Analysiert werden dazu Lebensmittel sowie der Einfluss auf das Klima inklusive deren Kohlendioxid-(CO2-)Emissionen. Anhand der Ergebnisse kann das derzeitige Angebot der Gemeinschaftsverpflegung angepasst werden. Dass der Klimawandel und damit einhergehend die Klimakrise allgegenwärtig ist, wird mehr denn je in den Vordergrund gerückt. Unter anderem durch diverse Debatten rund um die Klimaschutzaktivistin und Begründerin der Fridays For Future (FFF)-Bewegung Greta Thunberg. Die Klimakrise stellt die Weltbevölkerung aktuell vor große Herausforderungen. Dabei spielt unsere Ernährung eine fundamentale Rolle. Um den Herausforderungen des Klimawandels begegnen zu können, muss zunächst sichergestellt werden, dass die erforderliche Menge an Nahrungsmitteln - unter Berücksichtigung der Endlichkeit der Ressourcen und im Hinblick auf den Schutz der Biodiversität - produziert werden kann. Was wiederum einen gesellschaftlichen Wandel der Konsumgewohnheiten bedingt, um letztendlich allen Kreaturen unseres Planeten ein gesundes Dasein ermöglichen zu können. Diese zentralen Fakten sind Teile der im Jahre 2015 auf der Generalversammlung der Vereinten Nationen (VN) verabschiedeten 17 Sustainable Development Goals (SDGs). Die SDGs sollen eine nachhaltige Entwicklung sicherstellen. In diesem Kontext wird synonym von der Agenda 2030 gesprochen. Insbesondere der Klimaschutz bzw. die Klimagerechtigkeit, deutlich im Pariser Klimaschutzabkommen (2015) und im Kyoto-Protokoll (1997) festgehalten, sind hierbei von besonderer Bedeutung. Allen voran das Thema Ernährung, welches sich in allen 17 SDGs wiederfindet. Herausfordernd wirken dabei die Anforderungen an städtische Kommunen in ihrer Funktion als Träger von Einrichtungen mit Verpflegung, wie z. B. Hochschulen, Hospitale, Schulen und Kitas, um eine ausreichende und nachhaltige Versorgung mit Lebensmitteln gewährleisten zu können. All jene Institutionen - betrachtet im Mikrokosmos Stadt - sollen ihren Teil zu einer weitestgehend klimaneutralen und gesunden Ernährung in der Gemeinschaftsverpflegung beitragen.
