He oversaw the preparation of meals for several Cardinals and was such a master of his profession that he became the personal cook for two Popes. At the culmination of his prolific career he compiled the largest cookery treatise of the period to instruct an apprentice on the full craft of fine cuisine, its methods, ingredients, and recipes. Accompanying his book was a set of unique and precious engravings that show the ideal kitchen of his day, its operations and myriad utensils, and are exquisitely reproduced in this volume. Scappi's Opera presents more than one thousand recipes along with menus that comprise up to a hundred dishes, while also commenting on a cook's responsibilities. Scappi also included a fascinating account of a pope's funeral and the complex procedures for feeding the cardinals during the ensuing conclave. His recipes inherit medieval culinary customs, but also anticipate modern Italian cookery with a segment of 230 recipes for pastry of plain and flaky dough (torte, ciambelle, pastizzi, crostate) and pasta (tortellini, tagliatelli, struffoli, ravioli, pizza). Terence Scully presents the first English translation of the work. His aim is to make the recipes and the broad experience of this sophisticated papal cook accessible to a modern English audience interested in the culinary expertise and gastronomic refinement within the most civilized niche of Renaissance society.

It then turns to the late modernist artist and poet David Jones considering his use of the graphic and plastic arts in The Anathemata, and next, to the underappreciated mid-century poet F.T. Prince, whose work uncannily re-activates Michelangelo's poetry and sculpture. The second half of the book explores the collaborations of the canonical poet Ted Hughes with the publisher and artist Leonard Baskin during the 1970s; the innovative late twentieth-century poetry of Denise Riley who uses page space and embodied sound as a form of address; and, finally, the contemporary poet Paul Muldoon who has collaborated with photographers and artists, as well as ventriloquising nonhuman phenomena. The resulting unique study offers contemporary writers and readers a new understanding of literary, artistic, and nonhuman practices and shows the cultural importance of engaging with their messy co-dependencies. The story he tells covers most of Europe, with Frankfurt and its Fair as the hub of intellectual exchanges among scholars and of commercial dealings among publishers. The three major religious confessions jostled for position there, and this rivalry affected nearly all aspects of learning. Few scholars were exempt from religious or financial pressures. Maclean’s chosen example is the literary agent and representative of international Calvinism, Melchior Goldast von Haiminsfeld, whose activities included opportunistic involvement in the political disputes of the day. Maclean surveys the predicament of underfunded authors, the activities of greedy publishing entrepreneurs, the fitful interventions of regimes of censorship and licensing, and the struggles faced by sellers and buyers to achieve their ends in an increasingly overheated market. The story ends with an account of the dramatic decline of the scholarly book trade in the 1620s, and the connivance of humanist scholars in the values of the commercial world through which they aspired to international recognition. Their fate invites comparison with today’s writers of learned books, as they too come to terms with new technologies and changing academic environments.
