This fact makes the book easily understood by young students, and saves time and thought for young housekeepers. In the outline of preliminary lessons, teachers may find a suggested order of making girls acquainted with the kitchen and its equipment. This acquaintance should be made very informally, with no attempt to cover in the first lesson more than the general and familiar kitchen furnishings and tools and their place and order. Its suggestions as to best ways of keeping a house clean and sanitary, its advice in regard to the care and preparation of wholesome foods, and its formulation of about three hundred fifty recipes are all to the point. They are, moreover, such as may be followed in all homes. Because it is easy to find elaborate recipes and difficult to secure a collection suggestive and useful to the average housekeeper, this book has embraced only that which is well within the reach of the typical American home. All directions within these covers are expressed in simple language. This fact makes the book easily understood by young students, and saves time and thought for young housekeepers. In the outline of preliminary lessons, teachers may find a suggested order of making girls acquainted with the kitchen and its equipment. To the child's endless "Why?" and "How?" she must turn a deaf ear, or she must "work up" the various subjects from newspaper or magazine articles based on encyclopædias, which are admirable epitomes of past and gone history, but most misleading and insufficient as to growing science. This little book is an endeavor on the part of the several experienced teachers to put into a form helpful to others that which they themselves have gathered with much labor. Book excerpt: Excerpt from Domestic Science: A Book for Use in Schools and for General Reading The author has endeavored to bring together, in a simple manner, such topics as have a direct bearing upon the science of domestic operations. His object has been to direct attention to daily household affairs, - affairs indeed, which to many are too common to be deemed worthy of earnest thought. The kitchen and the pantry may be made a laboratory for the elucidation of many important facts of science; and as interest is aroused in the necessary labors of the household, much of the unwelcome air of drudgery will vanish from such work. As it is plain that the duration of our mortal existence permits the exploration of but a small fraction of the domain of knowledge, careful judgment should be exercised in the selection of subjects of study; the practical and utilitarian aspect of modern systems of education testifies to the wide recognition this fact has received among the people in general. In this book, no effort has been made to secure an unduly elaborate or an exhaustive treatment; a large work would be poorly adapted for class use, and much detail might discourage the general reader in his study. Liberal reference has been made to the works of recognized authorities on the subjects treated; in such cases, acknowledgment has been made in the body of the work. A few passages are reprints of articles that have appeared over the author's signature in local periodicals. Book excerpt: Excerpt from Public School Domestic Science N eminent authority says: Up to the age of sixteen even a lucid statement of principles is received by all but a few pupils as dogma. They do not and cannot in any adequate sense realize the reasoning process by which scientific conclusions are reached. They are taught not only facts but classifications and laws, and causes in relation to their effect. These are not, in the majority of cases, elaborated by the pupil. The teaching of them accordingly degenerates into a statement of facts, and the learning of them into an act of memory. Book excerpt: Excerpt from Common Things and Elementary Science in the Form of Object Lessons The object of the author in publishing this volume is to supply teachers with a manual of matter and method on Common Things and the Elements of Science, thus providing materials for courses of lessons on Elementary Science as a class subject. Three points have been kept in view in pre paring the lessons; first, the production of full and accurate information; second, the arrangement of the matter in its teaching order; and third, the indication of the method by which the ideas are to be worked out. In many cases the particular experiments to be performed, the questions to be put, and the diagrams to be used are given. It has, of course, been necessary to make a selection of subjects in each section of the book, preference, therefore, has been given to those which are likely to come under a child's notice in his daily life, the study of which will help to cultivate careful observation and intelligent inquiry; habits which will tend to make the individual exact in his statements, correct in his judgments, and useful in his future avocations. The subjects chosen embrace all those mentioned in the Code. All the lessons have been worked out from original sources; those on manufactures and minerals, from notes made while visiting factories and mines. The statistics have been taken from the latest official returns. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Elementary Household Chemistry: An Introductory d104book for Students of Home Economics The recent development of courses of instruction in Home Economics in America has created a field for textbooks pre pared to meet the special needs of this new class of students. The course in chemistry presented in this book is the outcome of several years' experience with a class of students, the ma jority of whom have had no previous instruction in the science. The text has been written with the needs of such students primarily in mind, but the hope is entertained that, with suit able omissions, it may also be found useful in the many insti tutions in which the student of household chemistry approaches the subject after a preliminary training in general chemistry. The principle which has been kept constantly in mind is to introduce the applications of chemistry to household affairs as early and as often as possible and to present only such por tions of the subject matter of theoretical chemistry as is essential to the comprehension of these applications. In this way the student's interest is enlisted and maintained a most important consideration in the teaching of an applied science. The author's thanks are due to the many friends who have taken an interest in the preparation of this volume and more particularly to Professor John Bonsall Porter of mcgill Uni versity; Mr. F. O. Farey, of the Robert W. Hunt Company, Montreal and Mr. Peter H. Walsh, Chemist of the Dominion d104ile Company, Magog, Quebec, for suggestions in regard to the chapters on fuels, soaps, and textiles, respectively; to Miss Katharine A.
