Book excerpt: In the U.S., the weight status of overweight and obesity in children is increasing from recent decades (Carrol & Ogden, 2010). Research shows that the prevalence of children developing chronic diseases is influenced by obesity and overweight statuses, shown by existing risk factors (Freedman, Dietz, Srinivasan, & Berenson, 1999). Recent legislation of the National School Lunch Program has aimed to improve the nutritional value of school lunches in elementary schools by requiring fruit and vegetable meal components be provided on each lunch tray (Nutrition Standards, 2012). This quasi experimental study aimed to increase fourth graders nutrition knowledge and fruit and vegetable intake during school lunch by applying concepts of the Health Belief Model (HBM) to a nutrition education session. A convenience sample of 25 fourth graders was selected and administered a pre and post questionnaire along with a plate waste survey to measure fruit and vegetable consumption before and after a nutrition education lesson was given. A paired samples t-test indicated that student's nutrition knowledge significantly increased (t(21)=2.60, p=.015) after the nutrition education lesson was implemented. However, more research is needed to determine the frequency and length of nutrition education programs needed to increase fruit and vegetable consumption in children. Frequency distribution of HBM concepts recorded on the questionnaires also suggests that students appeared to notice fewer barriers to eating fruits and vegetables. This study showed that concepts of the HBM may be effective and appropriate for use in developing positive nutrition education lessons for children. --Page iv.

Book excerpt: Background: A few studies have shown that art–based nutrition education (primarily in the form of theater) can increase nutrition knowledge and change behavior. Little research exists on the use of visual arts in nutrition education programs. The purpose of this study was to determine the impact on children’s nutrition knowledge, self-efficacy, and behavior, of using visual art and differing levels of intensity of art activities in nutrition education. Methods: The study used a three-armed cluster randomized control trial design with three time points. Children ages 8-12, at 6 different summer camps in Knoxville, Tennessee, attended the My Painted Plate program. The program included six nutrition lessons, two taught per week, over six weeks. Camps were randomly assigned to one of three arms. All three arms received the same six 30 minute nutrition education lessons. After each lesson, the control arm participated in 30 minutes of art, which was unrelated to nutrition. The Standard arm participated in 30 minutes of nutrition-related art (drawing MyPlate meals on paper plates). The enhanced arm participated in 30 minutes of more intense nutrition-related art (painting MyPlate meals on ceramic plates). Assessments were conducted at baseline, post (after the six lessons), and follow-up (two weeks after the post assessments). Assessments included nutrition knowledge, self-efficacy, dietary behavior surveys, and an evening meal recall to determine dietary adherence with the MyPlate recommendations. Evening meal recalls were entered into NDSR, and all data analysis was conducted with SPSS using repeated measures ANOVA. Results: Sixty-nine participants completed the My Painted Plate program. Those participants who received the standard and enhanced interventions had statistically significant increases in nutrition knowledge compared to controls. All participants had increases in self-efficacy, with a larger, but not statistically significant increase occurring for the enhanced participants. No changes in behavior were observed in any group. Conclusions and Implications: Inclusion of nutrition-related visual arts with traditional nutrition education is more effective than education alone at improving nutrition knowledge and self-efficacy. Both high and low intense forms of nutrition-related art equally increase knowledge gains along with the improvements in self-efficacy experienced by all participants.

This study examined the effect of culturally appropriate nutritional education d elivered to 4th, 5th, and 6th grade students enrolled in three private schools i n greater Beirut on students' nutrition knowledge. This was done in order to enc ourage and teach them how to change and modify their lifestyle behavior and eati ng patterns toward a healthier and more nutritive performance. The study was divided into two phases: assessment and intervention. The assessme nt phase involved collecting anthropometric measurements, 24-hr food recalls, ca nteen's assessment questionnaire, schools' personnel interviews, and pretest nut rition knowledge questionnaires. Whereas the intervention phase involved deliver ing eight nutrition education lessons to students over a period of eight weeks. This was examined by providing the students with 25 multiple choice questions at the end of each phase; a scoring system ranging from -1 to 1 for each question was used to determine the effectiveness of the intervention. The questions revol ved around nutrition including the importance of breakfast, healthy snacking, fr uits and vegetables, fibers, physical activity as well as the avoidance of high fat and high sugar food items. Post-test scores of the intervention group increased significantly more than the post-test scores of the control group in nine questions out of the twenty five included in the questionnaire. Eight questions showed significant increase in th e scores of both groups. Eight questions didn't show significant increase in pos t-test scores of both groups. Although this study only demonstrated moderate changes in the students' nutritio n knowledge, however, there is a need to encourage educators to integrate such p rograms in their curriculum since this may in the long term improve children's a ttitudes towards making better food choices.

The aim of nutrition education is for schoolchildren to acquire knowledge on nutrition to help them form healthy nutritional habits. This research aims at establishing whether the formal nutrition education carried out at schools influenced children's nutrition knowledge, attitudes, and nutritional habits. The research included 630 11-year-old children from 28 randomly selected schools. During the research, Grade 6 children of the nine-year elementary school on average listened to 38.6 hours of nutrition contents, which are planned in the curriculum for home economics. At the beginning and at the end of the school year, a knowledge test was used to assess their nutrition knowledge. Through a questionnaire, the researchers established their attitudes to healthy eating and nutritional habits. Immediately after completing nutrition education, the children's behavior did not show a statistically significant change, and the connection between the newly-acquired nutrition knowledge and consumption of meals and various foodstuffs was negligible. In the researchers' view, formal education improved the nutrition knowledge of children, but had no significant influence on their attitude to healthy eating habits and their nutrition behavior immediately after the education was completed. However, the researchers did establish that children formed positive attitudes towards healthy eating habits, although they were less frequently applied in practice. To achieve goals of children's nutritional education, the researchers suggested an increased number of nutrition education hours, supported with the positive example of teachers and the school setting that ensures the availability of healthy food.
