One of the effects of this unique history of the French soldiers is the banks of Cane River which lie through the beautiful brick streets. Enslaved people of Cane River region were also affected by cultural changes following the Louisiana Parish under French and Spanish rule most slaves originated from the Scnegambian region of Africa. A few plantations still with functioning families is the Magnolia Plantation. Besides the exquisite history of this amazing town , food play a big part in the structure of little town called "Natchitoches". Meat Pies, everything made with pecans, Crawfi sh Pie, File Gumbo and everything made from a fresh slottered hog (which I never had the opportunity to experience with my grandfather, J.C. Moody). I didn't grow up in Louisiana, but I sure didn't miss out on the blessings of cooking the many recipes giving to me from Cane River, my mother, grandmother and uncle Lonzia.
