Doch wer von diesen vielen Menschen beschützt die Nachhaltigkeit und wie kann sie durch ihre Ernährung unterstützt werden? In Zeiten von „Cowspiracy“ und „What the Health“ und noch viele weiteren bekannten Dokumentationen ist es viel schwieriger geworden die Augen vor diesem Thema zu verschließen. Der Nachhaltigkeitsbegriff umfasst sehr viele Bereiche. Gegenwärtig gibt es Unmengen an Autoren die sich mit diesem Thema beschäftigen, denn der Begriff ist sehr breit gefasst, Themen wie nachhaltiger Baustil, nachhaltige Kleidung und noch vieles mehr, sind Aspekte des Nachhaltigkeitsbegriffs. Diese Hausarbeit fokussiert sich auf den Aspekt der Ernährung. Ernährung bzw. Nahrung betrifft jeden einzelnen Menschen. Jedes Individuum auf dieser Erde könnte, um nur ein Beispiel zu nennen, ohne ein Kleidungsstück leben, doch ohne Nahrung würden wir nicht überleben. Vor 50-60 Jahren sind die Menschen auf Märkte gegangen und haben von dort ihre Lebensmittel bezogen, diese waren zum größten Teil regional und auch saisonal. Durch die Industrialisierung, aber auch vor allem durch die Globalisierung wurde der Landwirtschaft neue Möglichkeiten eröffnet. Heutzutage wird man überhäuft von gefroren, stark verarbeitetem Essen, dass mehr als hundert Kilometer Transportweg hinter sich hat. Die Frage die sich die Industrie im Nahrungsmittelsektor heute stellt ist nicht mehr, wie wollen wir uns gesund und nährstoffreich ernähren, sondern vielmehr, wie können wir die Landwirtschaft zu einem effektiven gewinnbringenden System umkrempeln. Es ist keine Krise die von heute auf morgen entstand, aber sie ist jetzt an einem Punkt, an dem Boden und Wasser stark missbraucht werden und der Klimawandel immer mehr voranschreitet. Im ersten Teil dieser Hausarbeit wird ein sachlicher und theoretischer Überblick über die Nachhaltigkeitstheorie von Hans Carl von Carlowitz und das Drei-Säulen- Modell geschaffen. Durch die Vertiefung in das Drei-Säulen-Modell soll ein besserer Zusammenhang zwischen der ökologischen, ökonomischen und sozialen Dimension geschaffen werden. Im zweiten Teil soll der theoretische Ansatz mit dem Fokus auf die Ernährung gelegt werden.

Laut Bundesumweltministerium wird sich der Umsatz mit grünen Produkten und Technologien in Deutschland bis 2020 auf 3,1 Billionen Euro verdoppeln. Darüber hinaus wurde bei Umfragen vor der Europawahl 2019 von mehr als der Hälfte der Befragten der Umweltschutz als das wichtigste Thema angesehen. Daher ist es nicht wunderlich, dass mit dem Begriff Nachhaltigkeit seit einiger Zeit inflationär umgegangen wird.
