Available in PDF, EPUB and Kindle. Book excerpt: These memoirs trace the wild and adventurous life of Pérez Rosales from his childhood up to the 1860s. During that approximately half-century he saw and did more than a dozen ordinary men. At age eleven in Argentina he witnessed the executions of Luis and Juan Jose Carrera. From there, his activities and adventures took him on several journeys on sailing vessels around Cape Horn; to Paris, where he witnessed the July revolution of 1830; to various commercial endeavors including a distillery, the practice of medicine, and cattle smuggling; into service as an advisor to an Argentine warlord; as a miner for precious metals in the north of Chile; as participant in the California Gold Rush in 1849; as director of the government's project for German immigration and settlement in the wild south of Chile; and also as Chilean consul and immigration agent in Hamburg. Around the world, Rosales lived through many of his era's watershed moments. His exciting memoirs offer a chance to relive the rush and chaos of these times--from a much safer vantage.

Book excerpt: Environmental concerns regarding continuous use of synthetic dyes saw a revival in the demand for natural dyes as natural dyes exhibit better biodegradability and generally have a higher compatibility with the environment. However, one of the limitations on the use of natural dyes or pigments is the low extraction yield factors (a few grams of pigment per kg of dried raw material). Therefore, the exploitation of other biological sources such as fungi, bacteria and cell cultures offers interesting alternative. Microbial pigments such as from bacterial origins offer the advantage in terms of production compared to pigments extracted from vegetables or animals, due to its simple cell and fast culturing technique. This book offers interesting insight into initial works carried out to demonstrate the potential use of bacterial pigment as colorant for various applications.

Available in PDF, EPUB and Kindle. Book excerpt: Food engineering has become increasingly important in the food industry over the years, as food engineers play a key role in developing new food products and improved manufacturing processes. While other textbooks have covered some aspects of this emerging field, this is the first applications-oriented handbook to cover food engineering processes and manufacturing techniques. A major portion of Handbook of Food Engineering Practice is devoted to defining and explaining essential food operations such as pumping systems, food preservation, and sterilization, as well as freezing and drying. Membranes and evaporator systems and packaging materials and their properties are examined as well. The handbook provides information on how to design accelerated storage studies and determine the temperature tolerance of foods, both of which are important in predicting shelf life. The book also examines the importance of physical and rheological properties of foods, with a special look at the rheology of dough and the design of processing systems for the manufacture of dough. The final third of the book provides useful supporting material that applies to all of the previously discussed unit operations, including cost/profit analysis methods, simulation procedures, sanitary guidelines, and process controller design. The book also includes a survey of food chemistry, a critical area of science for food engineers.

Available in PDF, EPUB and Kindle. Book excerpt: Polymers are permeable, whilst ceramics, glasses and metals are gener ally impermeable. This may seem a disadvantage in that polymeric containers may allow loss or contamination of their contents and aggressive substances such as water will diffuse into polymeric struc tures such as adhesive joints or fibre-reinforced composites and cause weakening. However, in some cases permeability is an advantage, and one particular area where this is so is in the use of polymers in drug delivery systems. Also, without permeable polymers, we would not enjoy the wide range of dyed fabrics used in clothing and furnishing. The fundamental reason for the permeability of polymers is their relatively high level of molecular motion, a factor which also leads to their high levels of creep in comparison with ceramics, glasses and metals. The aim of this volume is to examine some timely applied aspects of polymer permeability. In the first chapter basic issues in the mathema tics of diffusion are introduced, and this is followed by two chapters where the fundamental aspects of diffusion in polymers are presented. The following chapters, then, each examine some area of applied science where permeability is a key issue. Each chapter is reasonably self-contained and intended to be informative without frequent outside reference. This inevitably leads to some repetition, but it is hoped that this is not excessive.

Book excerpt: Translated by Charles C. Mierow. De origine actibusque Getarum, or the Getica, is a summary of the now lost account by Cassiodorus of the origin and history of the Gothic people. It tells of the great battles between the Goths and Romans, of the First Great Race War against Europe waged by the Huns under Attila, the Gothic involvement in the great sacking of Rome-and much, much more. Jordanes' work is the single most important source on the origin and migration of the Goths, Ostrogoths and Visigoths. Starting with a fictionalized account of Gothic origins and travels, the Getica then deals with the very real story of the first meeting between Roman and Gothic forces on the eastern borders of the Empire in the present-day north Balkans. It tells of the initial clashes between Roman and Goth, and of how they were eventually forced to become allies against the invasion of Europe by the Asiatic hordes under Attila the Hun. Once that invasion was warded off, the story continues with the adventures of the Ostrogoths, the Visigoths, Gaul, Spain, the last Gothic rulers of the Western Roman Empire, their part in the final fall of Rome and their descendant's role in the Eastern Roman Empire. The Getica is, even after 1,500 years, still a riveting read and brimming with adventure, despair, heroism and incredible deeds which helped shape Europe, and a vital source for early Gothic, Slavic, Roman and Hunnish history. This version has been completely reset and follows the identical margin notes, introduction and literary overview of Charles C. Mierow's Princeton University edition. About the author: Jordanes (sixth century AD) was a Goth whose immediate family came from Moesia, or modern northern Bulgaria, when it was on the eastern frontier of the Roman Empire. Little else is known about his life or death except that he was a high-level notarius, or civil servant who turned to history writing as a hobby after being converted to Christianity.
