Book excerpt: Abstract: Regulations governing food service facilities in the State of Maryland as established by the State Dept. of Health and Mental Hygiene are presented. The regulations satisfy the requirements of the Maryland Food, Drug and Cosmetic Act to provide citizens with safe and wholesome foods and food products. Foods must be protected from spoilage or contamination and may be obtained only from sources complying with all laws concerning food and food labeling. Topics include the temperature, preparations, storage, display, service, transportation and toxicity of foods. Guidelines for food service personnel and food equipment and utensils are discussed. Sanitary facilities and food safety control measures are required. Enforcement provisions of these regulations provide for permits and inspections of all food service facilities operating within the state.
