Book excerpt: There is a good deal of effort expended by many semi-educated individuals to discredit the knowledge of calories, saying that it is a foolish food science, a fallacy, a fetish, and so forth. They reason, or rather say, that because there are no calories in some of the very vital elements of foods--the vitamines and the mineral salts--therefore it is not necessary to know about them. They further argue that their grandfathers never heard of calories and they got along all right.

Book excerpt: In this groundbreaking book Dr. Peters captures the distinct flavor of her times and place: America in the early 20th Century. This is not just a diet and health book. It is a historic artifact as well. It is a glimpse of American life when cars and phones were just becoming a part of daily life, there were no televisions and the 1920s were just beginning to Roar. Men, and even women, like Dr. Peters, were going off to war in Europe. 'Diet & Health with Keys to the Calories ' is where it all started. It is the first modern day simple and basic guide to eating right and losing weight. What was sound advise in 1918 is still sound today. It may also have been the friendly, perky, yet direct way that Dr. Peters addresses the issue of weight that earned her such a large following in the 1920s. We've taken a simple book and improved it and made it more accessible. To make it easier on the eyes we've enlarged the type (12 pt.) and used a new character font (Georgia). We didn't just scan an old book and put a new cover on it. We enlarged the book size to 6"x 9." And, we've given you additional dietary ideas in a new final chapter. We've left nothing out, nor edited Dr. Peters. She speaks for her self as she did almost a century ago. We are delighted to publish this classic book as part of our extensive Classic Library collection. Many of the books in our collection have been out of print for decades, and therefore have not been accessible to the general public. The aim of our publishing program is to facilitate rapid access to this vast reservoir of literature, and our view is that this is a significant literary work, which deserves to be brought back into print after many decades. The contents of the vast majority of titles in the Classic Library have been scanned from the original works. To ensure a high quality product, each title has been meticulously hand curated by our staff. Our philosophy has been guided by a desire to provide the reader with a book that is as close as possible to ownership of the original work. Book excerpt: Excerpt from Diet and Health: With Key to the Calories "Diet and Health, with Key to the Calories" is an entertaining and vastly instructive book by Dr. Lulu Hunt Peters. It would be worth while for every doctor to have a copy, even though the hooks designed for lay consumption. The attention of the obese is secured at the very start by the declaration that in war time it is a crime to hoard food, yet hundreds of thousands are hoarding food, and that one of the most precious of all foods. They have vast amounts of this valuable commodity stored away in their own anatomy." The point is well taken, and it ought to be considered a patriotic disgrace in these war times for any individual to exhibit or harbor undue embonpoint. While we doctors are thus preaching, let us turn a timely eye toward our own proportions. For charity begins at home and so should patriotism. Physical efficiency is a patriotic duty for men and women alike. Obesity is lese majeste. Let us be patriotically thin. And read Dr. Peters' book. Yet there are hundreds of thousands of individuals all over America who are hoarding food, and that one of the most precious of all foods! They have vast amounts of this valuable commodity stored away in their own anatomy. Now fat individuals have always been considered a joke, but you are a joke no longer. Instead of being looked upon with friendly tolerance and amusement, you are now viewed with dis-trust, suspicion, and even aversion! How dare you hoard fat when our nation needs it? You don't dare to any longer. You never wanted to be fat anyway, but you did not know how to re-duce, and it is proverbial how little you eat. Why, there is Mrs. Natty B. Slymm, who is beautifully thin, and she eats twice as much as you do, and does not gain an ounce. You know posi-tively that eating has nothing to do with it, for one time you diet-ed, didn't eat a thing but what the doctor ordered, besides your regular meals, and you actually gained. You are in despair about being anything but fat, and—! how you hate it. But cheer up. I will save you; yea, even as I have saved myself and many, many others, so will I save you. Spirituality vs. Materiality A Long, Long Battle

Available in PDF, EPUB and Kindle. Book excerpt: From the introductory note: Read This First. I am sorry I cannot devise a key by which to read this book, as well as a Key to the Calories, for sometimes you are to read the title headings and side explanations before the text. Other times you are supposed to read the text and then the headings. It really does not matter much as long as you read them both. Be sure to do that. They are clever. I wrote them myself. I have been accused of trying to catch you coming and going, because I have included in my book the right methods of gaining weight, as well as those for losing weight. But this is not the reason-though I don't object to do- ing thatJittle thing-the reason is that the lack of knowledge of foods is the foundation for both overweight and underweight. I did want my publishers to get this out in a cheaper edition, thinking that more people could have it, and thus it would be doing more good; but they have convinced me that that idea was a false claim of my mortal mind, and that the more you paid for it, the more you would appreciate it. I have received many times, and without grumbling on my part, ten dollars for the same advice given in my office. Perhaps on this line of reasoning we should have ten dollars for the book. Those of you who think so may send the balance on through my publishers.

Book excerpt: New York Times Bestseller What happens when you eat an apple? The answer is vastly more complex than you imagine. Every apple contains thousands of antioxidants whose names, beyond a few like vitamin C, are unfamiliar to us, and each of these powerful chemicals has the potential to play an important role in supporting our health. They impact thousands upon thousands of metabolic reactions inside the human body. But calculating the specific influence of each of these chemicals isn't nearly sufficient to explain the effect of the apple as a whole. Because almost every chemical can affect every other chemical, there is an almost infinite number of possible biological consequences. And that's just from an apple. Nutritional science, long stuck in a reductionist mindset, is at the cusp of a revolution. The traditional “gold standard" of nutrition research has been to study one chemical at a time in an attempt to determine its particular impact on the human body. These sorts of studies are helpful to food companies trying to prove there is a chemical in milk or pre-packaged dinners that is “good" for us, but they provide little insight into the complexity of what actually happens in our bodies or how those chemicals contribute to our health. In The China Study, T. Colin Campbell (alongside his son, Thomas M. Campbell) revolutionized the way we think about our food with the evidence that a whole food, plant-based diet is the healthiest way to eat. Now, in Whole, he explains the science behind that evidence, the ways our current scientific paradigm ignores the fascinating complexity of the human body, and why, if we have such overwhelming evidence that everything we think we know about nutrition is wrong, our eating habits haven't changed. Whole is an eye-opening, paradigm-changing journey through cutting-edge thinking on nutrition, a scientific tour de force with powerful implications for our health and for our world.

Book excerpt: There is only one concept to grasp and only one action to take: Eat more living food than dead food. The simplicity of this message has eluded people up to now. In fact, it may seem oversimplified. Because of past frustrations and disappointments, people have come to believe that losing weight is complicated, difficult and expensive. Truth be told, all that is required to reap the myriad benefits of Harvey Diamond's program is to return to the fundamentals of life. The human body is intelligent and capable beyond anyone's comprehension, but in order to unleash this extraordinary intelligence-including that which normalizes body weight-the proper fuel is required. That fuel is living food. But for some inexplicable reason, people have allowed themselves to believe that they can give their bodies the wrong fuel and then have it operate at optimum efficiency. And that is why most people become overweight. This book offers not a diet, but a lifelong way of eating that allows the eating experience to remain a joyous one, rather than a clinical endeavor of measuring portions, counting calories, calculating grams of fat, carbohydrates and protein, or ingesting meal replacements. It teaches readers how to eat any food in the most healthful way so there is no feeling of deprivation. As readers embark on this life-changing journey, they will experience the surge of energy and well-being that only comes as the automatic result of properly fueling their bodies. Providing deliberate, gentle and forgiving guidance every step of the way, this book will become readers' trusted source and companion as they create a new way of eating and living, which will lead to both overweight and poor health becoming conditions of the past.
