Book excerpt: This paper investigates how firms responded to standardized nutrition labels on food products required by the Nutrition Labeling and Education Act (NLEA). Using a longitudinal quasi-experimental design, we test our predictions using two large-scale samples that span 30 product categories. Results indicate that the NLEA reduced brand nutritional quality relative to a control group of products not regulated by the NLEA. At the same time, among regulated products, brand taste increased. Although this reduction in nutrition represents an unintended consequence of regulation, there were a set of category, firm, and brand conditions under which the NLEA produced a positive effect on brand nutritional quality. We find that firms were more likely to improve brand nutrition when firm risk or firm power is low. Lower risk occurs when the firm is introducing a new brand rather than changing an existing brand, and weaker power in a category is reflected by lower market share in a category. Furthermore, firms competing in low-health categories (e.g., potato chips) or small-portion categories (e.g., peanut butter) improved nutrition more than firms competing in high-health categories (e.g., bread) or large-portion categories (e.g., frozen dinners). Recommendations for firm strategy and the design of consumer information policy are examined in light of these surprising firm responses.

Book excerpt: The challenge of addressing food security is not simply a matter of ensuring that all people have enough food—or energy (calories)—to live a healthy life. A much more daunting problem is to ensure that poor people have access to nutritious1 and high-quality diets. Typically, poor households subsist on monotonous staple-based diets; they lack access to nutritious foods, such as fruits, vegetables, animal source foods (fish, meat, eggs, and dairy products), or wild foods of high nutrient content. Lack of diversity in the diet is strongly associated with inadequate intake and risks of deficiencies of essential micronutrients (Ruel 2003; Leakey 1999; Arimond et al. 2010). The resulting deficiencies have farreaching health and nutrition consequences, both in the short and the long term. Economic constraints, lack of knowledge and information, and related lack of demand for nutritious foods are critical factors that limit poor populations’ access to such foods.

Nutrition textbooks do not tell you that this science is in its infancy, nor how many "scientific" claims are open to question, based on faulty research or simple hunches. After attempting to understand the prejudice against vitamins and supplements among the industrial-medical-political Big Brother (IMP-BB) and the lack of evidence for most alternatives, there is still some useful information. Opposing philosophies are denoted as SUPR (SUrgery-PRescription orientation) and UTHR (Unconventional Therapies, Herbal Remedies.) Honest Nutrition uses a large alphabetical section to give easy access to useful information about many diseases and nutritional therapies. Honest Nutrition includes information about hormone resistance diseases, cryptic infections as a cause of "unknown etiology" diseases, and the effect of nutrition on behavior and criminality. Some claims: 1. Obesity always involves hormones, sometimes with positive-feedback loops, which is why "Just eat less and exercise" seldom works. 2. A major factor in arterial disease is viscous blood, resulting in part from a lack of omega-3 fat. Cholesterol lowering does not help. 3. Some heart attacks may be due to hormonal effects, involving the hormone ouabain, and preventable with an extract of the herb strophanthus. 4. Many, or most North Americans suffer serious lack of nutrients: vitamin D, magnesium, and plant nutrients. The author challenges the medical establishment to examine their doctrines and learn how to help people suffering from nutritional diseases. Many technical terms are included. The non-scientific reader is asked to skip over these, to gain a useful knowledge of nutrition.

This is due to the spe cial concerns of those responsible for setting national policies, the program experience and leadership in public health developed by the national governments, and the stimulus and cooperation of the Pan American Health Organization (PARO), including its twelve associated centers which focus on research, training and program development. The need for a coordinated hemisphere-wide attack on malnu trition and other health problems was expressed clearly in the "Ten Year Health Plan for the Americas" (1). This plan established specific targets for reducing the prevalence of the major nutri tional diseases and other health problems for the decade 1971-1980. It was noted at that time that very few countries had formulated adequate comprehensive national food and nutrition policies and plans, nor had they developed strategies for combating the nutri tional deficiencies known to affect large numbers of people through out the Region. Following a review of the available data on a country by country basis in 1975, the PARO Directing Council en dorsed recommendations for formulating the necessary national poli cies and strategies for the intersectorial execution of food, nutri tion and health programs (2). This report also summarized the available national data related to nutritional status, existing programs such as food fortification, and the human resources avail able for services as well as for research and education.
