Book excerpt: Children in the United States are consuming inadequate amounts of several nutrients and the prevalence of overweight and obesity remains high at 31.7 percent. To address these concerns, nutrition science must be translated into clear, understandable recommendations for micronutrient and energy intakes that can be utilized by children and their parents. Moderate evidence indicates that school-based nutrition education interventions positively influence children's dietary behaviors. However, the effectiveness of nutrition education interventions may be influenced by a variety of factors, including: curriculum development methods; professional development models, and classroom factors like teachers' characteristics and factors of program implementation. The first objective of this research was to evaluate the use of a systematic approach and theoretical framework to develop a garden-enhanced, inquiry-based nutrition curriculum for the Shaping Healthy Choices Program (SHCP). The curriculum development team used Backward Design, a process that involves three steps: identification of learning objectives; determination of acceptable evidence of learning; and activity development. The design team met weekly and engaged in reflective practice to discuss drafts of curriculum activities. Activities were further refined using formative assessment methods during pilot-testing with 40 children. Qualitative observations were used to improve activity procedures and materials. Using a systematic, iterative process resulted in a comprehensive nutrition curriculum with a strong foundation in social cognitive theory and constructivist learning theory, and activities that have focused learning objectives that meet SHCP goals. This study has been submitted as a manuscript for peer-review. The objective of the second experiment was to evaluate the use of professional development to improve barriers to teaching nutrition in public elementary schools. Commonly reported barriers include lack of knowledge about nutrition, self-efficacy, and training. Lesson study (LS) is a professional development method demonstrated to reduce these barriers in the subjects of mathematics and science, and may be effective for nutrition education. It was hypothesized that teachers engaging in LS would improve self-efficacy and knowledge about nutrition. Eight teachers at two schools completed questionnaires at baseline and follow-up to measure changes in self-efficacy and nutrition knowledge. Using LS, teachers worked collaboratively to plan to implement SHCP activities, facilitate SHCP activities, and discuss observations of student learning to improve subsequent lessons. Differences were analyzed using paired t-tests with [alpha]=.05. There were no significant differences in self-efficacy or knowledge between baseline and follow-up, though significant differences were observed in subgroups. Teachers who reported previous experience teaching nutrition decreased self-efficacy ([mu] = -9.0 ± 6.2 P=.10) while those who reported no experience teaching nutrition increased ([mu] = 10.6 ± 4.1 P

The most recent data available show that nearly 19 percent of boys and about 15 percent of girls aged 2-19 are obese, and almost a third of U.S. children and adolescents are overweight or obese (Ogden et al., 2012). The obesity epidemic will continue to take a substantial toll on the health of Americans. In the midst of this epidemic, children are exposed to an enormous amount of commercial advertising and marketing for food. In 2009, children aged 2-11 saw an average of more than 10 television food ads per day (Powell et al., 2011). Children see and hear advertising and marketing messages for food through many other channels as well, including radio, movies, billboards, and print media. Most notably, many new digital media venues and vehicles for food marketing have emerged in recent years, including Internet-based advergames, couponing on cell phones, and marketing on social networks, and much of this advertising is invisible to parents. The marketing of high-calorie, low-nutrient foods and beverages is linked to overweight and obesity. A major 2006 report from the Institute of Medicine (IOM) documents evidence that television advertising influences the food and beverage preferences, requests, and short-term consumption of children aged 2-11 (IOM, 2006). Challenges and Opportunities for Change in Food Marketing to Children and Youth also documents a body of evidence showing an association of television advertising with the adiposity of children and adolescents aged 2-18. The report notes the prevailing pattern that food and beverage products marketed to children and youth are often high in calories, fat, sugar, and sodium; are of low nutritional value; and tend to be from food groups Americans are already overconsuming. Furthermore, marketing messages that promote nutrition, healthful foods, or physical activity are scarce (IOM, 2006). To review progress and explore opportunities for action on food and beverage marketing that targets children and youth, the IOM's Standing Committee on Childhood Obesity Prevention held a workshop in Washington, DC, on November 5, 2012, titled "New Challenges and Opportunities in Food Marketing to Children and Youth."

