Available in PDF, EPUB and Kindle. Book excerpt: DANS LES ANNEES SOIXANTE, K. SHINODA FUT LE PREMIER A EXPLORER L'INFLUENCE DE LA TEMPERATURE SUR L'EMULSIFICATION. IL ETABLIT QU'UN MELANGE EAU/HUILE/TENSIOACTIF NON IONIQUE, QUI DONNE UNE EMULSION D'HUILE DANS L'EAU A TEMPERATURE AMBIANTE, S'INVERSE EN UNE EMULSION D'EAU DANS L'HUILE LORSQUE LA TEMPERATURE DEPASSE UNE TEMPERATURE SEUIL, APPELEE TEMPERATURE D'INVERSION DE PHASE. IL MONTRA ENSUITE QU'UNE AGITATION MODEREE, PRATIQUEE 2 A 4C AU-DESSOUS DE CETTE TEMPERATURE PERMET D'OBTENIR UNE EMULSION D'HUILE DANS L'EAU COMPOSEE DE GOUTTELETTES AUSSI PETITES QUE CELLES FORMEES SOUS AGITATION VIOLENTE A TEMPERATURE AMBIANTE, A CONDITION TOUTEFOIS QUE LE RETOUR A LA TEMPERATURE AMBIANTE SOIT TRES RAPIDE POUR LIMITER LE GROSSISSEMENT DES GOUTTELETTES. NOTRE CONTRIBUTION EST UNE AMELIORATION RAISONNEE DU TRAVAIL DE K. SHINODA. DANS UN PREMIER TEMPS, GRACE A DES MESURES DE CONDUCTIVITE ELECTRIQUE, NOUS AVONS ETUDIE LES STRUCTURES QUE PRESENTENT SUCCESSIVEMENT LES MELANGES EAU/HUILE/TENSIOACTIF NON IONIQUE EN FONCTION DE LA TEMPERATURE. AUTOUR DE LA TEMPERATURE D'INVERSION DE PHASE, NOUS AVONS MIS EN EVIDENCE UNE PLAGE DE TEMPERATURES DANS LAQUELLE CETTE STRUCTURE EST BICONTINUE. DANS CETTE PLAGE LES TENSIONS INTERFACIALES SONT SUFFISAMMENT BASSES POUR PERMETTRE LA FORMATION D'UNE AIRE INTERFACIALE EAU/HUILE CONSEQUENTE. NOUS MONTRONS QU'IL EST POSSIBLE D'OPTIMISER L'ETENDUE DE CETTE AIRE EN AJUSTANT LA CONCENTRATION DU TENSIOACTIF ET LA DUREE DE SEJOUR DU SYSTEME A LA TEMPERATURE CHOISIE. NOUS VERIFIONS ENSUITE QUE LE REFROIDISSEMENT DU MELANGE BICONTINU, SOUS TRES FAIBLE AGITATION POUR CAUSE D'HOMOGENEISATION, PROVOQUE LA FRAGMENTATION DE L'HUILE EN DE TRES FINES GOUTTELETTES A LA SORTIE DE LA ZONE BICONTINUE. A PARTIR DE MESURES DE DIFFUSION QUASI-ELASTIQUE DE LA LUMIERE, NOUS TROUVONS QUE LES GOUTTELETTES FORMEES ONT DES DIAMETRES COMPRIS ENTRE 10 NM ET 70 NM. CETTE EXTREME PETITESSE EST RESPONSABLE DE LA TRANSLUCIDITE DES EMULSIONS ET DE L'AMELIORATION NOTABLE DE LEUR STABILITE PAR RAPPORT AUX EMULSIONS DE K. SHINODA. CETTE AMELIORATION PERMET UN RETOUR A VITESSE MODEREE A LA TEMPERATURE AMBIANTE SANS NUIRE A LA PETITESSE DES GOUTTELETTES. LES EMULSIONS TRANSLUCIDES SONT FACILEMENT DILUABLES DANS DES SOLUTIONS AQUEUSES. LES MESURES DE DIFFUSION QUASI-ELASTIQUE DE LA LUMIERE REVELENT QUE LE POTENTIEL D'INTERACTION DE LEURS GOUTTELETTES EST UN POTENTIEL REPULSIF DE TYPE SPHERES DURES. NOUS TROUVONS PAR AILLEURS QUE LEUR LENTE DETERIORATION EST AMORCEE PAR LA COALESCENCE DYNAMIQUE DES GOUTTELETTES QUI SONT ASSEZ PETITES POUR ETRE SENSIBLES A L'AGITATION THERMIQUE. LES TAUX DE COALESCENCE, MESURES A PARTIR DU SUIVI DE L'AUGMENTATION DE LA TAILLE DES GOUTTELETTES, SONT D'AUTANT PLUS PETITS QUE L'ENCOMBREMENT STERIQUE DES MOLECULES TENSIOACTIVES EST GRAND. LES EMULSIONS TRANSLUCIDES SE RANGENT DANS LA CATEGORIE DES SYSTEMES QUE DE PLUS EN PLUS DE SPECIALISTES APPELLENT MINIEMULSIONS. ELLES ONT UN BEL AVENIR TANT DU POINT DE VUE PRATIQUE, PAR L'AMELIORATION DE LEUR STABILITE PAR RAPPORT A CELLE DES EMULSIONS ORDINAIRES, QUE DU POINT DE VUE FONDAMENTAL, POUR L'ETUDE DE LA COALESCENCE DE PETITS OBJETS SENSIBLES A L'AGITATION THERMIQUE.

