Book excerpt: The fundamental side of this book covers general aspects of stability, interfacial adsorption mechanisms, interfacial rheology, direct measurements of surface forces and the bulk rheological properties of emulsions, and self-diffusion properties as measured by NMR. The applications side covers the fields of food, crude oil and pharmaceutical emulsions. A central topic in the study of food emulsions is the role played by proteins at the water/oil interface, their conformations, and the mechanism by which they can be replaced at the interface (competitive adsorption).

Book excerpt: Theory and Practice of Emulsion Technology covers the proceedings of the Theory and Practice of Emulsion Technology Symposium, held at Brunel University on September 16-18, 1974. This book is organized into four sessions encompassing 19 chapters. The opening session deals with the emulsification process and emulsion polymerization, as well as the adsorption behavior of polyelectrolyte-stabilized emulsions. The following session examines the rheological properties, stability, and fluid mechanics of emulsions. This session also looks into the role of protein conformation and crude oil-water interfacial properties in emulsion stability. The third session highlights the preparation, formation, properties, and application of bitumen emulsions. The concluding session describes the process of spontaneous emulsification; the steric emulsion stabilization; the interfacial measurements of oil-in-water emulsions; and the influence of the disperse phase on emulsion stability. This book will be of value to chemists, chemical and process engineers, and researchers.

They have unique chemical properties covering a wide range of applications from environmental technologies to foodstuffs. In this book, authors discuss the preparation of O/W emulsions and their implications in environmental and food problems, covering hot topics including the composition and spill behavior of diluted bitumens, the use of O/W emulsions as platforms for the synthesis of waterborne particles, new methods to separate oil from water in oily wastewater, emerging technologies for the preparation of O/W emulsions, control of the oxidative status of lipids in oil by employing antioxidants to minimize lipid oxidation, parameters affecting O/W microbial stability and environmental issues and evaluation of interfacial barriers created by emulsifiers"--

Available in PDF, EPUB and Kindle. Book excerpt: A key factor in hydrate risk management for an oil-governing system is the stability of the emulsified water with gas hydrate formation. The kinetics of formation of cyclopentane hydrates is investigated in a water-in-oil emulsion using differential scanning calorimetry with the effect of surfactant Span 80. In a classical DSC experiment, an emulsion sample is subjected to a regular cooling and heating cycle between temperatures that include freezing and melting of the dispersed droplets. New phase equilibrium data of (cyclopentane hydrate + water = 60:40) emulsions, in the concentration range from 0.1 to 2% of Span 80, is determined at atmospheric pressure (101.325 kPa). Requirements for thermodynamic validity of the equilibrium temperatures measured by this technique are investigated and discussed in details. Also emulsion droplet size measurements are conducted using optical microscope. The thermal behavior of hydrate emulsions is coupled with droplet size measurement to understand effect of surface active agent (Span 80) on hydrate growth. These results confirm the interesting perspectives of application of this technique in the field of gas hydrate.

Available in PDF, EPUB and Kindle. Book excerpt: The formation of water in the crude oil emulsion is the most important because it increases the volume and viscosity of the emulsion and adversely affects the recovery and clean up. Hence, it is important to understand the processes involved in formation and breaking of w/o emulsions. The objectives of this study are to stabilize the water-in-crude oil emulsions and to study the rheology of water-in-crude oil emulsions. In this study, the w/o emulsions is prepared into three volume ratios (50-50% w/o, 30-70% w/o and 20-80% w/o) by using two types of crude oil (Kuwait and Dubai) with four different surfactants (SDDS, Triton-X-100, Tween-80 and Span-80). The w/o emulsions was stabilized, then characteristics of the emulsions were measured by using Rheometer and tensiometer. The results show that the indicator for the w/o emulsions stability is the volume water separated. Besides, the stability of the emulsions is influenced by their characteristics. It found that emulsion stability decreases with increasing volume fraction. The effective viscosity of water-in-oil emulsions depends mainly on the volume fraction of dispersed phase and temperature, along with several minor effects, such as shear rate, shear stress and viscosity of oil.
