These are real recipes for real people—people with busy lives who don’t want to sacrifice flavor or quality to eat meals they’re really excited about. You’ll want to put these recipes in your Forever Files: Sticky Toffee Waffles (sticky toffee pudding you can eat for breakfast), Everything Drop Biscuits with Cream Cheese, and Magical Two-Ingredient Oat Brittle (a happy accident). There’s a (hopelessly, unapologetically inauthentic) Kale Caesar with Broken Eggs and Crushed Croutons, a Mango Apple Ceviche with Sunflower Seeds, and a Grandma-Style Chicken Noodle Soup that fixes everything. You can make Leek, Feta, and Greens Spiral Pie, crunchy Brussels and Three Cheese Pasta Bake that tastes better with brussels sprouts than without, Beefsteak Skirt Steak Salad, and Bacony Baked Pintos with the Works (as in, giant bowls of beans that you can dip into like nachos). And, of course, no meal is complete without cake (and cookies and pies and puddings): Chocolate Peanut Butter Icebox Cake (the icebox cake to end all icebox cakes), Pretzel Linzers with Salted Caramel, Strawberry Cloud Cookies, Bake Sale Winning-est Gooey Oat Bars, as well as the ultimate Party Cake Builder—four one-bowl cakes for all occasions with mix-and-match frostings (bonus: less time spent doing dishes means everybody wins). Written with Deb’s trademark humor and gorgeously illustrated with her own photographs, Smitten Kitchen Every Day is filled with what are sure to be your new favorite things to cook. Look for Deb Perelman’s latest cookbook, Smitten Kitchen Keepers!

Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Irish Potato The work outlined in these bulletins is intended to give sug gestions and some definite direction for teaching children, both girls and boys, in the outlying rural districts something of the nature of food plants, their nutritive value and their proper preparation for human consumption. It is also desired that these lessons in cooking should be connected with the school lunches and that the children actually prepare daily a hot dish to supple ment the cold food brought from home. There are various ways in which this work can be placed on the school program. The subject dealt with can be divided into smaller topics, and one of these smaller divisions developed each day. Probably a better plan would be to devote Friday after noon to the work. The subject-matter can be carefully discussed and followed by an actual cooking lesson. The following week the class should be divided into groups and each group serve for a day during the forenoon. This group will prepare and cook in quantities large enough to serve those contributing to the food supplies, some special dish discussed or prepared at the Friday class suitable for the noon luncheon. The time spent in this can be arranged during the study hours and the noon recess by the teacher, so that it will not con ict with the regular school program. Book excerpt: Excerpt from Menus and Recipes for Lunches at School Children even more than d nourishing food at every meal. For children, food mu t only for the daily upkeep of the body but more partien demands of growth and of almost ceaseless activity. Start the'day right with a good break fast is one important rule for children. To provide a hot, nourish ing midday meal is just as important. A good meal in the middle of the day, either at home or at school, contributes to growth, nutri tion, amt}. Health, and helps the child to make the most of his school opportunities. Children who seem tired and listless have been found to need nourishment quite as much as rest. For this reason, some schools provide milk at the morning - recess period, and the authorities, acting on the advice of nutritionists and physicians, cooperate in the arrangements for serving a hot lunch at school for children who cannot go home at noon. In some communities the school lunch is sponsored and supervised by the parent-teacher association, the farm bureau women, or some other local group. In some schools the older children operate the lunchroom as a part of their work in food-for-health courses, or sometimes the hot-lunch service is put into the hands of capable persons who are needing employment. Two ingredients are turned into hundreds of stuffed, rolled, extruded, dried, stamped, and hand-cut shapes, each with its own unique provenance and enrobed in a favored sauce. New York City chef Missy Robbins fell in love with Italian food and pasta twenty-five years ago. With illustrated step-by-step recipes for handmaking forty of the most versatile pasta shapes and one hundred recipes for Italian American, regional Italian, and Robbins’s own best pasta dishes, plus two dozen vegetable sides, this is the hard-working manual for home cooks who aspire to master the art of pasta cooking. Whether making pasta sheets for lasagna or stamping out pasta “coins” for Corzetti with Goat Cheese and Asparagus—or even buying handmade pasta to make Tagliatelle with Porcini, Rosemary, and Garlic—Robbins provides all the inspiration, instruction, and encouragement required to make pasta exceptionally well. Evocatively photographed with nearly 100 full-color mouthwatering photos of pasta dishes and twenty images from Italy, this is a richly illustrated ode to the ingredients, recipes, and craft that have made pasta the most popular fare of a beloved cuisine.

Growing up in a close-knit Greek-American household, Mina Stone learned to cook from her Yiayia, who taught her that food doesn’t have to be complicated to be delicious—and that almost any dish can be improved with judicious amounts of lemon, olive oil, and salt. In this deeply personal cookbook, Stone celebrates her grandmother and the other influences that have shaped her life, her career, and her culinary tastes and expertise. Lemon, Love & Olive Oil weaves together more than 80 Mediterranean-style dishes with the stories that inspired them.
