Book excerpt: Excerpt from Plants Manufacturing Dairy Products, 1957: By Production-Size Groups and Geographic Distribution This rapid change in plant numbers and production has caused an increasing demand for information on size and geographic distribution of plants manufacturing dairy products. Many of the plants shown in this report manufacture several products, so a plant making butter and powdered milk, for example, was counted once as a creamery and again as a powdering plant. Tables and maps are based upon data obtained from the 1957 survey of all dairy manufacturing plants in the United States. In 1957, almost two-thirds of the creameries in the United States had an annual output of less than one-half million pounds of butter, while only 19 percent produced over one million pounds per plant. Yet, the average production per plant for the Nation was slightly over' pounds. In the major producing West North Central region, 60 percent of the plants produced less than one-half million pounds of butter each, 17 percent were in the 1 million to ll million-pound production groups, and less than 2 percent produced over h million pounds. In the East North Central region, the proportion of small plants was about the same as in the West North Central; 57 percent in the less than one-half million-pound groups, 25 percent in the 1 million to 1} million-pound groups, and 5 percent in the over 1] million-pound group. Three fifths of the creameries in Minnesota, the most important butter-producing State in 1957, made less than one-half million pounds each, 15 percent made from 1 to 1} million pounds, and only 2 plants made over 1+ million pounds. In Wisconsin, which is fast approaching Minnesota in butter output, only E3 percent of the creameries fell in the less than one-half million-pound groups, while over 31 percent produced from 1 million to h million pounds, and 7 percent, or 111 plants, made over it million pounds of butter. It was stepped up 5 cents each year, reaching a level of 35 cents in 1948. The order provided for a deduction of 40 cents per hundredweight in 1949 and in subsequent years. But testimony of producers indicated that the 40-cent rate would be too severe and rigid in view of lower producer prices The amendment of September 1949 provided a formula which relates the rate of deduction to the general level of milk prices. There was a wider seasonal variation in prices to producers for milk in Louisville under the Louisville plan than in Cincinnati and St. Louis under different pricing plans. Of the three markets, Louisville made the greatest progress toward even seasonal production. From 1950 through 19 52 the fall-spring ratios of daily delivery of milk per producer in the Louisville area ranged from 80 to 82 percent as compared with 73 to 76 percent for the years 1941 through 1943. This higher fall production level was attained under fall pasture conditions varying from extreme drought to excellent. With Wisconsin farmers in 147 different cow-testing associations test ing the quality Of the production of over animals, and dis carding this last year over 5 per cent Of those animals; with 48 of these cow-testing associations in which every male animal is purebred rather than a scrub or inferior in quality; with the elimination of disease, which it has been possible to bring about here in Wisconsin so that now whole counties are entirely free from the scourge of tuberculosis - ir is Obvious that Wisconsin is in a position to face the competition of the future better than any other state in the nation. The work of continued improvement will have to be pushed harder than ever as prices decline - better animals, better feed ing methods, better care, elimination of all possible losses in the production of milk. Then, too, the leaks that now occur in the manufacturing processes must be cut out or greatly reduced. These are the little foxes that destroy the vines, and eat up the profits. Take this recent experience of two Swiss factories in Green county. In one factory the milk brought the factory pa trons 60 cents per 100 pounds because the quality Of the cheese was so poor. Most of it developed a putrefactive fermentation, the so-called stinker cheese. Within a mile from this factory was another factory which was turning out an extra fine product, bringing its farmer owners $3 a hundred for their milk. It is necessary to overcome just such leaks as this to convert a serious loss into a profit. A well-established industry, as is dairy ing, judiciously and intelligently handled, 'still offers the best field for Wisconsin endeavor. The gamble in this crop is in finitely less than would be the case in grain, fruit, or beef, under Wisconsin conditions.
