Book excerpt: Excerpt from The Physiology of the Amino Acids During the past few years the physiology of the amino acids has been subjected to much experimentation with the result that these protein cleavage products have assumed an ever increasing importance in the problems associated with nitrogenous metabolism. Owing largely to our too recent appreciation of the significance of these substances in metabolic processes there exists at present no compilation which furnishes an adequate conception of the roles which may be played by the amino acids. It has been, therefore, the aim of the writer to gather together in one place the results which have thus far been obtained in the field of the biochemistry of the amino acids, thus affording the busy practitioner, and others whose resources for consulting original communications are limited, an opportunity of gaining a knowledge of the present-day problems in this field of nutrition. In the accomplishment of this purpose the writer has made no effort to include all the details or all the literature available upon a given topic, but has sought rather to indicate leading lines of thought. At the end of each chapter are given references in which all the important literature upon the topic discussed is cited. It is assumed that the reader is familiar with the fundamental principles of metabolism, hence, in general, these have been omitted. The author is deeply indebted to Professor Lafayette B. A monograph on Protein Metabolism would therefore be the first of a series, and it is to be hoped that volumes dealing with the other particular aspects of metabolism will soon be forthcoming which will furnish us with a complete survey of the present position of this portion of chemical physiology. The present monograph does not pretend to cover the whole literature of protein metabolism; it consists rather of the discussion of the more important results published during the last decade and their bearing upon the work of the earlier investigators. The majority of recent writers have devoted their attention to the study of the metabolism of particular constituents of the protein molecule; an attempt has been made in this monograph to avoid laying undue stress on the fate of these since it is felt that a truer picture of the real course of protein metabolism can thus be drawn. For example, averages of results were used from a large collaborative study (2k) in which several laboratories par ticipated in analysis of the same samples. Also averages from replicate deter minations from.a single laboratory or the preferred values, if indicated by the investigators, were used. Occasionally extreme values were arbitrarily eliminated, where they appeared to be entirely unreasonable in view of reports on other sam ples of the item. Even so, inspection of the maximum and minimum values shows very wide ranges, indicating the need for further intensive study. These can be relieved to a marked degree by using moist instead of dried yeast and still more so by using moist yeast and butter. Even in the latter case the existing deficiencies are not entirely corrected, since many rats decline on this diet. Rats which fail on lard do not always recover on a diet containing butter. It seems also possible that yeast on account of its high content in purines, and perhaps other constituents, is not an ideal addition in experiments of long duration, even in Spite of its marked growth-promoting power. The impaired nutritive value of heated casein does not seem to be due to destruction of amino - acids but to destruction of vitamines.
