Available in PDF, EPUB and Kindle. Book excerpt: European Australians have generally regarded the consumption of native flora and fauna with hesitation. From the outset of European colonisation of Australia, emphasis has been placed upon the cultivation of exotic grains like wheat, and the farming of introduced animals such as chickens, sheep and cattle, in order to establish a familiar and long-term food supply. However, by necessity and sometimes by choice, native produce comprised an important part of the diet for many colonists throughout the 19th century. While plants were rarely exploited as a food source, plentiful kangaroos, wallabies and water fowl were an obvious source of protein for those isolated on properties in the Australian Colonies. Fish were a major part of the diet for coastal settlements.Possibly as a result of this ambivalence, there was little attempt to codify a specific Australian cuisine until The English And Australian Cookery Book, was published in 1864. Written under a pseudonym by esteemed Tasmanian police magistrate and politician Edward Abbott, this cookbook showcases the diverse range of dishes that were popular in the colonial period. Abbott described himself as an aristologist, an expert in the study of food, culture and society. Abbott collected recipes that often combined native and exotic ingredients and he carefully selected and refined traditional English recipes to suit Colonial Australian conditions, ingredients and tastes. He also championed locally produced wines and discussed in great detail related matters such as smoking etiquette and the employment of servants. The latter topic will be of great interest to visitors to the Port Arthur Historic Sites' Cascades Female Factory, since Edward Abbott had several female servants from the Female Factory in his employ. The English And Australian Cookery Book provides a unique window into the rich but almost unknown culinary heritage of Colonial Australia and in particular, Colonial Tasmania. Whether you're a history buff, foodie or simply looking to expand your cooking repertoire, the English And Australian Cookery Book is a must-read.

Book excerpt: In the 20 years since Bill Granger published his first book of recipes, Sydney Food, the world has fallen in love with the joyfully casual Australian way of eating. As a self-taught cook, straight out of art school, Bill furnished his first street-corner eatery in minimalist style, serving a small but perfectly formed menu of domestic dishes around a central communal table. He captured the hearts of Sydneysiders and visitors alike, while setting an exciting new standard for cafe dining. Since then, Bill has been crowned the 'egg master of Sydney' (New York Times 2002), the 'king of breakfast' (The Telegraph Magazine 2016), the 'creator of avocado toast' (Washington Post 2016) and 'the restaurateur most responsible for the Australian cafe's global reach' (The New Yorker 2018). Nowadays, from Sydney to Tokyo, and London to Seoul, queues form to enjoy ricotta hotcakes ('Sydney's most iconic dish' Good Food 2019), fluffy scrambled eggs, lively salads and punchy curries. It is a bright picture of Australian food that has travelled across the globe, packed with fresh flavours and local produce, healthy but never preachy, whose main ingredient seems to be sunshine itself. The plates at any of Bill's restaurants are more sophisticated today, reflecting decades of global experience and culinary creativity - but the warmth of atmosphere and joy of eating remain the same.

Beautifully produced, with more than 100 easy-to-follow recipes, Julie Goodwin's bestselling cookbook, Our Family Table, offers the kind of cooking that brings families and friends together, time and time again. Some recipes are heirlooms passed down in Julie's family through generations, while others were given to her by friends and neighbours. There are lazy weekend breakfasts to enjoy with the family, weekday and special-occasion dinners, barbecue and camp cooking, and cakes, biscuits and puddings galore. Julie also includes recipes she created on MasterChef - such as her now famous lemon diva cupcakes and her passionfruit 'puddle' pie. The final section of the book is Julie's favourite: a beautifully designed 'blank' chapter with pages for the reader's own photos, clippings and hand-me-down handwritten recipes from family and friends. Our Family Table is more than a cookbook. It's a recipe for the way we live today."

Book excerpt: Forget celebrity chefs. The books that truly reflect what most Australians cooked and ate at home for decades were put together by people you have never heard of, all in the name of helping others. Community cookbooks have raised millions of dollars for Australian charities and causes, ranging from cash-strapped local schools and churches to international movements like Variety and the Red Cross. Many of these books were humble publications, hand-printed and stapled together by volunteers. But some, like the iconic PWMU Cookbook from Victoria, the Green and Gold Cookery Book in South Australia, the CWA's Cookery Book and Household Hints from WA and the Bundaberg CWA branch cookery book from Queensland, have outlived fleeting food fads, and are still in print and much-used today. Tried, Tested and True: treasured recipes and untold stories from Australian community cookbooks celebrates this amazing tradition. Based on extensive original research, best-selling author and Gourmand World Cookbook award-winner Liz Harfull it brings to light previously untold stories about the cookbooks and the people who created them. Featuring carefully selected recipes, updated with additional tips and hints to ensure success for the most inexperienced modern cook, Tried, Tested and True is a treasure trove for your kitchen.
