Book excerpt: This is the true story of one man's spiritual awakening, without a guru and under severely restrictive conditions...In March of 1992, Michael Clegg entered prison, convicted of manufacturing an illegal drug. While there, he realized that a lifetime of spiritual searching had brought him no closer to the elusive state he was seeking. In surrender, he was overwhelmed by relief and bliss. The next several years were spent in a deepening process he calls the "deliverance", as layers of preconditioned ego personality were peeled away to reveal the eternal Pearl of Consciousness. He left prison with a new name, Satyam Nadeen, and a new life!

Book excerpt: A revolution in cooking Sous vide is the culinary innovation that has everyone in the food world talking. In this revolutionary new cookbook, Thomas Keller, America's most respected chef, explains why this foolproof technique, which involves cooking at precise temperatures below simmering, yields results that other culinary methods cannot. For the first time, one can achieve short ribs that are meltingly tender even when cooked medium rare. Fish, which has a small window of doneness, is easier to finesse, and shellfish stays succulent no matter how long it's been on the stove. Fruit and vegetables benefit, too, retaining color and flavor while undergoing remarkable transformations in texture. The secret to sous vide is in discovering the precise amount of heat required to achieve the most sublime results. Through years of trial and error, Keller and his chefs de cuisine have blazed the trail to perfection—and they show the way in this collection of never-before-published recipes from his landmark restaurants—The French Laundry in Napa Valley and per se in New York. With an introduction by the eminent food-science writer Harold McGee, and artful photography by Deborah Jones, who photographed Keller's best-selling The French Laundry Cookbook, this book will be a must for every culinary professional and anyone who wants to up the ante and experience food at the highest level.

Book excerpt: From common yellow globes to gourmet green garlic, onions of every variety abound in this seasonal collection of mouthwatering recipes for every course of the meal (except dessert). Seduced at the age of twelve by the tantalizing aroma of onions slowly caramelizing on the stove, Jan Roberts-Dominguez has been a devotee ever since. "The Onion Book is her tribute to every variety of Allium, from the common yellow globes to Walla Wallas, Mauis, Vidalias, and Texas Sweets, including scallions, chives, leeks, pearl onions, shallots, and garlic. "The Onion Book offers 175 recipes, grouped according to season, for foolproof and delicious dishes ranging from Early Summer Gazpacho to Garlic Pork Stew and Oven-Roasted Balsamic Onions to Carrot and Leek Tart. Sprinkled throughout are fascinating and entertaining tidbits of onion history and lore. (Did you know that until the middle of the eighteenth century Siberia's tax collector was paid in garlic?) Also included are lists of onion festivals held throughout the year in the United States and abroad, as well as mail-order sources for onions of every variety. There is nutritional and health information, as well as tips on how to conquer "onion breath" and onion tears. In short, this is the book for every onion-loving cook to have in the kitchen--a single, infallible source for onion recipes and information of every kind. With a master's degree in home economics, Jan Roberts-Dominguez learned the arts of recipe development and food styling at Western Foods and Associates, a professional test kitchen in San Francisco. Her newspaper column "Green Cuisine" is syndicated through the West, and she writes and illustrates a weeklycolumn titled "Preserving" for the Portland Oregonian from May through October each year. She is the author/illustrator of three other cookbooks, including, most recently, "The Mustard Book. She lives in Corvallis, Oregon.

What’s your predicament: breakfast on a harried school morning? The Mom 100’s got it—Personalized Pizzas are not only fast but are nutritious, and hey, it doesn’t get any better than pizza for breakfast. Kids making noise about the same old lunch? The Mom 100’s got it—three different Turkey Wraps, plus a Wrap Blueprint delivers enough variety to last for years. Katie Workman, founding editor in chief of Cookstr.com and mother of two school-age kids, offers recipes, tips, techniques, attitude, and wisdom for staying happy in the kitchen while proudly keeping it homemade—because homemade not only tastes best, but is also better (and most economical) for you. The Mom 100 is 20 dilemmas every mom faces, with 5 solutions for each: including terrific recipes for the vegetable-averse, the salad-rejector, for the fish-o-phobe, or the overnight vegetarian convert. “Fork-in-the-Road” variations make it easy to adjust a recipe to appeal to different eaters (i.e., the kids who want bland and the adults who don’t). “What the Kids Can Do” sidebars suggest ways for kids to help make each dish.

