I desire in the preface to remind the public of the great and unique services rendered to British Dairy Farming by the late H. M. Jenkins, many years the able and indefatigable Secretary of the Royal Agricultural Society, whose lucid expositions of the dairy practices of several Continental countries have added so much to our knowledge of what other people are doing, and Whose life-work ended far too early in the grave. Book excerpt: Excerpt from Milk This volume is simply a collection of essays contributed to the various medical societies and journals during the past seventeen years. It would be vain for the author to claim that there was no other motive than that of love for scientific truth impelling the work. However, as a physician and veterinarian, it cannot be judged dishonest for him to say that there has been a sincere desire to reach the truth and follow it. And, on the other hand, as a dairy man trying to produce the best milk that is within human possibility, there has been, of course, more or less trade interest. Therefore, if these two designs can be allowed without prejudice on the part of the reader, there is hope that the work will benefit others as well as the. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Correspondence College of Agriculture: Dairying, Part I, Vol. 1: Development of the Dairy The Babcock test furnished a means of detecting the losses of butter fat in skim milk, and thus showed the need of perfecting cream separators until such losses were reduced to a minimum. Previous to the invention of the Babcock test, skim milk contained at least three-tenths percent fat, (0.3%) but this loss has now been reduced to less than one-tenth percent, (0.1%) thus making a saving of two-tenths percent, fat, (0.2%) due to the common use of this test. By these means creamery buttermakers have learned the necessity of controling the conditions that give a uniformly efficient skimming of milk by centrifugal separators. This saving of two-tenths percent fat (0.2%) over the losses of former years is five percent (5.0%) of the fat in average whole milk, and it represents a saving of $50,000 for every $1,000,000 worth of butter manufactured from milk testing 4.0 percent fat. 4. After the value of these two machines - the separator and the milk tester - was thoroughly understood, the dairy industry began to grow rapidly along three lines. 1. The improvement of dairy manufacturing processes; 2. The study of economical milk production; 3. The marketing of dairy products. 5. The study of these questions was first taken up by European farmers who understood the benefits to be derived from co-operation; and in about 1880, farmer's co-operative associations began to be organized for the purpose of carrying on co-operative feeding experiments, factory inspection, and the sale of dairy products in the best markets. Such co-operation has not been extensively successful among dairymen in the United States, but our dairy development has been helped by state dairymen's associations, farmer's institutes, state and county fairs, the farm and daily press, long and short courses in agricultural colleges, and experiment station bulletins. A - Dairying Compared With Other Lines of Farming. 6. The statement is often made at farmer's institutes and similar gatherings that a change from grain farming to dairying has lifted the mortgage from many a farm. Book excerpt: Excerpt from Profitable Dairying: A Practical Guide to Successful Dairy The last two decades have witnessed greater changes and more material improvements than any previous century. When these improvements will have so far progressed as to render further change unnecessary no man can predict. Manufacturers to day are compelled to recognize these changes in their business and adjust the cost of production so as to meet the changed conditions, or they must go out of business. The farmer is now buying for forty-five dollars a better mowing machine than could be put on the market thirty-five years ago for one hundred dol lars. These remarkable changes are common to nearly all industries. The time is comparatively recent when farming was regarded as a business requiring little or no previous preparation to be successfully conducted, and was followed by a class of men who considered themselves qualified for nothing else and who selected it as a business more from necessity than from choice. In fact, in many localities this idea still prevails. The young man who thought he had. A gift for me chanics, or a capacity for mastering some one of the professions, considered himself fortunate in not being obliged to live on the farm. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Feeding of Dairy Cattle The art and science of feeding dairy cattle has ever been changing, and during the last two decades greater improve ments have been brought about in this branch of agriculture, by practical feeders and investigators, than ever before. The importance of the dairy cow as an economic factor is now recognized. This is primarily due to the fact that, with little waste of energy, she converts the roughages and other feeds grown on the farm into products suitable for human consumption. In making this presentation of the feeding problem the aim has been to render the work broad enough to be of aid to the student. For this purpose the earlier sections contain a brief resume of material which belongs to the field of nutri tion rather than to that of feeding. It is hoped that this will render it possible for the student to link up his work on feeding dairy cattle with the training he has previously received in nutrition. At the same time it is hoped that the man interested in feeding, but with little foundation in nutrition, may obtain some information of value from the earlier part of the work. To put it brie y, the main object in view has been to review, in a non-technical manner, the main principles on which the feeding of dairy cattle is founded and then discuss the problems of practical feeding. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Dairy Fortunes Within 25 years cows that will make over 500 pounds of butter each, can be produced in the United States. Why keep cows when will produce more milk, more cream and more butter? Most dairymen are easily satisfied and do not expect much. Keep no cow that, will not produce $100 a year. A few years ago I wrote and published a book, and when I talked about selling copies of it, my friends said I was a candidate for a lunatic asylum, but the publishers sold over copies, and they expect to exceed the mark. I expect to live to the time when cows that will make 600 pounds of butter will be numbered by hundreds of thousands. Every dairyman must read and study what he reads, and must learn that successful dairying depends principally upon his tact and earnest effort. Book learning does not make the successful man. The greatest book ever written about how to get along in the world, was written by a man who always ate the crust of poverty - he could tell other people how to suc ceed, but was a helpless failure himself.
