Available in PDF, EPUB and Kindle. Book excerpt: Among the first creatures to help humans attain the goal of having enough to eat was the pig, which provided not simply enough, but general abundance. Domesticated early and easily, herds grew at astonishing rates (only rabbits are more prolific). Then, as people spread around the globe, pigs and traditions went with them, with pigs making themselves at home wherever explorers or settlers carried them. Today, pork is the most commonly consumed meat in the world—and no one else in the world produces more pork than the American Midwest. Pigs and pork feature prominently in many cuisines and are restricted by others. In the U.S. during the early1900s, pork began to lose its preeminence to beef, but today, we are witnessing a resurgence of interest in pork, with talented chefs creating delicacies out of every part of the pig. Still, while people enjoy “pigging out,” few know much about hog history, and fewer still know of the creatures’ impact on the world, and specifically the Midwest. From brats in Wisconsin to tenderloin in Iowa, barbecue in Kansas City to porketta in the Iron Range to goetta in Cincinnati, the Midwest is almost defined by pork. Here, tracking the history of pig as pork, Cynthia Clampitt offers a fun, interesting, and tasty look at pigs as culture, calling, and cuisine.

Book excerpt: The growth of the global meat industry and the implications for climate change, food insecurity, workers' rights, the treatment of animals, and other issues. Global meat production and consumption have risen sharply and steadily over the past five decades, with per capita meat consumption almost doubling since 1960. The expanding global meat industry, meanwhile, driven by new trade policies and fueled by government subsidies, is dominated by just a few corporate giants. Industrial farming—the intensive production of animals and fish—has spread across the globe. Millions of acres of land are now used for pastures, feed crops, and animal waste reservoirs. Drawing on concrete examples, the contributors to Global Meat explore the implications of the rise of a global meat industry for a range of social and environmental issues, including climate change, clean water supplies, hunger, workers' rights, and the treatment of animals. Three themes emerge from their discussions: the role of government and corporations in shaping the structure of the global meat industry; the paradox of simultaneous rising meat production and greater food insecurity; and the industry's contribution to social and environmental injustice. Contributors address such specific topics as the dramatic increase in pork production and consumption in China; land management by small-scale cattle farmers in the Amazon; the effect on the climate of rising greenhouse gas emissions from cattle raised for meat; and the tensions between economic development and animal welfare. Contributors Conner Bailey, Robert M. Chiles, Celize Christy, Riva C. H. Denny, Carrie Freshour, Philip H. Howard, Elizabeth Ransom, Tom Rudel, Mindi Schneider, Nhuong Tran, Bill Winders

Available in PDF, EPUB and Kindle. Book excerpt: Pork continues to occupy an important position as a food source in affluent societies as well as in developing countries with slower economic growth. The growth of the world swine population continues at a faster rate than that of the human population, a reflection of the sustained demand for pork in all parts of the world. The technical basis for commercial production of swine was presented in our two earlier textbooks-Swine Production in Temperate and Tropical Environ ments, by Pond and Maner, 1974, and Swine Production and Nutrition, by Pond and Maner, 1984. In view of rapidly advancing technology and an appreciation for the systems approach in industry and agriculture, this third book has been restructured to provide the student and practitioner with an integrated concept of pork production. We have attempted to blend the fundamental principles from genetics, physiology, nutrition, and biotechnology into the modern concepts of systems analysis and simulation modeling. The objective is to create a teaching approach which empha sizes the integrated synthesis of biological with physical and environmental sci ences and economics. This approach is expected to provide an overall pork pro duction systems view that individual producers can adapt to their specific resources, needs, and goals. Our new co-author, Dr. Dewey Harris, has used his expertise and perspective on interacting systems to change the complexion of the book to fulfill this objective. In addition, Dr.

Available in PDF, EPUB and Kindle. Book excerpt: With China's emergence as a new source of potential demand for U.S.pork exports, it is important for U.S.farmers, business leaders, and policymakers to understand the volatile nature of China's pork industry. Prices, hog inventories, and pork output in China fluctuate from year to year in response to various factors that influence the market, and China's imports of pork tend to rise when Chinese hog prices are high. Extensive policy intervention by the Chinese government has contributed to consolidation in the country's pork industry but has not stabilized the market. Imported pork is becoming more competitive in China as Chinese pork production costs rise and animal disease outbreaks, environmental threats, and food safety concerns constrain growth of China's hog industry.

Available in PDF, EPUB and Kindle. Book excerpt: The recent introduction and spread of African swine fever (ASF) into Europe and Asia has shown that an integrated, multidisciplinary effort is needed to tackle this disease and the complex challenges it poses. This book presents practical guidelines on surveillance for detection of ASF virus, how to prevent outbreaks in the domestic pig sector through biosecurity and cleaning and disinfection routines, including in backyard holdings, and how to control and eradicate this disease in wild boar. Information on pathological lesions and diagnostic practices are provided to support practitioners. Virus infection mechanisms and the consequent host immune response are reported together with an overview on the status of vaccine and treatment development. Information on ASF epidemiology and the European wild boar and domestic pig populations is presented to assist breeders, wildlife managers and policy makers in designing practices aimed at preventing, or controlling and eradicating, this disease. The book provides currently available knowledge in a single place, and identifies knowledge gaps, prompting policy makers and funding bodies to support the scientific community in investigating the gaps.

Book excerpt: In addition to being one of the United States' largest pork producers, North Carolina is home to a developing niche market of pasture-raised pork. In Real Pigs Brad Weiss traces the desire for "authentic" local foods in the Piedmont region of central North Carolina as he follows farmers, butchers, and chefs through the process of breeding, raising, butchering, selling, and preparing pigs raised on pasture for consumption. Drawing on his experience working on Piedmont pig farms and at farmers’ markets, Weiss explores the history, values, social relations, and practices that drive the pasture-raised pork market. He shows how pigs in the Piedmont become imbued with notions of authenticity, illuminating the ways the region's residents understand local notions of place and culture. Full of anecdotes and interviews with the market's primary figures, Real Pigs reminds us that what we eat and why have implications that resonate throughout the wider social, cultural, and historical world.
