Book excerpt: Excerpt from Milk and Cream Testing and Grading Dairy Products for School, Farm, and Factory The arts of making butter and cheese were followed in the earliest ages of which we have any record, and it is not unreasonable to assume that they were known to primitive and perhaps to prehistoric man. In what part of the world they were first acquired or among what race of people they were first practised is not known. The only indications we have regarding the time when they originated are the natural deductions that it was not before the era when primitive man began to domesticate the wild animals, and that it would be among a pastoral race, but whether among a nomadic or a stationary people is unknown. There are reasons for supposing that these handicrafts originated in the East, and that the first animals used for supplying man with milk were sheep or goats. The domestication of cattle would be much more difficult than that of sheep or goats, so that it is very probable the utilisation of the cow for milking did not take place until a much later period. Book excerpt: Excerpt from The Grading of Milk as a Substitute: For Dairy Inspection The title refers to the control of public milk supplies through legislative enactment. Dairy inspection is a function provided for in most State and municipal milk laws, and its general possibilities and activities are familiar to all who are engaged in the milk industry or in official control of the same. Irrespective of the standards, whether by the use of score cards or otherwise, dairy inspection assumes that inspectors acting under the direction either of the State or municipal departments will periodically visit certain dairy districts and report on the sanitary conditions which they observe on dairy farms or in the stations established by the industry for shipping or receiving milk. In this work the emphasis is laid on the dairy and the external appearances which can be observed, not only with respect to buildings and equipment, but with respect to the methods used by dairy employees. Such inspection gives no consideration to the product itself, which may be termed the net result of the work of the dairy industry. In contrast with this, a new form of legislation has been devised which may be summarized in the expression, "the grading of milk." This grading refers to the separation of the product into several grades, according to the sanitary character of each. It is recognized that there may be innumerable degrees of excellence between the most unsanitary and the most sanitary milk produced, but for practical purposes it is sufficient to establish arbitrarily only two or more such divisions. There are several well-known breeds of dairy cattle in (anad each having distinct qualities and each having strong partisans. While, undoubtedly, some breeds are better fitted for certain conditions of soil and climate than are others, still the matter of the choice of a breed may well be left to individual preference. In almost any location one may choose a breed for which he has a strong liking, either real or fancied, and be assured that he can establish with it a successful herd. Jerseys, Guernseys, Holsteins, Ayrshires, and even Shorthorns, make a varied and fairly long list of breeds from which to select. The comparative merits of pure-bred and grade cows. Whether pure bred or grade animals should, be selected is a matter on which there may be more difference of opinion. By purely bred animals are 'meant those that are recorded in the herd-books of their respective breeds. This is the narrow, restricted sense of the term pure-bred, but it is the one in common use in Canada. A grade ammal is the produce of a pure-bred sire on a common, or grade, dam. The produce of a pure-bred sire and a common, or scrub, dam is called a half blood; the produce of a pure-bred sire and a half-blood dam is called a three-quarters blood; a three-quarters blood bredin turn to a pure-bred sire will produce a seven-eighths blood and so on ad infinitum. Since only the offspring of pure-bred parents on both sides are eligible to registry in the herd books of any of the dairy breeds, it follows that, no matter how far the process of grading up by. The use of pure-bred sires on grade females is carried, pure breds, in the technical sense, can never be produced. Since pure-bred animals are sought for breeding purposes, the offspring of pure-bred animials are therefore more valuable and command a higher price than the offspring of grades. Hence, if the yalue of the calves is taken into consideration, a pure-bred herd is amore productive one, other things being equal, than a grade herd On the other hand, by the grading-up process referred to, continually selecting the cows that are the best producers, it is entirely possible and by no means difficult to estab lish a herd of grade cows that will equal in the production of milk any herd of pure-bred animals. Hence, if the main product alone is sought, a grade herd may produce as largely as a pure-bred one; but if the by-products are to be taken into consideration, as it was stated at the outset that they should be, a pure-bred herd certainly has an advantage over a grade herd of equal productive capacity. Owing to being lighter than the other constituents of the milk, the fat-globules will, upon standing. Rise more or less perfectly to the surface, forming a layer of cream. They do not. However, all rise by gravity, owing to the viscosity of the milk. Sulphuric acid when mixed with milk dissolves or burns up the other milk solids without affecting the fat, and leaves the fat-globules in suspension, permitting them to rise to the surface more readily. Heat is generated by chemical action. This acid and milk or cream appears as a hot, coffee-coloured mixture. By whirling this mixture by centrifugal force at a high rate of speed, this process of gathering the fat-globules can be much hastened and much more effectively accomplished, and hence the use Of the centrifugal machine, or tester.
