The school environment is ideal for teaching young children about improving healthy eating habits because large numbers of students can be targeted in a cost effective manner, and instruction is a natural part of the school day. Previous literature in the area of prevention and health promotion indicates that the provision of information alone does not effectuate positive behavioral change. Therefore, instructional practices should be supplemented with strategies that promote behavioral change. The purpose of this study was to conduct an outcome evaluation of a classroom-based nutrition education program with African-American students living in an urban environment. The Every Day, Lots of Ways: Interdisciplinary Nutrition Curriculum (EDLW; Pennsylvania Department of Education, 1996) was used to instruct students in nutrition education. The classroom lessons were reinforced with behavior change strategies during lunchtime for kindergartners and first graders. Additionally, caregiver newsletters were sent home to inform parents about nutrition messages that promote healthy life styles. Program acceptability, implementation integrity, and efficacy were examined. Students who participated in the school-based nutrition program demonstrated significant gains in knowledge relative to baseline and to control participants. Behavior change was more difficult to impact; however, interesting eating behavior changes were noted among kindergarten and first graders. The curriculum was acceptable to students, teachers, and parents. Teachers implemented the program with an acceptable degree of integrity. Finally, caregiver newsletters used to supplement the school-based activities were well received by the caregivers; however, they did not significantly impact caregivers' knowledge, nutrition attitudes or food preparation behaviors. Alternative strategies to include caregivers through partnerships in school-based health promotion programming were discussed.

Nebraska was selected to provide Congress, OMB, federal oversight agencies, and advocacy groups with a comprehensive assessment of their Nutrition Education and Training (NET) Program's impact because sufficient implementation had occurred to evaluate the effects on students, teachers, and food service workers. Findings indicated that: teacher preparation usually took more time than expected; cooperation between teachers and food service personnel was not as good as anticipated; and the curriculum materials had mixed effects. Nutrition knowledge did increase for grades 1-3 and 4-6; food attitudes were not altered. Food preference for vegetables increased for students in grades 1-3; this was not so for grades 4-6. Book excerpt: Growing Strong Bodies and Minds curriculum is a nutrition education program for pre-kindergarten through second grade children that integrates nutrition messages into literacy curriculum (Hildebrand et al., 2009). While the curriculum meets the needs of classroom teachers in teaching core literacy competencies it has not been evaluated for effectiveness in increasing knowledge of food groups in this young age group. Concept mapping has been used in assessing students' learning without requiring the student to read or write. The purpose of this study was to determine the efficacy of Growing Strong Bodies and Minds curriculum to increase knowledge of food groups in pre-kindergarten through second grade. Trained teachers and student teachers in a rural area elementary school taught the curriculum and assessed learning with concept maps. Six classrooms consisting of 149 children divided into 39 groups participated in the study. Teachers completed concept maps with each group asking what types of foods students would choose for lunch before and after teaching the curriculum. Hierarchical Structure Scores (HSS) were calculated by adding depth and width of each map. A change variable for depth, width, and HSS was computed by subtracting the pre from post score. Differences in change scores were assessed using a repeated measures ANOVA and Tukey post hoc. A paired sample t-test was conducted to compare pre and post depth, width and HSS within each grade. A Wilcoxon Signed Rank non-parametric analysis was also conducted. The ANOVA indicated a difference in depth with first grade being significantly different from pre-kindergarten and second grade. The paired sample t-test and Wilcoxon Signed Rank tests confirmed the increase in first grade depth scores. However, mean depth changes in pre-kindergarten, kindergarten, and second grade were not significant. Furthermore, mean width changes and mean HSS changes for all grades were not significant. Further research is needed to understand why knowledge changes occurred in the first grade but not in any other grade.

Though the health of Americans has improved in many broad areas for decades, increases in obesity could erode these and future improvements. The IOM report Accelerating Progress in Obesity Prevention: Solving the Weight of the Nation recognized the importance of the school environment in addressing the epidemic and recommended making schools a focal point for obesity prevention. The development and implementation of K-12 nutrition benchmarks, guides, or standards (for a discussion of these terms, see the next section of this chapter) would constitute a critical step in achieving this recommendation. National nutrition education curriculum standards could have a variety of benefits, including the following: Improving the consistency and effectiveness of nutrition education in schools; Preparing and training teachers and other education staff to help them provide effective nutrition education; Assisting colleges and universities in the development of courses in nutrition as part of teacher certification and in updating methods courses on how to integrate nutrition education in subject-matter areas in the classroom and in materials; and Establishing a framework for future collaborative efforts and partnerships to improve nutrition education. Nutrition Education in the K-12 Curriculum: The Role of National Standards is a summary of the workshop's presentations and discussions prepared from the workshop transcript and slides. This summary presents recommendations made by individual speakers.

Book excerpt: BACKGROUND: Over 12.5 million children and adolescents are obese in the United States (Nowak, Kolouch, Schneyer, & Roberts, 2012). Only 7% of youth are currently consuming the recommended daily amounts of fruits and vegetables (Krebs-Smith & Cook, 1996). Children are required to receive some sort of schooling, thus schools are utilized as a prime location in the United States for nutrition and health education. It has been found that exposure to and knowledge about food items, such as fruits and vegetables, results with increased intake (Ohri-Vachaspati, Turner, & Chaloupka, 2012). OBJECTIVE: The purpose of this study was to determine the effects of a nutrition education intervention with a school garden on kindergarten students' attitude and knowledge about fruits and vegetables. EXPERIMENTAL DESIGN: A five-week quasi-experimental study design was used. Three kindergarten classrooms from the same school participated in the study: a control, an education only, and an education with a garden. A total of 62 kindergarten students made up the convenience sample for this study. The study was conducted during April and May of 2013 at Parrish Elementary School in Carbondale, Illinois. The intervention classrooms experienced a half hour nutrition education intervention twice a week, for five weeks. The intervention lessons were based on the Fresh from the Farm curriculum, specifically for the first grade population. The classroom with the garden had an additional hour throughout the week to work and explore a growing garden. The students were given a Nutrition Knowledge Questionnaire for baseline measurement and again after the five week intervention. The students' attitude was measured using a three-point hedonic scale, while nutrition knowledge was measured using three separate matching exercises: fruits and vegetables to color, nutrients, and body parts.MAIN OUTCOME MEASURE: Independent Variables: Demographics, Nutrition Education Intervention.
