Eggs not consumed by the local population were assembled at country points and shipped to wholesale dealers in these markets. Jobbers, dealers, chain stores, and dairies, bargaining with the wholesalers, procured a sufficient quantity of these eggs to supply the needs of the population center associated with the market. The remainder of the eggs were moved into market channels in the east, south, and west. Prices established through the supply-and-demand forces at work within the central market provided a basis for establishing paying prices at country points servicing the market. Since most country dealers were selling to wholesalers in the central markets, the prices which they paid for eggs could not vary widely from the wholesale buying price at the market. If the country buyers' paying prices were too high relative to the central market price, they chanced a loss when they sold the eggs. Egg prices are expected to rise more than usual this summer and average moderately above the depressed year-earlier levels through fall. Broiler prices in the second half may be up slightly. Egg production through April this year averaged 2 percent above 1971 with the largest gains early in the period. But May output was down about 2 percent, trailing year-earlier levels for the first time since mid-1969. Layer numbers on June 1 were down 3 percent but the rate of lay was up about 1 percent from a year ago. Increases in productivity likely will limit the decline in egg production this summer. However, an aging flock and more molted layers will tend to hold down increases in the rate of lay. Large egg supplies and weak egg demand for table use have sharply reduced egg prices. Producers' prices for all eggs in mid-may averaged cents a dozen, unchanged from April but more than 2 cents below May 1971. This was the lowest mid-may price since 1968. Markets have strengthened in recent weeks. New York wholesale prices of Grade A large eggs in mid-june were around 31 cents a dozen, about 2 cents above mid-may but about 3 cents below a year earlier. Egg markets will continue to rise as output eases from the high levels of 1971. Broiler meat output is up moderately and continues at record levels after increasing only slightly in 1971. Output through April in Federally inspected plants was up 8 percent. There were 6 percent more broilers marketed at slightly heavier weights during the first 4 months of this year, and may-june marketings probably have been up about as much. Also, condemnations in Federally inspected plants have fallen sharply. Continued lower pork output and high red meat prices likely will encourage summer and fall broiler production above july-december 1971. In rare cases, an imperfection in the original, such as a blemish or missing page, may be replicated in our edition. We do, however, repair the vast majority of imperfections successfully; any imperfections that remain are intentionally left to preserve the state of such historical works.
