Book excerpt: As someone who was trained in the clinical sdentific tradition it took me several years to start to appreciate that food was more than a collection of nutrients, and that most people did not make their choices of what to eat on the biologically rational basis of nutritional composition. This realiza tion helped tobring me to an understanding of why people didn't always eat what (I believed) was good for them, and why the patients I had seen in hospital as often as not had failed to follow the dietary advice I had so confidently given. When I entered the field of health education I quickly discovered the farnaus World Health Organization definition of health as being a state of complete physical, mental and social well-being, and not merely the absence of disease. Health was a triangle -and I had been guilty of virtu ally ignoring two sides of that triangle. As I became involved in practical nutrition education initiatives the deficiencies of an approach based on giving information about nutrition and physical health became more and more apparent. The children whom I saw in schools knew exactly what to say when asked to describe a nutritious diet: they could recite the food guide and list rich sources of vitamins and minerals; but none of this intellectual knowledge was reflected in their own actual eating habits.

Book excerpt: These reminiscences are an intimate account of Mila Rechcgls saga, his fascinating life, his varied and successful professional career, and his highly visible public life, encompassing some fifty years, since the earliest childhood in a small hamlet in northeastern rural Bohemia to his government career in the Worlds Capital, Washington, DC and spending his retirement years in active scholarship and voluntary work for non-profit organizations. He views his life as a chess game, in which he confronts various challenges head-on, usually ending with a checkmate in his favor. He describes his idyllic youth at family mill, in an area known as Bohemian paradise, talks fondly of his parents and grandparents, the time he spent in a one-class rural school, followed by eight years in gymnasium in Mlada Boleslav, four during the Nazi occupation of Czechoslovakia and four in the post-War era under the communist threat. After successful escape from communist Czechoslovakia, he immigrates to America, spending his greenhorn years in New York City, working in a glass jewelry factory. He gets a scholarship, is accepted by a prestigious Ivy League school (Cornell) and with skimpy English manages getting his bachelors degree in biochemistry in two and half years, followed by Masters and Ph.D. Gets hired by the National Institutes of Health in Bethesda where he conducts some pioneering research on enzyme turnover and later is offered training in science policy and administration, leading to his appointment as Special Assistant for Nutrition and Health, and later is put in charge of research at the US State Departments Agency for International Development. Beyond the call of duty, he publishes numerous books and in his spare time, devotes energies to organizing an international Czechoslovak Society of Arts and Sciences into a first-class institution and does premier research on immigration history.

Available in PDF, EPUB and Kindle. Book excerpt: The first book bearing the title of this volume, Inorganic Plant Nutrition, was written by D. R. HOAGLAND of the University of California at Berkeley. As indicated by its extended title, Lectures on the Inorganic Nutrition of Plants, it is a collection of lectures - the JOHN M. PRATHER lectures, which he was invited in 1942 to give. at Harvard University and presented there between April 10 and 23 of that year - 41 years before the publication of the present volume. They were not "originally intended for publication" but fortunately HOAGLAND was persuaded to publish them; the book appeared in 1944. It might at first blush seem inappropriate to draw comparisons between a book embodying a set of lectures by a single author and an encyclopedic volume with no less than 37 contributors. But HOAGLAND'S book was a compre hensive account of the state of this science in his time, as the present volume is for ours. It was then still possible for one person, at least for a person of HOAGLAND'S intellectual breadth and catholicity of interests, to encompass many major areas of the entire field, from the soil substrate to the metabolic roles of nitrogen, potassium, and other nutrients, and from basic scientific topics to the application of plant nutritional research in solving problems encountered in the field.

Book excerpt: In the history of the International Plant Nutrition Colloquium from its first meeting in 1954, this meeting, the 13th Colloquium, is the first to be held in Asia and will be the last in the 20th century. The 20th century has seen huge changes in the number and activities of mankind. Our population has increased from around 1. 7 billion to more than 5. 8 billion and technological innovations have completely altered our way of living. As a consequence of such rapid change, we are facing many problems including changes in our environment of a global scale. But, while food shortage has been a serious concern to mankind throughout our history, serious food shortages in the 20th century have been confined to limited times and areas. As Lester Brown discusses in this volume, farmers have increased food production heroically on demand. We, the plant nutritionists should be proud of our support to the world's farmers which has helped them make their achievement possible. During the 20th century, the science of plant nutrition also has achieved great progress as described by Jack Loneragan; it became established as a discipline firmly based in science, defined the chemical elements supporting plant growth, and has contributed to improvements in plant production and environmental quality, as readers will find in many contributions in this volume.

Book excerpt: Exactly 35 years after the first Colloquium was held, the Eleventh International Plant Nutrition Colloquium took place from 30 July to 4 August 1989 in Wageningen, The Netherlands. Although impressive progress has been made during the past decades in our understanding of the mechanisms of uptake, distribution and assimilation of nutrients in relation to crop yield and quality, there are still significant gaps in our insight into many fundamental aspects of plant mineral nutrition and related metabolic processes. In spite of improved knowledge of nutrient requirements of crops and improved fertilizer application strategies, the world population remains to be burdened with an enormous shortage of plant products for food, timber, fuel, shelter, and other purposes. The main challenge facing the plant nutrition research community is to at least alleviate the increasing world-wide need for applying scientific knowledge to practical problems in agriculture, horticulture, and forestry. It is therefore felt by many scientists that the Plant Nutrition Colloquia, which are intended to bring together scientists and to integrate knowledge and approaches acquired in plant physiology, biochemis try, soil science, agronomy and related disciplines, have indeed made a significant contribution to the advancement of our knowledge and understanding in this vital and interdisciplinary field of agrobiology. About 260 scientists from 40 nations attended the Colloquium in Wageningen.

Available in PDF, EPUB and Kindle. Book excerpt: Abstract: A biocultural approach to nutrition emphasizes the impact of the social sciences on food intake. Purchasing, preferences and ideology are heavily influenced by social, economic, political, and cultural processes. Food consumption surveys, data collection and analysis (including types of dietary surveys), the interview, statistical methods, and reliability of methods are discussed. Time and cost factors have led to new approaches in dietary assessment such as scalogram analysis, food scores, and quality indices. Widely divergent dietary patterns of Americans are discussed by ethnic group: Puerto Ricans, Black Americans, Mexican Americans, American Indians (several tribes), and Asian Americans (Chinese, Japanese, Vietnamese, Filipinos, Hawaiians). Food habit modification is complex due to a rigid structure of social values that determine behavior. Nutrition/communication specialists are needed for research activities, mass media, governmental nutrition action programs and mandated nutrition education programs. Ethics of nutrition intervention are an important concern in affecting dietary changes. Each chapter is followed by a lengthy bibliography. (rkm).
