Create a resource centre in your classroom and include books that include information on Fall, Turkeys, etc. Read "The First Canadian Thanksgiving", "The First American Thanksgiving", and the "Thanksgiving Today" with the students and than have discussions on the different Thanksgiving customs. You may also have the student discuss the customs practised by their families. Another big tradition for Thanksgiving is "Corn", whether it is with your meal or as a decoration on your table or door. Try to have cornstalks available for your class to observe and identify the parts of the plant. Included in the unit are matching sequences, a booklet on corn, etc.
