Book Synopsis Food Safety Management by : Ewen C.D. Todd
Download or read book Food Safety Management written by Ewen C.D. Todd and published by Elsevier Inc. Chapters. This book was released on 2013-11-01 with total page 1192 pages. Available in PDF, EPUB and Kindle. Book excerpt: Outbreaks involving infected food workers in foodservice settings have resulted in many cases and deaths. Multiple-ingredient foods are most frequently associated with such outbreaks, probably because of frequent hand contact during preparation and serving. Many of the workers are asymptomatic shedders, are in contact with ill family members, handle raw foods of animal origin or use improper hygienic practices. Stools of infected persons can carry billions of pathogens and many of these become deposited on hands following defecation. Exclusion policies for food workers have limitations because of the difficulty in detecting pathogens periodically excreted in stools. Thus, barriers to contamination of food by workers include an appropriate flow of raw food to processed food in food operations, and the use of food shields, gloves, utensils and proper hand hygiene. Unfortunately, compliance with hand washing is not ideal, but can be improved through training and employee motivation. Most importantly is the culture of the organization to which the worker belongs and the knowledge, task modeling and oversight by the local person in charge.

Download or read book Hobbs' Food Poisoning and Food Hygiene, Seventh Edition written by Jim McLauchlin and published by CRC Press. This book was released on 2007-06-29 with total page 433 pages. Available in PDF, EPUB and Kindle. Book excerpt: This unique textbook takes a holistic approach to food poisoning and food hygiene, explaining in clear and non-technical language the causes of food poisoning with practical examples from 'real-life' outbreaks. Now in its seventh edition, the book retains its longstanding clarity, while being completely revised and updated by a new team of editors and contributing authors. Hobbs' Food Poisoning and Food Hygiene gives the reader a practical and general introduction to the relevant micro-organisms that affect food in relation to food safety and foodborne illness. Emphasis is given to the main aspects of hygiene necessary for the production, preparation, sale and service of safe food. Information about the behaviour of microbiological agents in various foods, their ability to produce toxins and the means by which harmful organisms reach food is applied to manufacture and retail procedures, and to equipment and kitchen design. For the first time the book includes coverage of waterborne infections and sewage and, through judicious selection of case examples, indicates the global nature of food and water hygiene today. The contribution of different professional groups to the control of food- and waterborne organisms is also recognized. This book remains an essential course text for students and lecturers dealing with food science, public health, microbiology, environmental health and the food service industry. It also serves as an invaluable handbook for professionals within the food industry, investigators, researchers in higher education and those in the retail trade.

Book Synopsis Basic Food Safety for Health Workers by : M. Adams
Download or read book Basic Food Safety for Health Workers written by M. Adams and published by . This book was released on 1999 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: A practical guide to basic principles and practices aimed at reducing the incidence of foodborne illness at both family and community levels. Addressed to health workers and their trainers, the book responds to the magnitude of health problems caused by foodborne illness, particularly in young children, the elderly, and other vulnerable groups. Although all components of food safety are covered, particular emphasis is placed on the hazards posed by the presence of pathogenic microorganisms in food. The book has seven chapters. The first introduces the problem of foodborne illness, discusses its health and economic consequences, and explains the concepts of infection intoxication and infectious dose. Chapter two focuses on foodborne hazards, gives a detailed account of the many biological, chemical, and physical hazards that can compromise food safety. Against this background, chapter three explains the processes of microbial contamination, growth, and survival as the main causes of outbreaks of foodborne illness. Particular attention is given to factors such as hygiene, temperature, time, nutrient and oxygen requirements, storage, and packaging that carry lessons relevant to safe food preparation and processing. Hazards associated with different foods are considered in the next chapter, which provides a guide to the risks posed by meat and poultry, eggs, milk and dairy products, fish and shellfish, fruits and vegetables, cereals, and bottled waters. Chapter five considers both traditional and modern industrial technologies that can prevent contamination, control microbial growth or remove or kill microorganisms in food. The remaining chapters outline the principles of good hygiene in family food preparation and mass catering, and discuss what health workers can do to alleviate the problem of foodborne illness, particularly in young children. The book concludes with an extensive table setting out basic facts about the epidemiology of over 30 foodborne illnesses.
