Stone fruits attract research attention, mainly due to the cultural and commercial aspects of the array of varieties that are grown. Being grown in wide range of environments, it is very important to understand what factors influence the production and quality attributes of stone fruits. There is a lack of systematic scientific information on strategic approach for production technologies of such fruits. This book will be first of its kind focusing on technological aspects of stone fruits especially on latest developments in present day horticulture. It will be an essential reference for professionals including academicians, scholars, researchers and industries working in the said area. We hope that readers will find this book a useful resource for their research or studies, and it will be helpful in the development of high quality stone fruits in future which will improve the economic and social life of people. Besides, this book fulfills the needs of a number of horticultural courses of Universities and will serving as a pomological manual for all occasions.

Available in PDF, EPUB and Kindle. Book excerpt: Science and Technology of Fruit Wine Production includes introductory chapters on the production of wine from fruits other than grapes, including their composition, chemistry, role, quality of raw material, medicinal values, quality factors, bioreactor technology, production, optimization, standardization, preservation, and evaluation of different wines, specialty wines, and brandies. Wine and its related products have been consumed since ancient times, not only for stimulatory and healthful properties, but also as an important adjunct to the human diet by increasing satisfaction and contributing to the relaxation necessary for proper digestion and absorption of food. Most wines are produced from grapes throughout the world, however, fruits other than grapes, including apple, plum, peach, pear, berries, cherries, currants, apricot, and many others can also be profitably utilized in the production of wines. The major problems in wine production, however, arise from the difficulty in extracting the sugar from the pulp of some of the fruits, or finding that the juices obtained lack in the requisite sugar contents, have higher acidity, more anthocyanins, or have poor fermentability. The book demonstrates that the application of enzymes in juice extraction, bioreactor technology, and biological de-acidification (MLF bacteria, or de-acidifying yeast like schizosaccharomyces pombe, and others) in wine production from non-grape fruits needs serious consideration. Focuses on producing non-grape wines, highlighting their flavor, taste, and other quality attributes, including their antioxidant properties Provides a single-volume resource that consolidates the research findings and developed technology employed to make wines from non-grape fruits Explores options for reducing post-harvest losses, which are especially high in developing countries Stimulates research and development efforts in non-grape wines

Book excerpt: Along with long-term support from many other organisations, ACIAR has funded research and development in low-chill temperate fruits since 1997 in Thailand, Laos and Vietnam with the aim of helping to develop a sustainable temperate fruit industry for low-chill varieties. Considerable progress has been made with on-farm commercial production systems developing and fruit appearing in major markets, especially in Thailand. This research and development is presented and discussed in these reports from the Second International Workshop on Production Technologies for Low-chill Temperate Fruits. The workshop coincided with a review of the ACIAR project which resulted in a decision to extend the work on developing the industry in these countries. The excellent organisation and contributions of Thai collaborators and all presenters made the workshop a valuable and enjoyable experience and are gratefully acknowledged.

Book excerpt: Fruit Production and Processing Technology is the exciting subject developed in the field and makes accessible to the reader a comprehensive and coherent coverage of the basic needs of orchard management with the principles and techniques of plant regeneration, care, preservation of fruit. A large variety of fruits can be used to obtain by the appropriate technological process different kinds of semi - finished product starting from fresh fruits just harvested from field or stored in controlled atmosphere warehouses. The ripeness degree, the freshness and the cleanness of the raw materials are very important to obtain a high quality juice. Fruit is sometimes defined as the product of growth from an angiosperm, or flowering plant. From a purely botanical point of view, the fruit may be only the fleshy growth that arises from the ovary of a flower and may not necessarily include any other structures. From the consumer's or food processor's point of view, however, fruit is generally characterized as the edible product of a plant or tree that includes the seed and its envelope and can typically be described as juicy, sweet, and pulpy. Present book has been designed to provide overall information of principles of fruit production and processing technology.

Book excerpt: In the last ten years there has been an exponential increase in the adoption of high-density farming, which leads to better yield and higher-quality fruits, thus improving the economic return. Handbook of Plum Fruit: Production, Postharvest Science, and Processing Technology covers all the recent advances in plum production, harvesting, handling and processing. Divided into two main parts, the first eight chapters provide insight about preharvest processing of plums, whereas the later chapters discuss the postharvest processing of plums. This book also includes vital chapters on varietal improvement and rootstock breeding, high-density planting, and pollination. After harvesting, plum quality quickly diminishes, mainly due to weight loss, total acidity, loss of firmness, and decay. Key Features: In-depth information on the pre- and postharvest processing of plums Coverage on plum harvesting, handling, and storage practices Plum by-product utilization and potential health benefits Handbook of Plum Fruit provides comprehensive information on recent advances in postharvesting technologies of plum. The health benefits of plum and its products are also addressed. This book will assist horticulturists, agriculturists, pomologists, food scientists and others working in various fruit-processing industries.

Available in PDF, EPUB and Kindle. Book excerpt: For centuries we have known that fruit is important for health, but we are only just beginning to fully understand why. Bioactives in Fruit: Health Benefits and Functional Foods aims to summarise some of our current knowledge on the bioactive compounds that are associated with the health benefits of specific fruits with a strong emphasis on the validation of health benefits by human intervention trials. Reflecting the current interest in food and health, the book includes strategies to retain and enhance the bioactives in fruit through breeding, growing conditions, fruit storage, processing into ingredients and production of functional foods. To accomplish this task authors with expertise in biology, chemistry, pharmacology, food science, nutrition, medicine, and horticulture have contributed. They come from universities, government and industry funded research institutes and biotechnology and food companies in Europe, the United States, Asia and New Zealand to give the book a broad perspective. This book, describing fruit bioactives, their health benefits when consumed as a food and related topics regarding their development into fresh or processed functional foods, will be of use to postgraduate students, researchers, functional food product developers, food regulators and anyone who has curiosity about why fruit is good for you. The information contained within will provide plant breeders with new targets for the development of value-added horticultural products, and will also provide nutritionists and dieticians with a useful resource for developing strategies to assist in preventing or slowing disease onset or severity. Bioactives in Fruit: Health Benefits and Functional Foods is a major resource which will be required reading for anyone working in the fields of health and functional foods.