Available in PDF, EPUB and Kindle. Book excerpt: In the decades since its initial publication in German in 1978, Polychrome Sculpture has come to be widely regarded as a watershed text on the making and meaning of European medieval and Baroque painted wood sculpture. An early proponent of interdisciplinary research, Johannes Taubert played a pioneering role in combining the rigorous scientific analysis of materials with a fuller understanding of form and function, an approach that has led to the development of technical art history as practiced today. Many of the essays in this volume apply such scientific techniques as microscopic analysis to an art-historical understanding of Romanesque and late Gothic wood sculpture, revealing that, far from serving a merely decorative function, the painted surface of these works was intricately connected to their meaning. The paint layers on the sculptures, for example, which the author spent years documenting through close examination and analysis, were intended to impart a heightened sense of reality to the life-sized sculptures, thereby enhancing the viewer’s experience of worship. Taubert believed it was crucial for conservators to understand this context before undertaking any treatments. No other book offers such a focused, subtle, and interdisciplinary examination of the subject as Polychrome Sculpture. This influential work is now available in English for the first time, in a meticulous translation enhanced and updated by new color illustrations, annotations to the original text, and a new introduction.

Available in PDF, EPUB and Kindle. Book excerpt: The Second Edition of Food Process Engineering by Dr. Dennis Heldman, my former student, and co-author Paul Singh, his former student, attests to the importance of the previous edition. In the Foreword to the First Edition, I noted the need for people in all facets of the food processing industry to consider those variables of design of particular importance in engineering for the food processing field. In addition to recognizing the many variables involved in the biological food product being handled from production to consumption, the engi neer must oftentimes adapt equations developed for non-biological materials. As more and more research is done, those equations are appropriately modified to be more accurate or new equations are developed specifically for designing to process foods. This Edition updates equations used. This book serves a very important need in acquainting engineers and technologists, particularly those with a math ematics and physics background, with the information necessary to provide a more efficient design to accomplish the objectives. Of prime importance, at present and in the future, is to design for efficient use of energy. Now, it is often economical to put considerably more money into first costs for an efficient design than previously, when energy costs were a much smaller proportion of the total cost of process engineering.

Available in PDF, EPUB and Kindle. Book excerpt: Surfactant research explores the forces responsible for surfactant assembly and the critical industrial, medical, and personal applications, including viscosity control, microelectronics, drug stabilization, drug delivery, cosmetics, enhanced oil recovery, and foods. Surfactant Science and Technology: Retrospects and Prospects, "a Festschrift in honor of Dr. Kash Mittal," provides a broad perspective with chapters contributed by leaders in the fields of surfactant-based physical, organic, and materials chemistries. Many of the authors participated in a special symposium in Melbourne, Australia, honoring Kash Mittal’s 100th edited book at the 18th Surfactants in Solution (SIS) meeting. Each chapter provides an overview of a specific research area, with discussions on past, present, and future directions. The book is divided into six parts. Part I reviews the evolution of theoretical models for surfactant self-assembly, and introduces a model for interpreting ion-specific effects on aggregate properties. Part II focuses on interactions of surfactant solutions with solid supports; uses contact angles to understand hydrophobic/hydrophilic changes in a lipid layer; uses surface tension to understand molecular arrangements at interfaces; reviews spreading phenomena; discusses pattern formation on solid surfaces; and applies tensiometry to probe flavor components of espresso. Part III discusses novel DNA-based materials, multifunctional poly(amino acid)s–based graft polymers for drug delivery, and polymeric surfactants for stabilizing suspensions and emulsions. Part IV introduces farm-based biosurfactants from natural products and "greener" biosurfactants from bacteria. Part V explores lyotropic liquid crystals and their applications in triggered drug release; microemulsion properties and controlled drug release; the role of hydrotopes in formulations and in enhancing solubilization in liquid crystals; the potential of ionic liquids to generate tunable and selective reaction media; and provides an overview of stimuli-responsive surfactants. Focusing on emulsions, Part VI reviews the design of emulsion properties for various commercial applications, the role of surfactants in the oil and gas industries, and surfactant mechanisms for soil removal via microemulsions and emulsification.
