Book excerpt: ¡Vino! explores the history and identity of Spanish wine production from the mid-nineteenth century to today. Nineteenth-century infestations of oidium fungus and phylloxera aphids devastated French and Italian vineyards but didn't extend to the Iberian Peninsula at first, giving Spanish vintners the opportunity to increase their international sales. Once French and Italian wineries rebounded, however, Spanish wine producers had to up their game. Spain could not produce only table wine; it needed a quality product to compete with the supposedly superior French wines. After the Spanish Civil War the totalitarian Franco regime turned its attention to Spain's devastated agricultural sector, but the country's wine industry did not rebound until well after World War II. In the postwar years, it rebranded itself to compete in a more integrated European and international marketplace with the creation of a new wine identity. As European integration continued, Spanish wine producers and the tourism industry worked together to promote the uniqueness of Spain and the quality of its wines. Karl J. Trybus explores the development of Spanish wine in the context of national and global events, tracing how the wine industry has fared and ultimately prospered despite civil war, regional concerns, foreign problems, and changing tastes.

Available in PDF, EPUB and Kindle. Book excerpt: In this anthology, editors Kym Anderson and Vicente Pinilla have gathered together some of the world's leading wine economists and economic historians to examine the development of national wine industries before and during the two waves of globalization. The empirically-based chapters analyze developments in all key wine-producing and consuming countries using a common methodology to explain long-term trends and cycles in wine production, consumption, and trade. The authors cover topics such as the role of new technologies, policies, and institutions, as well as exchange rate movements, international market developments, evolutions in grape varieties, and wine quality changes. The final chapter draws on an economic model of global wine markets, to project those markets to 2025 based on various assumptions about population and income growth, real exchange rates, and other factors. All authors of the book contributed to a unique global database of annual data back to the mid-nineteenth century which has been compiled by the book editors.

Book excerpt: Announcing the completely revised and updated edition of The Wine Bible, the perennial bestselling wine book praised as “The most informative and entertaining book I’ve ever seen on the subject” (Danny Meyer), “A guide that has all the answers” (Bobby Flay), “Astounding” (Thomas Keller), and “A magnificent masterpiece of wine writing” (Kevin Zraly). Like a lively course from an expert teacher, The Wine Bible grounds the reader deeply in the fundamentals while layering on informative asides, tips, amusing anecdotes, definitions, glossaries, photos (all new for this edition), maps, labels, and recommended bottles. Karen MacNeil’s information comes directly through primary research; for this second edition she has tasted more than 10,000 wines and visited dozens of wine regions around the world. New to the book are wines of China, Japan, Mexico, and Slovenia. And through it all the reader becomes ever more informed—and, because of the author’s unique voice, always entertained: “In great years Pétrus is ravishing, elegant, and rich—Ingrid Bergman in red satin.” Or, describing a Riesling: “A laser beam. A sheet of ice. A great crackling bolt of lightning.”

Book excerpt: “This beautiful book is an amazing new window into the ingredients, the recipes, the stories of my home country.” —José Andrés In Spain, long-time Barcelona resident Jeff Koehler gathers the country’s many time-honored dishes and age-old culinary customs, and distills the Spanish table down to its essence—food that is prepared simply but full of homemade flavors, and always meant to be shared. Each chapter is an ode to Spain’s delightful kitchen, from gazpachos, salt cod, and poultry, to savory and sweet conserves. The story of the country is told through two hundred recipes from classics like Shellfish Paella, Artichoke Egg Tortilla, and creamy Flan to delicacies such as Chilled Melon Soup with Crispy Jamon and Monkfish Steaks with Saffron. Dishes from Spain’s leisurely multicourse meals and simple tapas alike celebrate seasonal ingredients: wild mushrooms, asparagus, and local game. Sidebars trace Spain’s rich culinary traditions, taking us from ancient Moorish cities to the arid fields of the Castilian countryside, and allow us to meet the people who still, with devotion, cultivate them. Accompanying these are hundreds of evocative photos of the markets, orchards, green hills, and fishing ports from which this delicious cuisine originates. Add to this a thorough glossary that includes techniques such as preparing snails, using saffron, and making perfect fish stock, as well as a helpful source list. Novices and veterans of the Spanish kitchen alike will gain a deeper understanding not only of Spain’s cuisine but of its culture. A New York Times Book Review Notable Cookbook

Book excerpt: This Palgrave Handbook offers the first international comparative study into the efficiency of the industrial organization of the global wine industry. Looking at several important vineyards of the main wine countries, the contributors analyze differences in implementation and articulation of three key stages: grape production, wine making and distribution (marketing, selling and logistics). By examining regulations, organization theory, industry organizational efficiency and vertical integration, up to date strategies in the sector are presented and appraised. Which models are most efficient? What are the most relevant factors for optimal performance? How do reputation and governance impact the industry? Should different models co-exist within the wine countries for global success? This comprehensive volume is essential reading for students, researchers and professionals in the wine industry.

Available in PDF, EPUB and Kindle. Book excerpt: The figure of the entrepreneur has become a relevant factor that explains the process of growth and economic development. Rising unemployment rates have generated among institutional and private agents, a significant interest in promoting entrepreneurship as a formula to eradicate this social scourge of unemployment. Active policies that favor business culture and initiative are being promoted in all areas. In the university world, academic research has multiplied the work on entrepreneurship, a term that includes a triple meaning: the figure of the entrepreneur, the business function and the creation of companies. This versatile meaning must be based on a consistent theory about the company and the entrepreneur. This book presents specific cases of companies and entrepreneurs that have had their role throughout the history of Spain. The intention is to show the techniques and learning acquired by those agents, which have allowed a considerable advance in the knowledge of the structure and business development. This book brings together the research carried out by its authors with primary sources and makes it accessible to a wide audience—Spanish and Latin American—and will be of value to researchers, academics, and students with an interest in Spanish entrepreneurship, business, and management history.
