Book excerpt: Excerpt from The Proteins of the Wheat Kernel Of the protein substances used as food none is of more importance than those contained in the seeds of wheat. Although these bodies attracted the attention of investigators more than one hundred years ago and have since then been many times the subject of study, the published statements respecting them are so conflicting and uncertain that it has heretofore been impossible to know what the truth regarding them actually is. With the purpose of clearing up the existing confusion and determining the real value of the evidence offered, as well as extending, as far as possible, our knowledge of these important substances, the writer some years ago undertook an investigation of this seed which has recently been concluded by work done under grants from the Carnegie Institution of Washington. As the results of these investigations have been published from time to time in a number of different papers, appearing in four different journals, it has been thought desirable to bring all this work together in one paper. In so doing the details have been reproduced in full, for the nature of the evidence is such that its value largely consists in concordant results of many experiments, repeated under different conditions, since it is not yet possible to establish the chemical individuality of different protein substances by demonstrating their possession of definite physical properties, as may be done with the simpler organic compounds. The experience of the-writer in his endeavors to understand and repeat the work of many of his predecessors has made him feel the importance of these details to future workers along the same lines and is his excuse for giving with so much minuteness the results of his own work, which to those not familiar with the difficulties of the subject must appear to a large extent unnecessary. In order to make this work available to those who wish simply to know the results, a comprehensive summary of this paper is given at the end of this publication, and the details of the many operations and experiments need be read only by those who wish to become familiar with these. Book excerpt: Excerpt from Studies Upon Influences Affecting the Protein Content of Wheat The nature Of this work is such that no permanent results can be secured from one or two seasons' operations. The element Of time is an all-essential one for the solution of such problems. This would be true even though the problem was merely the development of wheats giving higher yields than those now being grown in the State, but with the introduction of the problem of increasing the gluten content, the element of time is even of greater importance. With this in view, the experiments were so planned that while the final results could not be expected for several years, it was possible to obtain data of importance bearing upon the entire question of cereal culture each year, material progress thus being assured. As early as 1882 Clifford Richardson called attention to the fact that wheats from the Pacific Coast were relatively low in their protein content, and numerous analyses of California grown wheats made at the California Agricultural Experiment Station under the direction of Dr. E. W. Hilgard, in the earlier years, also showed the same condition to exist. That this condition exists is undoubtedly true, whatever the causes may be. TO bear witness to the fact the following sum mary is given of analyses of white wheats grown in several different states, as compared with the analyses of 149 samples of wheats of the same class grown in California in the same years. For the sake of comparison also the average results obtained from the analysis Of 49 hard winter wheats grown in Kansas the same season are included, as well as those of three soft white wheats grown in Kansas from seed originally obtained from the state Of Washington. Book excerpt: Excerpt from A Grain of Wheat If, on the other hand, we look to Europe and Asia to see in which countries these ancient cereals are still cultivated, we shall find them in the northern J ura, in the countries of the Basques, the Servians, the Swabians and the Bactrians of Persia. We see that these cereals have maintained themselves only in mountainous countries or among the peoples most remote from the centers of civilization. The culti vation of emmer has long since disappeared from the fertile plains of Egypt, where it was superseded by that of hard wheat. Knowing, therefore, that the wheats cultivated in most ancient times were those with a fragile rachis, we are' confronted by a second question: Where is the home of this type of wheat? In what country did our first parents, our prehistoric ancestors, find this plant, most precious of all plants?
