The sample for this study of the U.S. population was selected from households in 81 counties across the United States. About 40,000 persons 2 months of age and over were selected, including large samples of both young and old persons. About 12,000 of the sample persons were black Americans, 12,000 were Mexican-Americans, and the remaining 16,000 were of all other race and ethnicity groups. All selected persons were asked to complete an extensive interview and an examination in a large mobile examination center. The survey period is 1988-94, consisting of two phases of equal length and sample size. Both Phase 1 and Phase 2 were random samples of the U.S. population living in households.

Since the 1970s, an array of public health interventions and national dietary guidelines has sought to reduce sodium intake. However, the U.S. population still consumes more sodium than is recommended, placing individuals at risk for diseases related to elevated blood pressure. Strategies to Reduce Sodium Intake in the United States evaluates and makes recommendations about strategies that could be implemented to reduce dietary sodium intake to levels recommended by the Dietary Guidelines for Americans. The book reviews past and ongoing efforts to reduce the sodium content of the food supply and to motivate consumers to change behavior. Based on past lessons learned, the book makes recommendations for future initiatives. It is an excellent resource for federal and state public health officials, the processed food and food service industries, health care professionals, consumer advocacy groups, and academic researchers.

This book was released on 2002-07-19 with total page 804 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume is the newest release in the authoritative series issued by the National Academy of Sciences on dietary reference intakes (DRIs). This series provides recommended intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for individuals based on age and gender. In addition, a new reference intake, the Tolerable Upper Intake Level (UL), has also been established to assist an individual in knowing how much is "too much" of a nutrient. Based on the Institute of Medicine's review of the scientific literature regarding dietary micronutrients, recommendations have been formulated regarding vitamins A and K, iron, iodine, chromium, copper, manganese, molybdenum, zinc, and other potentially beneficial trace elements such as boron to determine the roles, if any, they play in health. The book also: Reviews selected components of food that may influence the bioavailability of these compounds. Develops estimates of dietary intake of these compounds that are compatible with good nutrition throughout the life span and that may decrease risk of chronic disease where data indicate they play a role. Determines Tolerable Upper Intake levels for each nutrient reviewed where adequate scientific data are available in specific population subgroups. Identifies research needed to improve knowledge of the role of these micronutrients in human health. This book will be important to professionals in nutrition research and education.

Book excerpt: This volume is the newest release in the authoritative series of quantitative estimates of nutrient intakes to be used for planning and assessing diets for healthy people. Dietary Reference Intakes (DRIs) is the newest framework for an expanded approach developed by U.S. and Canadian scientists. This book discusses in detail the role of vitamin C, vitamin E, selenium, and the carotenoids in human physiology and health. For each nutrient the committee presents what is known about how it functions in the human body, which factors may affect how it works, and how the nutrient may be related to chronic disease. Dietary Reference Intakes provides reference intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for different groups based on age and gender, along with a new reference intake, the Tolerable Upper Intake Level (UL), designed to assist an individual in knowing how much is "too much" of a nutrient.

Available in PDF, EPUB and Kindle. Book excerpt: The third National Health and Nutrition Examination Survey (NHANES III), conducted in 1988-1994, was designed to obtain nationally representative information on the health and nutritional status of the population of the United States through interviews and direct physical examinations. NHANES III contains data for a sample of 33,994 persons aged 2 months and older who participated in the survey. A home examination option was employed for the first time in order to obtain examination data for very young children and for elderly persons who were unable to visit the mobile examination center (MEC). The home examination included only a subset of the components used in the full MEC examination, since it would have been difficult to collect some types of data in a home setting. The dataset contains information on high blood pressure and cholesterol, obesity, passive smoking, lung disease, osteoporosis, HIV, hepatitis, helicobacter pylori, immunization status, diabetes, allergies, growth and development, blood lead, anemia, food sufficiency, and dietary intake, including fats, antioxidants, and nutritional blood measures. Dietary Recall information is found in three fichiers (Parts 4, 7, and 8) and four table files (Parts 3, 5, 6, and 9). The Adult and Youth Household files (Parts 1 and 11) comprise the total number of respondents when combined. All of the fichiers may be linked by using the survey participant identification number (SEQN) ... Cf. : http://webapp.icpsr.umich.edu/cocoon/ICPSR-STUDY/02231.xml.

Book excerpt: Four essays and a general introduction provide contemporary readings of The Grapes of Wrath for a general audience. Written in an accessible style, the essays cover the issues and themes of Steinbeck's politics, metaphors of movement and growth, views of women, uses of documentary, and the conversion of the novel into film. The introduction provides a history of the novel's public reception, a summary of the major phases of critical response, and a reading of the novel as an act of returning west to Steinbeck's lost California.