Available in PDF, EPUB and Kindle. Book excerpt: No other nonhuman source has served as the basis for more metaphors than animals. Speaking of Animals is a dictionary of animal metaphors that are current in American English. It is comprehensive, historical, and metaphor-based. Each entry refers to the other dictionaries that catalog that same metaphor, and the dates of first appearance in writing are supplied, where possible, for both the metaphor and the name of the source. The main text is organized alphabetically by metaphor rather than by animal or animal behavior; all the metaphors are classified according to their animal source in a list at the end of the book. An animal metaphor is a word, phrase, or sentence that expresses a resemblance or similarity between someone or something and a particular animal or animal class. True metaphors are single words, such as the noun tiger, the verb hog, and the adjective chicken. Phrasal metaphors combine true metaphors with other words, such as blind tiger, hog the road, and chicken colonel. Other animal metaphors take the form of similes, such as like rats leaving a sinking ship and prickly as a hedgehog. Still others take the form of proverbs, such as Don't count your chickens before they hatch and Let sleeping dogs lie. The horse is the animal most frequently referred to in metaphors, followed closely by the dog. The Bible is the most prolific literary source of animal metaphors, followed closely by Shakespeare.

Book excerpt: James Beard Award Winner IACP Award Winner Thomas Keller, chef/proprieter of Napa Valley's French Laundry, is passionate about bistro cooking. He believes fervently that the real art of cooking lies in elevating to excellence the simplest ingredients; that bistro cooking embodies at once a culinary ethos of generosity, economy, and simplicity; that the techniques at its foundation are profound, and the recipes at its heart have a powerful ability to nourish and please. So enamored is he of this older, more casual type of cooking that he opened the restaurant Bouchon, right next door to the French Laundry, so he could satisfy a craving for a perfectly made quiche, or a gratinéed onion soup, or a simple but irresistible roasted chicken. Now Bouchon, the cookbook, embodies this cuisine in all its sublime simplicity. But let's begin at the real beginning. For Keller, great cooking is all about the virtue of process and attention to detail. Even in the humblest dish, the extra thought is evident, which is why this food tastes so amazing: The onions for the onion soup are caramelized for five hours; lamb cheeks are used for the navarin; basic but essential refinements every step of the way make for the cleanest flavors, the brightest vegetables, the perfect balance—whether of fat to acid for a vinaigrette, of egg to liquid for a custard, of salt to meat for a duck confit. Because versatility as a cook is achieved through learning foundations, Keller and Bouchon executive chef Jeff Cerciello illuminate all the key points of technique along the way: how a two-inch ring makes for a perfect quiche; how to recognize the right hazelnut brown for a brown butter sauce; how far to caramelize sugar for different uses. But learning and refinement aside—oh those recipes! Steamed mussels with saffron, bourride, trout grenobloise with its parsley, lemon, and croutons; steak frites, beef bourguignon, chicken in the pot—all exquisitely crafted. And those immortal desserts: the tarte Tatin, the chocolate mousse, the lemon tart, the profiteroles with chocolate sauce. In Bouchon, you get to experience them in impeccably realized form. This is a book to cherish, with its alluring mix of recipes and the author's knowledge, warmth, and wit: "I find this a hopeful time for the pig," says Keller about our yearning for the flavor that has been bred out of pork. So let your imagination transport you back to the burnished warmth of an old-fashioned French bistro, pull up a stool to the zinc bar or slide into a banquette, and treat yourself to truly great preparations that have not just withstood the vagaries of fashion, but have improved with time. Welcome to Bouchon.
