Farrington of the department of dairy husbandry at the University of Wisconsin asks his class of farm boys at the end of each term this question, "What languages do you speak besides English?" One boy answered, "I can speak a little Norwegian and a little German, and I understand horses and cows." That is the very object in writing this book. We want to make the language of cows a little better understood by the dairymen of this country. To know about cows, the farms and the best farm practices in different parts of our great country will make a man a better farmer on his own farm. With the reading of this book we hope that farmers may have their vision broadened and perhaps a suggestion will be found that will change a practice so that a little more money may be made and saved. At the time of writing this preface farming is said to be in a bad way. The lawmakers and the others are all busy trying to help the farmer. Some good will come of their efforts. We think, however, that the most good will come through the efforts of the farmer himself. He will build for himself on his own farm and will build for himself and for his neighbors when he joins with them in the community and state enterprises which he will help to build, at the foundation first, in his own community. Co-operative effort will make for "better farming, better business and better living." The dairy farmer is the best off of all. Conditions in Wisconsin and New York and the other dairy states show that. This is no time for anything but optimism because the demand for milk and dairy products is growing and the market for these is the foundation of the business. With the market for milk and dairy products becoming increasingly good the market for surplus dairy cattle will become better. The object in writing this book is to help some with all this. Breeders and dairymen appreciated that nothing of this sort had ever before been prepared for their benefit - a series of practical articles giving explicit directions on the important question of how to feed their dairy cows most efficiently and most economically. In addition, it was written not only from the standpoint of the ordinary dairyman, but from the point of view of the Holstein breeder as well - the breeder who is anxious to make the most of his opportunities. In short, the book of Savage articles comprised the most complete, understandable and up-to-the-minute text-book of Holstein feeding information ever put together. The first edition was quickly snapped up by the breeders, and likewise by agricultural colleges and schools, who bought these books in quantity for text-book use. In view of this enthusiastic reception, backing up our judgment in the matter, we are issuing a third edition, revised and brought down to date. The entire subject of feeding dairy cattle, as handled by Professor Savage, is based upon actual methods in use by successful dairymen. This book differs from the ordinary text-book in the important respect that every theory is made to deliver the goods in actual practice before it is accepted. Professor Savage is recognized as an authority on feeding matters. His ideas have proven successful not only in his own experience, but in the hands of dairymen and breeders who have put them into practice. He is in charge of the foundation courses in Feeds and Feeding at Cornell University, and has done considerable experimental and research work in feeding in that institution. Several cows with records of 30 to 35 pounds have been bred and developed in the university herd, and one of these cows, Glista Ernestine, has made seven different 30-pound records. The handling of these cows forms the basis of an interesting chapter in this book. The details of the care and feed of a number of the leading producers, in both short and longtime tests, as given by the men in actual charge, form the basis of other chapters, invaluable to the man who is interested in getting the greatest possible returns from his test work. Altogether we can commend this book to our Holstein friends in full confidence that its careful study will result in added knowledge of the subject of feeding that will be of practical service to them in their business as Holstein breeders and dairymen. Book excerpt: Excerpt from The Dairy Industry in Missouri and Kansas Not many years ago it was assumed that New England and New York, with perhaps a part of Ohio added, would be able to supply the American demand for dairy products. It was thought that dairying would be mainly confined to the territory indicated, notwithstanding the growth of other sections, because the conditions in the West and South, generally, were deemed so unsuited to this industry as to prevent its extension in those directions. The development of the commercial and manufacturing interests of the East made it soon apparent, however, that the farmers of that region could not supply the demands of its teeming population for food products. Meanwhile emigrants from the Eastern States pushed westward, located in the wooded lands of Ohio and Indiana and on the prairies of Illinois, and then crossed the Mississippi to occupy the fertile lands of the great agricultural basin which includes the States of Missouri and Kansas. Cows came with the settlers and found the natural pasturage and other conditions very favorable to stock raising and milk production. Dairy cattle rapidly increased, and the farmers soon had before them the problem of how to utilize their surplus milk. Eastern demand for butter and cheese was found to increase about as fast, and the recognized "dairy belt" was gradually extended to include Ohio, Indiana, Illinois, Michigan, Wisconsin, and Iowa. It was still maintained that south and west of these States dairying could not be successfully pursued. These views were also destined soon to be proved erroneous. It is now safe to assert that a territory of nearly 100,000,000 acres within the limits of Kansas and Missouri offers as great possibilities for dairying as any equal area on the globe. Such possibilities can only become realities through the abandonment of many ideas as to what were once regarded essentials in dairying, as, for example, that flowing spring water and a reliable supply of ice must be had on every dairy farm; that dairying can be made profitable only with permanent pastures and cultivated grasses, and that the dairyman must be near the consuming market. They are now found in every civilised portion of the world, and in some portions which can hardly be regarded as civilised. The Shorthorn seems to be the Englishman's shadow - it follows him everywhere. In all countries, if properly cared for, Shorthorns are found to do well. Other breeds, notably the Herefords, have been introduced and extensively bred in other countries, and they too are found to prosper, without such minute care, under the new conditions; while their distinguishing characteristics, being to all intents and purposes stamped with the principle of permanence, so far as such matters can become permanent, do not change in any marked degree. Yet it is probable that foreign soils and climates will modify them somewhat in course of time. Not the least of the merits which English breeds of cattle carry with them to foreign countries is their prepotency - their ability to stamp in a marked manner their own qualities on the offspring of any of the native breeds With which they are intercrossed in such foreign countries; and in this way they are modifying the cattle of the rest of the world in a degree analogous to that in which Englishmen are modifying its manners and institutions.
