Book excerpt: All for the Union is the eloquent and moving diary of Elisha Hunt Rhodes, featured throughout Ken Burns' PBS documentary The Civil War. Rhodes enlisted into the Union Army as a private in 1861 and left it four years later as a twenty-three-year-old colonel after fighting hard and honorably in battles from Bull Run to Appomattox. Anyone who heard these diaries excerpted in The Civil War will recognize his accounts of those campaigns, which remain outstanding for their clarity and detail. Most of all, Rhodes's words reveal the motivation of a common Yankee foot soldier, an otherwise ordinary young man who endured the rigors of combat and exhausting marches, short rations, fear, and homesickness for a salary of $13 a month and the satisfaction of giving "all for the union."

Book excerpt: International Association of Culinary Professionals (IACP) 2010 Award Finalists in the Culinary History category. Chocolate. We all love it, but how much do we really know about it? In addition to pleasing palates since ancient times, chocolate has played an integral role in culture, society, religion, medicine, and economic development across the Americas, Africa, Asia, and Europe. In 1998, the Chocolate History Group was formed by the University of California, Davis, and Mars, Incorporated to document the fascinating story and history of chocolate. This book features fifty-seven essays representing research activities and contributions from more than 100 members of the group. These contributors draw from their backgrounds in such diverse fields as anthropology, archaeology, biochemistry, culinary arts, gender studies, engineering, history, linguistics, nutrition, and paleography. The result is an unparalleled, scholarly examination of chocolate, beginning with ancient pre-Columbian civilizations and ending with twenty-first-century reports. Here is a sampling of some of the fascinating topics explored inside the book: Ancient gods and Christian celebrations: chocolate and religion Chocolate and the Boston smallpox epidemic of 1764 Chocolate pots: reflections of cultures, values, and times Pirates, prizes, and profits: cocoa and early American east coast trade Blood, conflict, and faith: chocolate in the southeast and southwest borderlands of North America Chocolate in France: evolution of a luxury product Development of concept maps and the chocolate research portal Not only does this book offer careful documentation, it also features new and previously unpublished information and interpretations of chocolate history. Moreover, it offers a wealth of unusual and interesting facts and folklore about one of the world's favorite foods.

Available in PDF, EPUB and Kindle. Book excerpt: Daughters of the Union casts a spotlight on some of the most overlooked and least understood participants in the American Civil War: the women of the North. Unlike their Confederate counterparts, who were often caught in the midst of the conflict, most Northern women remained far from the dangers of battle. Nonetheless, they enlisted in the Union cause on their home ground, and the experience transformed their lives. Nina Silber traces the emergence of a new sense of self and citizenship among the women left behind by Union soldiers. She offers a complex account, bolstered by women's own words from diaries and letters, of the changes in activity and attitude wrought by the war. Women became wage-earners, participants in partisan politics, and active contributors to the war effort. But even as their political and civic identities expanded, they were expected to subordinate themselves to male-dominated government and military bureaucracies. Silber's arresting tale fills an important gap in women's history. She shows the women of the North--many for the first time--discovering their patriotism as well as their ability to confront new economic and political challenges, even as they encountered the obstacles of wartime rule. The Civil War required many women to act with greater independence in running their households and in expressing their political views. It brought women more firmly into the civic sphere and ultimately gave them new public roles, which would prove crucial starting points for the late-nineteenth-century feminist struggle for social and political equality.

Available in PDF, EPUB and Kindle. Book excerpt: Bondspeople who fled from slavery during and after the Civil War did not expect that their flight toward freedom would lead to sickness, disease, suffering, and death. But the war produced the largest biological crisis of the nineteenth century, and as historian Jim Downs reveals in this groundbreaking volume, it had deadly consequences for hundreds of thousands of freed people. In Sick from Freedom, Downs recovers the untold story of one of the bitterest ironies in American history--that the emancipation of the slaves, seen as one of the great turning points in U.S. history, had devastating consequences for innumerable freed people. Drawing on massive new research into the records of the Medical Division of the Freedmen's Bureau-a nascent national health system that cared for more than one million freed slaves-he shows how the collapse of the plantation economy released a plague of lethal diseases. With emancipation, African Americans seized the chance to move, migrating as never before. But in their journey to freedom, they also encountered yellow fever, smallpox, cholera, dysentery, malnutrition, and exposure. To address this crisis, the Medical Division hired more than 120 physicians, establishing some forty underfinanced and understaffed hospitals scattered throughout the South, largely in response to medical emergencies. Downs shows that the goal of the Medical Division was to promote a healthy workforce, an aim which often excluded a wide range of freedpeople, including women, the elderly, the physically disabled, and children. Downs concludes by tracing how the Reconstruction policy was then implemented in the American West, where it was disastrously applied to Native Americans. The widespread medical calamity sparked by emancipation is an overlooked episode of the Civil War and its aftermath, poignantly revealed in Sick from Freedom.

This book was released on 2001-01-01 with total page 393 pages. Available in PDF, EPUB and Kindle. Book excerpt: One of the most remarkable collections of letters to come out of the American Civil War is this compilation by the Woolsey family. Educated, aware, and closely affectionate, the family exchanged and kept letters throughout the war. Included in the set are those from family members serving in hospitals, taking collections for soldiers at home, and a soldier serving on the front lines with Grant, Sheridan, and Meade. What was life like for those who watched their country rent by war? The desperate anxiety and despair of the early war and the hopeful expressions later on give a vivid and very human face to an event that, though long past, is still apart of who we are as Americans today. There is also humor and gossip, and an incredible awareness of what was going on in battles far from home. That the collection includes letters from various family members provides a view into Civil War life as no other. For less than you'd spend on gas going to the library, this long out-of-print volume is available as an affordable, well-formatted book for e-readers and smartphones. Available in PDF, EPUB and Kindle. Book excerpt: Military uniforms, badges, flags, and other material objects have been used to represent the identity of Americans throughout history. In The Fabric of Civil War Society, Shae Smith Cox examines the material culture of America’s bloodiest conflict, offering a deeper understanding of the war and its commemoration. Cox’s analysis traces the influence of sewn materials throughout the Civil War and Reconstruction as markers of power and authority for both the Union and the Confederacy. These textiles became cherished objects by the turn of the century, a transition seen in veterans replacing wartime uniforms with new commemorative attire and repatriating Confederate battle flags. Looking specifically at the creation of material culture by various commemoration groups, including the Grand Army of the Republic, the Woman’s Relief Corps, the United Confederate Veterans, and the United Daughters of the Confederacy, Cox reveals the ways that American society largely accepted their messages, furthering the mission of their memory work. Through the lens of material culture, Cox sheds new light on a variety of Civil War topics, including preparation for war, nuances in relationships between Native American and African American soldiers, the roles of women, and the rise of postwar memorial societies.
