Available in PDF, EPUB and Kindle. Book excerpt: Everything tastes better with bacon. One of those flavor-packed, umami-rich, secret-weapon ingredients, it has the power to elevate just about any dish, from soups to souffle ́s, braises to bread pudding. Peter Kaminsky and Marie Rama know just how to employ it. Peter is the author of both Pig Perfect—a paean to the noble swine—and, most recently, Culinary Intelligence, which argues that the healthiest way to eat is to eat less but really well. He and Marie know that adding irresistible bacon transforms an ordinary dish into an extraordinary one. Bacon Nation is a bacon-lover’s dream, a collection of 125 smoky, savory, crispy, meaty, salty, and sweetly sensuous recipes that go right through the menu. Starters like Spiced Nuts with Bacon; Bacon and Butternut Squash Galette; Bacon, Pear, and Humboldt Fog Salad. Main courses featuring meats—Brawny Bacon Beef Bourguignon, Saltimbacon; poultry—Paella with Chicken and Bacon; fish—Flaky Cod Fillets with Bacon and Wine-Braised Fennel; and pasta, including an update of the classic Roman dish Bucatini all’Amatriciana. Even dessert: Rum Ice Cream with Candied Bacon Chips and Chocolate-Peanut-Bacon Toffee. Or, as Homer Simpson would say, Mmmm, bacon.

Book excerpt: Tastemaker, n. Anyone with the power to make you eat quinoa. Kale. Spicy sriracha sauce. Honeycrisp apples. Cupcakes. These days, it seems we are constantly discovering a new food that will make us healthier, happier, or even somehow cooler. Chia seeds, after a brief life as a novelty houseplant and I Love the '80s punchline, are suddenly a superfood. Not long ago, that same distinction was held by pomegranate seeds, açai berries, and the fermented drink known as kombucha. So what happened? Did these foods suddenly cease to be healthy a few years ago? And by the way, what exactly is a “superfood” again? In this eye-opening, witty work of reportage, David Sax uncovers the world of food trends: Where they come from, how they grow, and where they end up. Traveling from the South Carolina rice plot of America's premier grain guru to Chicago's gluttonous Baconfest, Sax reveals a world of influence, money, and activism that helps decide what goes on your plate. On his journey, he meets entrepreneurs, chefs, and even data analysts who have made food trends a mission and a business. The Tastemakers is full of entertaining stories and surprising truths about what we eat, how we eat it, and why.

Book excerpt: For two decades photojournalist David Bacon has documented the connections between labor, migration, and the global economy. In Illegal People Bacon exposes the many ways globalization uproots people in Latin America and Asia, driving them to migrate. At the same time, U.S. immigration policy makes the labor of those displaced people a crime in the United States. Bacon makes his case through interviews and on-the-spot reporting both from impoverished communities abroad and from immigrant workplaces and neighborhoods here. He analyzes NAFTA's corporate tilt as a cause of displacement and migration from Mexico and shows that criminalizing immigrant labor also benefits employers. He argues that immigration and trade policy are elements of a single economic system. Bacon traces the development of illegal status back to slavery and shows the human cost of treating the indispensable labor of millions of migrants--and the migrants themselves--as illegal. Illegal People argues for a sea change in the way we think, debate, and legislate around issues of migration and globalization, promoting a human rights perspective throughout a globalized world.

Book excerpt: This is the first book-length study to consider Ricarda Huch's historical-political thought and assess Huch's place within the lively historiographical discourses of the 1920s. One of the most famous writers of her day, Huch (1864-1947) was known for her poetry, fiction, and histories of German Romanticism and the Thirty Years' War. Like many of her generation Huch was shaken by Germany's defeat in the First World War, and this shock motivated her to use her historiography to address Germany's post-war situation. Convinced that the German nation possessed an identity best expressed by the ideals of Romanticism, Huch attributed Germany's decline to the westernization of German political culture; absolutism and centralization had replaced the theoretical perfection of the decentralized early Holy Roman Empire of the German Nation. Her Weimar histories of medieval and nineteenth-century Germany urged a defeated and traumatized nation to return to a path that had been abandoned during the Wilhelmine Empire. Topics explored include Huch's use of Nietzschean monumentalism, a comparison with popular historians of the period (e.g. E. Kantorowicz), the echoes of her political thought in her poetry and fiction, and her complex relationship to German nationalism.
