Book excerpt: A biochemist and an agronomist present the known facts - for the first time in one volume - about guar, an Old World legume. Guar is now grown in large quantities to produce guar gum, an important industrial water-soluble hydrocolloid. Guar seed has a high content of vegetable protein, and with genetic improvement, it could provide a valuable source of protein in the human diet; however, more research is required to make use of guar seed economically feasible. The guar plant has been cultivated in India and Pakistan for generations, and guar gum has been used in manufacturing in the United States and abroad since World War II. Today, guar gum is used as a friction-reducing agent in oil well drilling and mining operation; as a binding agent in the manufacturing of explosives; reconstituted tobacco, and sausage products; and as a thickener and stabilizer in cosmetics, processed cheese products, baked goods and icings, dressings and sauces, beverages, and canned meat products.

Book excerpt: "Food Colloids: Fundamentals of Formulation" describes the physico-chemical principles underlying the formulation of multi-component, multi-phase food systems. Emphasis is placed on the interfacial properties of proteins and the role of protein interactions in determining the properties of emulsions, dispersions, gels and foams. The coverage includes authoritative overviews of conceptual issues as well as descriptions of new experimental techniques and recent food colloids research findings. Specific topics include atomic force microscopy, aggregation phenomena, coalescence mechanisms, crystallization processes, surface rheology, protein-lipid interactions and mixed biopooymer systems. This book provides essential new material for those active in the field and is suitable for postgraduates and researchers, both in industry and academia.

Book Synopsis Achieving sustainable production of poultry meat Volume 1 by : Steven C. Ricke
Download or read book Achieving sustainable production of poultry meat Volume 1 written by Steven C. Ricke and published by Burleigh Dodds Science Publishing. This book was released on 2017-01-01 with total page 503 pages. Available in PDF, EPUB and Kindle. Book excerpt: To meet growing demand, the FAO has estimated that world poultry production needs to grow by 2-3% per year to 2030. Much of the increase in output already achieved has been as a result of improvements in commercial breeds combined with rearing in more intensive production systems. However, more intensive systems and complex supply chains have increased the risk of rapid transmission of animal diseases and zoonoses. Consumer expectations of sensory and nutritional quality have never been higher. At the same time consumers are more concerned about the environmental impact of poultry production as well as animal welfare. Drawing on an international range of expertise, this book reviews research on safety, quality and sustainability issues in poultry production. Part 1 discusses risks from pathogens, detection and safety management on farms and in slaughterhouse operations. Part 2 looks at ways of enhancing the flavour, colour, texture and nutritional quality of poultry meat. Finally, the book reviews the environmental impact of poultry production. Achieving sustainable production of poultry meat Volume 1: Safety, quality and sustainability will be a standard reference for poultry and food scientists in universities, government and other research centres and companies involved in poultry production. It is accompanied by two further volumes which review poultry breeding, nutrition, health and welfare.
Book Synopsis Dietary Fiber in Health and Disease by : George V. Vahouny
Download or read book Dietary Fiber in Health and Disease written by George V. Vahouny and published by Springer Science & Business Media. This book was released on 2013-11-21 with total page 327 pages. Available in PDF, EPUB and Kindle. Book excerpt: Dietary fiber is a topic that has burgeoned from an esoteric interest of a few research laboratories to a subject of international interest. This growth has been helped by the intense public interest in the potential benefits of adding fiber to the diet. The general popularity of fiber may have been helped by the perception that, for once, medicine was saying "do" instead of "don't. " There has been a proliferation of excellent scientific books on dietary fiber. Why another? The Spring Symposium on Dietary Fiber in Health and Disease was an outgrowth of our belief that informal discussion among peers-a discussion in which fact is freely interlaced with speculation-was the most effective way to organize our knowledge and direct our thinking. The normal growth progression of a discipline inc1udes its branching into many areas. Soon the expertise, which was once general, is broken into many specialties. Intercommunication becoIlles increasingly difficult. It was our intent to provide a forum that would expose its participants to developments in areas related to their research interest. Free exchange under these conditions could not help but broaden everyone's knowl edge and expand his horizons. We feel that this symposium was singularly successful in achieving its goals. It resulted in a free and friendly exchange of knowledge and ideas. It helped to establish seeds for future collaborations based on mutual interest and friendship. The proceedings of this conference will serve as yet another basic resource in the fiber field.
