There is no gainsaying the fact that great improvement has taken place in both the fruit and the fruit packages that are now offered by Canadian fruit growers. There is, however, still room for improvement, though the day is past when any. Reputable fruit - growers would think of marketing fruit in second-hand barrels or even in soiled and clumsily made barrels or boxes. The Object of this bulletin is to enable beginners to master easily the chief features of barrel and box packing. The general principles involved are few, and in the case of barrel packing the art of doing the work is by no means difficult. The art of box packing is not so easily acquired. Yet with those who are not too far past the plastic period of youth, it is not too much to expect that a season's practice will make a fair box packer. It cannot be too strongly impressed that, while there are certain principles that must be definitely recognized and strictly adhered to, nevertheless efficiency is attained only by long and persistent prac tice. No oral or written instruction can take its place. It is believed, however, that a careful study of the cuts made from photographs of packages and the diagrams illustrating details will be of great assistance to the beginner. The entire fruit is made up of delicate tissue, and undue pressure and abrasions will cause an ultimate breakdown of the flesh. From the Standpoint of minimizing bruising, or other mechanical injury, many faults in present handling practices may be corrected readily by reasonable attention to equipment and handling. Precautions should commence with the harvesting by instructing the pickers in the correct method of picking in order to avoid finger bruising and the pulling of the apples with the spur adhering to the stem, the latter being a frequent cause of skin punctures. Apples should be pulled by utilizing the full hand and giving a combined twist and upward motion to separate from the spur with the stem intact. The regulation picking basket should be properly padded to avoid bruising and should be carried in front of the picker at all times. Metal picking bags with shoulder straps (fig. 1) are preferred to the baskets in some districts, while the cloth bag, which hangs in front of the picker, is not very popular as it crushes against the ladder, causing the fruit to become bruised. The scarcity of labor and the shortage of cars for moving the fruit to market resulted in a con gested condition in all of the packing houses visited and consider able confusion in some of them. It became necessary, therefore, to limit the work largely to the making of observations and con ducting such tests as would not interfere in any way with the pack ing-house operations. A floor plan showing the arrangement of the equipment was made of each of the more important houses and facilities for storing packed and unpacked fruit were noted. Sizing machines were tested for accuracy and efficiency and for their effect on the physical condition of the fruit. Methods of handling the fruit through every operation from the receiving door to the car were studied, and the efficiency of the different methods compared. Individual or ranch packing houses and operations were included in the investigations, so that the efficiency and economy of the two systems might be com pared. Rural electrification and automatic refrigera tion equipment are now universal, and indi vidual fruit growers or small groups of grow ers have been building cold-storage plants at or near their orchards instead of relying on large plants that serve a whole community or a large number of growers. This has been coincident with the development of better handling and packing methods. The handling methods, transportation equipment, and facili ties required for sorting and packing extended the distance that apples can be moved from orchard to the cold-storage house so that pack ing and shipping will not be under the pressure of getting the job done in a matter of a few days after picking.