Book excerpt: Childhood obesity is a major public health issue putting children and adolescents at risk of chronic diseases. Obesity now affects one in five children and adolescents in the United States (CDC, 2018). Research suggests that nutrition interventions promoting food preparation skills and nutrition literacy are effective methods to reduce the rates of obesity. The purpose of this project was to implement a pilot study to assess the feasibility of an online nutrition education program that was intended for in-person instruction. The study assessed the feasibility of online platforms including Zoom and Kahoots to teach nutrition knowledge and cooking self-efficacy to Latinx adolescents in Palmdale, CA. A curriculum intended for in-person instruction was developed based on the Cooking Matters Program consisting of hands-on activities to provide participants with the knowledge and skills that can increase cooking self-efficacy. This curriculum was evaluated by three experts in the fields of nutrition and public health to determine the effectiveness to improve adolescents' nutrition knowledge and cooking self-efficacy. Subsequently, the curriculum was intended to be implemented in-person at Palmdale High School among Latinx adolescents. However, due to the closure of schools during the COVID-19 pandemic, a pilot study was implemented instead. The curriculum was modified and implemented through online instruction using Zoom as the method for instruction of nutrition lessons and Kahoots to administer a pre/post-test to determine changes in nutrition knowledge and cooking self-efficacy. The study also included social media to appeal to the tech savvy adolescents by incorporating the TikTok application. Participants created TikTok cooking videos to demonstrate the nutrition knowledge and cooking skills learned to promote healthy eating via social media. Results from the curriculum evaluation suggest that the curriculum content and activities are appropriate for adolescents. Results from the pilot study suggest an online nutrition education program is feasible and can be implemented in the future to further test the entire curriculum with a larger sample of Latinx adolescents.

Although changes in knowledge alone are not enough to change behavior, most successful nutrition interventions to reduce childhood obesity include nutrition education. The purpose of this study is to understand practices that impact the effectiveness of childhood nutrition education, and to identify expert opinions of essential best practices for childhood nutrition education. A literature review was conducted to identify previously established best practices for childhood nutrition education for 6-12 year olds. Eight sources were identified, and 33 best practices were cited. Ten members of a USDA multi-state research group reviewed the best practices and edits were made according to their feedback. Three practices were added, and four were deleted. In order to understand experts’ opinions about childhood nutrition education, an interview script was developed based on the revised list of best practices. Cognitive interviews were conducted with faculty members of the University of Tennessee, Knoxville Department of Public Health Nutrition, and Extension agents. Three practices were deleted, and eight practices were combined. To ensure clarity, a second round of cognitive interviews were conducted with the same interviewees. Four practices were added during this process. A total of 23 best practices were included in the subsequent interview and ranking process. Four experts received a list of the final 23 best practices and were asked to rank the top ten best practices. Through an interview, experts were asked to provide greater detail about each of the 23 practices, explaining and describing in their own words. Emerging concepts were documented in narrative form. Experts reviewed this document to ensure that the document represented their thoughts accurately. This study found that there is great variability among the literature and experts concerning best practices for childhood nutrition education interventions. In the future, best practices for specific settings and age groups should be established and disseminated in order to improve the effectiveness of childhood nutrition education interventions.

There are detrimental physical and psychological health effects associated with childhood obesity. Society needs proven methods of delivering nutrition and physical activity education to children. The Teens Reaching Youth (TRY) 4-H model has been shown to be effective at delivering curriculum in a variety of topics. To assess the effectiveness of the TRY 4-H model at delivering nutrition and physical activity education to youth, grades third through sixth. The program's objectives were to increase youth participants' nutritional knowledge, improve youth participants' eating and fitness habits, and improve leadership and life skills of the teens involved in the TRY 4-H program. We compared three groups of youth grades third through sixth in Northern Utah. We looked at the youth's nutrition knowledge and food preferences as well as their parents/guardians' behaviors. Then two of the groups participated in a nutrition and physical activity education program. One group was taught by TRY 4-H teams and the other group was taught by adult volunteers from the community. After participating in the program, the youth's nutrition knowledge and food preferences and their parents/guardians' behaviors were re-assessed. The control group was unavailable for re-assessment due to limited access. Teen leadership was assessed using a teen leadership and life skills assessment tool. At baseline, the three samples had no statistical differences. The TRY 4-H treatment and Adult Volunteer treatment were found to produce statistically similar nutrition knowledge out-comes. Parents/guardians reported improvements in youth participant nutrition and physical activity habits. Teen members of the TRY teams experienced an increase in leadership and life skills. Teens from the TRY 4-H program are as effective as adult volunteers at teaching younger youth about nutrition. This education delivery method should be utilized in additional communities to aid in the fight against childhood obesity.

Book excerpt: Schools are an attractive entry point to improve children's diets, as their eating habits can be shaped during childhood and the information disseminated from school can reach adults through children. We implemented a cluster-randomized trial in 12 schools in peri-urban Viet Nam to assess if two school-based interventions increased knowledge of healthy diets among children and their parents, as well as children's consumption of healthy foods. First, children were given lessons about food before school lunch and encouraged to share the lessons with their parents. Second, children were provided with healthy snacks for five weeks to reinforce messages about healthy eating. We found that in the short term, the nutrition lessons raised the knowledge index score of the children by 0.35 standard deviation. After six months, this intervention retained its effectiveness only for the children who also received free access to fruit, emphasizing the linkage between knowledge and practice. By itself, free access to fruit at school increased the children's daily fruit consumption by half a portion, but not at the expense of home fruit consumption. Access to healthy foods at school can therefore be an effective measure to raise children's healthy consumption. Child-parent communication was not a reliable channel for knowledge dissemination in our setting.
