Book excerpt: This volume is the newest release in the authoritative series of quantitative estimates of nutrient intakes to be used for planning and assessing diets for healthy people. Dietary Reference Intakes (DRIs) is the newest framework for an expanded approach developed by U.S. and Canadian scientists. This book discusses in detail the role of vitamin C, vitamin E, selenium, and the carotenoids in human physiology and health. For each nutrient the committee presents what is known about how it functions in the human body, which factors may affect how it works, and how the nutrient may be related to chronic disease. Dietary Reference Intakes provides reference intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for different groups based on age and gender, along with a new reference intake, the Tolerable Upper Intake Level (UL), designed to assist an individual in knowing how much is "too much" of a nutrient.

Book excerpt: This new release presents the wealth of information gleaned about nonhuman primates nutrition since the previous edition was published in 1978. With expanded coverage of natural dietary habits, gastrointestinal anatomy and physiology, and the nutrient needs of species that have been difficult to maintain in captivity, it explores the impact on nutrition of physiological and life-stage considerations: infancy, weaning, immune function, obesity, aging, and more. The committee also discusses issues of environmental enrichment such as opportunities for foraging. Based on the world's scientific literature and input from authoritative sources, the book provides best estimates of nutrient requirements. The volume covers requirements for energy: carbohydrates, including the role of dietary fiber; proteins and amino acids; fats and fatty acids; minerals, fat-soluble and water-soluble vitamins; and water. The book also analyzes the composition of important foods and feed ingredients and offers guidelines on feed processing and diet formulation.

Book excerpt: This volume is devoted to atherosclerosis, hypertension, anddiabetes, three of the most important disease conditions in the worldtoday. Nutritional intervention, cholesterol lowering agents, lipidsthemselves, particularly oxidized LDL, protein modification byADP-ribose, bone marrow study, endothelial cell dysfunction, angiotensin, and the role of infection and inflammation are alldiscussed in the context of atherosclerotic cardiovascular disease. The hypertension section focuses on factors that may be responsiblefor high blood pressure, such as genetic predisposition, vascularhyperplasia and remodeling, insulin resistance, neurological aspectssuch as hypothalamic peptides. Also discussed are the possiblecontributions of the cellular function of the endothelium, nutrition, kidney dysfunction, leptin, and the brain. Novel routes of drugdelivery for treatment of hypertension is also a focus. As for diabetes, the risk factors and mechanisms responsible fordiabetic vascular and cardiac dysfunction are discussed. Lipid profilechanges and fibrinolysis in diabetic patients is detailed, along withadipogenesis, diabetic cardiomyopathy, energy metabolism in thediabetic heart, vanadate as an alternative to insulin, insulinresistance mechanisms, and neurotransmitters as targets for theprevention of cardiovascular disease and diabetes. These manuscripts were invited from scientists who presented state ofthe art lectures at the XVII World Congress of the InternationalSociety for Heart Research held in Winnipeg in July 2001.

Book excerpt: Handbook of Nutrition, Diet, and the Eye, Second Edition, thoroughly addresses common features and etiological factors on how dietary and nutritional factors affect the eye. The ocular system is perhaps one of the least studied organs in diet and nutrition, yet the consequences of vision loss are devastating. There are a range of ocular defects that have either their origin in nutritional deficiencies/excess or have been shown to respond favorably to nutritional components. Featuring a new section on animal model studies where both the ocular problem and dietary remedies can be varied, there are also new chapters on dietary supplements. - Serves as a foundational collection for neuroscience, neurology and nutrition researchers, illustrating the importance of nutrition and diet in eye health and function - Provides a common language for readers to discuss how nutritional factors and related diseases and syndromes affect the eye - Features new chapters on infectious diseases of the eye where nutrition is a factor - Discusses animal model studies, dietary supplements, natural dietary extracts from around the world, and age-related changes in ocular health

Available in PDF, EPUB and Kindle. Book excerpt: It is thirty years since the technique of high-yield preparation of isolated hepatocytes, by collagenase perfusion of the liver, was published. The original method described by Berry and Friend has undergone many minor modifications by other workers, and the two-step procedure introduced by Seglen in 1976 has become the most frequent way to prepare hepatocyte suspensions. An important development introduced by Bissell in 1973 was the use of the cells as the first step in monolayer culture. The availability of the isolated hepatocyte preparation as cells in suspension or culture has undoubtedly facilitated research on the liver. This was emphasised in our book, published (with Dr. Greg Barritt) in 1990, which described in detail methods of preparation and the properties of the isolated hepatocytes. It also discussed the usefulness of the preparation for the study of intermediary and xenobiotic metabolism, calcium ion transport, and the growth and differentiation of hepatocytes in culture. The book also touched briefly on a range of specialised techniques, including peri fusion, subcellular fractionation, transplantation, cryopreservation and measurement of intracellular pH. Although standard procedures for the manipulation of hepatocytes have not changed a great deal in ten years, they have undoubtedly been refined. This applies particularly to hepatocyte culture techniques, cryopreservation, and even to preparation of hepatocyte suspensions, where it is now feasible to use purified enzymes. There is also much more emphasis on the use and study of human hepatocytes, particularly in the field of pharmacology and therapeutics.

Available in PDF, EPUB and Kindle. Book excerpt: Interest in the science of exercise dates back to the time of ancient Greece. Today exercise is viewed not only as a leisurely activity but also as an effective preventive and therapeutic tool in medicine. Further biomedical studies in exercise physiology and biochemistry reports that strenuous physical exercise might cause oxidative lipid damage in various tissues. The generation of reactive oxygen species is elevated to a level that overwhelms the tissue antioxidant defense systems resulting in oxidative stress. The Handbook of Oxidants and Antioxidants in Exercise examines the different aspects of exercise-induced oxidative stress, its management, and how reactive oxygen may affect the functional capacity of various vital organs and tissues. It includes key related issues such as analytical methods, environmental factors, nutrition, aging, organ function and several pathophysiological processes. This timely publication will be of relevance to those in biomedical science and was designed to be readily understood by the general scientific audience.
