Book excerpt: This study estimates the random utility function of fluid milk using 1,165 survey responses in Laos. It finds that both products' attributes and individual characteristics affect consumers' preference for the milk and the hypothetical brand of Laos-Korea has a potential compared to four real dairy products. Results also show that calories have a positive relationship with consumer's preference while the price and fat content have a negative one. The decision for choosing each brand is significantly affected by individual characteristics such as gender, age, whether or not respondents live with their children, the level of education, income, the frequency of purchasing milk per week, and the region where they live. The preference for five brands appears in the order of Foremost, Nabong, Thai-Danish, Meiji, and Lao-Korea, and probabilities of purchasing each brand at the mean level are 30.9%, 17.48%, 21.48%, 15.0% and 10.39%, respectively. Nabong that was Lao national milk brand still has a significant market power even though it was closed in 2008. The policies to promote milk industry by implementing its national milk brand again would be more effective if it focuses on the young generation, female consumers, families with children, quality of dairy products, and Vientiane capital areas.

This book was released on 2020-07-01 with total page 320 pages. Available in PDF, EPUB and Kindle. Book excerpt: Updates for many countries have made it possible to estimate hunger in the world with greater accuracy this year. In particular, newly accessible data enabled the revision of the entire series of undernourishment estimates for China back to 2000, resulting in a substantial downward shift of the series of the number of undernourished in the world. Nevertheless, the revision confirms the trend reported in past editions: the number of people affected by hunger globally has been slowly on the rise since 2014. The report also shows that the burden of malnutrition in all its forms continues to be a challenge. There has been some progress for child stunting, low birthweight and exclusive breastfeeding, but at a pace that is still too slow. Childhood overweight is not improving and adult obesity is on the rise in all regions. The report complements the usual assessment of food security and nutrition with projections of what the world may look like in 2030, if trends of the last decade continue. Projections show that the world is not on track to achieve Zero Hunger by 2030 and, despite some progress, most indicators are also not on track to meet global nutrition targets. The food security and nutritional status of the most vulnerable population groups is likely to deteriorate further due to the health and socio economic impacts of the COVID-19 pandemic. The report puts a spotlight on diet quality as a critical link between food security and nutrition. Meeting SDG 2 targets will only be possible if people have enough food to eat and if what they are eating is nutritious and affordable. The report also introduces new analysis of the cost and affordability of healthy diets around the world, by region and in different development contexts. It presents valuations of the health and climate-change costs associated with current food consumption patterns, as well as the potential cost savings if food consumption patterns were to shift towards healthy diets that include sustainability considerations. The report then concludes with a discussion of the policies and strategies to transform food systems to ensure affordable healthy diets, as part of the required efforts to end both hunger and all forms of malnutrition.

Bavin U.S. Fish and Wildlife Service Forensics Laboratory lies a rarely seen world, a CSI for wildlife, where a walk-in freezer contains carcasses and animal parts awaiting necropsies (animal autopsies); shelves and drawers hold pills, rugs, carvings, and countless other products made from parts of endangered animals; and a dedicated group of forensic scientists is responsible for victims from thirty thousand animal species. Accomplished environmental journalist Laurel A. Neme goes behind the scenes at the wildlife forensics lab -- the only crime lab of its kind -- to reveal how its forensic scientists and the agents of the U.S. Fish and Wildlife Service are working to investigate wildlife crimes, protect endangered species, and stem illegal wildlife trafficking, the third largest illegal trade in the world. In three fascinating cases -- headless walrus washed up on the shores of Alaska, black bears killed for the healing powers of their gallbladders, and gorgeous feathered headdresses secretly shipped to the United States from the Amazon -- Neme traces the USFWS's daring undercover investigations and how the scientists' innovative forensic techniques provide conclusive evidence of a crime. Throughout, she underscores the staggering international scope of the supply and demand for wildlife and animal parts. Filled with the suspense and thrilling detail of a crime novel yet driven by the all-too-real drama of a small band of scientists and investigators battling a lucrative, high-stakes underground industry, Animal Investigators is an engrossing account of crime and cutting-edge science.

Available in PDF, EPUB and Kindle. Book excerpt: A cookbook featuring 50 recipes for Thai drinking food--an entire subset of Thai cooking that is largely unknown in the United States yet boasts some of most craveable dishes in the Thai canon, inspired by Andy Ricker's decades in Thailand and his beloved restaurant, Whiskey Soda Lounge. A celebration of the thrill and spirit of Thai drinking food, Andy Ricker's follow-up to Pok Pok brings the same level of authority, with a more laid-back approach. Just as America has salted peanuts, wings, and nachos, Thailand has its own roster of craveable snacks: spicy, salty, and sour, they are perfect accompaniments for a few drinks and the company of good friends. Here, Ricker shares accessible and detailed recipes for his favorites: phat khii mao, a fiery dish known as "Drunkard's stir-fry; kai thawt, Thai-style fried chicken; and thua thawt samun phrai, an addictive combination of fried peanuts with makrut lime leaf, garlic, and chiles. Featuring stories and insights from the Thai cooks who taught Ricker along the way, this book is as fun to read as it is to cook from, and will become a modern classic for any lover of Thai cuisine.

Available in PDF, EPUB and Kindle. Book excerpt: Chuck Shaw is a vanishing breed--an old-style veterinarian with a quarter of a century of experience who runs a "mixed practice" in rural New Hampshire, treating everything from house cats to milk cows. Week after demanding week, he and his associate, horse expert Roger Osinchuk, make house calls and farm calls, and spend sleepless nights on call, to see to the well-being of patients whose only common denominator is an inability to speak. But the practice is booming, and Chuck decides to take on a third associate, Erika Bruner, fresh out of veterinary school. Whynott follows these three practitioners into the world of contemporary veterinary medicine, as a witness to memorable encounters and daily dilemmas. He watches as they play gynecologist to cows and horses, obstetrician to calves and colts, podiatrist to creatures whose feet are life and death to them. He captures the struggle to learn a difficult craft on the job, describes the confluence of skill and intuition that is the essence of diagnosis, and depicts the ongoing effort to balance the needs and desires of animals and owners without compromising his creed. A Country Practice is a vivid portrait of the rapidly changing face of an ancient profession.
