I hope that by sharing these recipes with you, more people can enjoy the pastries that I’ve made. None of the recipes are hard to make, and they are all very tasty and fun to make. Handing down a recipe is sharing a little part of you that will live on. A recipe is the groundwork for an idea, and you can change it to make it your own. I have listed the recipes as they were mentioned in my book The Housekeeper. To all of you, I hope you have fun as you make and try many of the wonderful items contained in this cookbook. Love is what binds people together, and when a person bakes, they love the people that will enjoy what they make. I’m sharing my pastries with you so you can share your love. Renäe

Available in PDF, EPUB and Kindle. Book excerpt: 'an Indian household can no more be governed peacefully, without dignity and prestige, than an Indian Empire' InThe Complete Indian Housekeeper and Cook (1888) Flora Annie Steel and her co-author Grace Gardiner provide practical, and often highly opinionated, advice to young memsahibs in India. They explain how to 'make a hold' over servants, how to establish and stock a storeroom, how to plan a menu, manage young children, treat bites from 'mad, or even doubtful dogs', and teach an Indian cook how to make fish quenelles. The Complete Indian Housekeeper and Cook promised its reader a comprehensive guide to domesticitiy in India, even if she found herself living in camps or in the jungle, on the hills or in the plains, whether she was the wife of an influential Indian Civil Servant or a missionary. This new edition, complete with its stimulating introduction and substantial notes, makes available a classic domestic work that in detailing the memsahib's role in the household sheds light on the entire imperial experience. ABOUT THE SERIES: For over 100 years Oxford World's Classics has made available the widest range of literature from around the globe. Each affordable volume reflects Oxford's commitment to scholarship, providing the most accurate text plus a wealth of other valuable features, including expert introductions by leading authorities, helpful notes to clarify the text, up-to-date bibliographies for further study, and much more.

Book excerpt: Excerpt from The Housekeeper Cook Book Flour made from Wheat, and meal from oats and Indian corn, are rich in the waste-repairing elements, starch and albumen, and man is necessarily dependent upon them to a degree much greater than commonly supposed. Wheat and our contain gluten in different proportion to the many varieties. Flour in which gluten abounds will absorb more liquid than that which contains a greater amount of starch, and is therefore stronger, that is, will make more bread to a given quan tity. Gluten is a esh, and starch a heat producer, in the nutri tive processes of the body. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Available in PDF, EPUB and Kindle. Book excerpt: Jennie C. Benedict's The Blue Ribbon Cook Book represents the very best in the tradition of southern regional cooking. Recipes for such classic dishes as Parker House rolls, lamb chops, corn pudding, Waldorf salad, and cheese and nut sandwiches are nestled among longtime local favorites such as apple butter, rice pudding, griddle cakes, and Benedictine, the cucumber sandwich spread bore Benedict's name. Throughout the cookbook, Benedict's delightful voice shines. Benedict, who was once the most famous caterer in Louisville and also operated a celebrated tea room and soda fountain, trained with Fannie Farmer at the Boston Cooking School. Five editions of Benedict's famous cookbook were published, and her aim in sharing her recipes was simple; as she mentions in the preface, "I have tried to give the young housekeeper just what she needs, and for more experienced ones, the best that can be had in the culinary art." As a creative entrepreneur, Benedict had a significant influence on the local culture and foodways. Her sweet and savory dishes were the stars of many Derby parties, and yet she placed equal emphasis on simple luncheon and dinner recipes to satisfy the needs of home cooks. While her popular dishes graced genteel tables all over the Bluegrass, Benedict's chicken salad sandwiches, sold from a pushcart, offered Louisville children the first school lunches in the city. This new edition of The Blue Ribbon Cook Book will now welcome new generations of readers and cooks -- those who remember wearing white gloves and eating delicate tea sandwiches at the downtown department store as well as those who want to make satisfying regional classics such as blackberry jam cake like their grandmother used to make. Food writer Susan Reigler introduces the story of Benedict's life and cuisine, and this edition is the first to come complete with the now-famous spread that bears Benedict's name.

Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Good Housekeeper's Cook Book The inexperienced housewife will find the following tables of weights and measures of wonderful help in her first culinary efforts; while even the experienced cook will find this ready reference arrangement of inestimable value when attempting recipes that, without these simple rules, would necessitate a waste of time in tedious weighing. Measuring-cups, holding one-half pint, divided into quarters or thirds, and measuring-spoons - teaspoons and tablespoons - may now be obtained in any hardware or department store. By having this kitchen measuring-set the young housekeeper will have much better success than by using the haphazard method - "a favorite measuring-cup and spoon" - of a generation ago, with its vexatious results. A case-knife, for leveling and dividing ingredients, should also be at hand, as it is almost indispensable in securing uniform measurements. It should be remembered that flour, meal, powdered and confectioners' sugar should be sifted before measuring. Mustard and baking powder, from standing in boxes, should be stirred to lighten; while salt, which is inclined to lump, should be rolled and crushed between sheets of strong manila paper. When a recipe calls for a "cupful" it means all the cup will hold; a "teaspoonful" or a "tablespoonful" means all the spoon will hold - the case-knife to be used in leveling the top. In measuring butter or other fats, pack firmly into the cup or spoon and level with the knife. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Working as a housekeeper was one of the most prestigious jobs a nineteenth and early twentieth century woman could want – and also one of the toughest. A far cry from the Downton Abbey fiction, the real life Mrs Hughes was up against capricious mistresses, low pay, no job security and gruelling physical labour. Until now, her story has never been told. The Housekeeper’s Tale reveals the personal sacrifices, bitter disputes and driving ambition that shaped these women’s careers. Delving into secret diaries, unpublished letters and the neglected service archives of our stately homes, Tessa Boase tells the extraordinary stories of five working women who ran some of Britain’s most prominent households. There is Dorothy Doar, Regency housekeeper for the obscenely wealthy 1st Duke and Duchess of Sutherland at Trentham Hall, Staffordshire. There is Sarah Wells, a deaf and elderly Victorian in charge of Uppark, West Sussex. Ellen Penketh is Edwardian cook-housekeeper at the sociable but impecunious Erddig Hall in the Welsh borders. Hannah Mackenzie runs Wrest Park in Bedfordshire – Britain’s first country-house war hospital, bankrolled by playwright J. M. Barrie. And there is Grace Higgens, cook-housekeeper to the Bloomsbury set at Charleston farmhouse in East Sussex for half a century – an era defined by the Second World War. Revelatory, gripping and unexpectedly poignant, The Housekeeper’s Tale champions the invisible women who ran the English country house. Normal0falsefalsefalseEN-GBX-NONEX-NONE
